May 7, 2024: #whatieatinaday birthday edition. Started my salad a day challenge, and I will attempt to eat a salad a day for 30 days. My cake had a good texture and crumb, but cake making is more of a decorating exercise for me. My cake decorating skills are lacking, and it's something I needed to work on. My swiss meringue buttercream was loose, so I pivoted and did a quick whipped cream frosting stabilized with mascarpone cream. My cake ended up looking very simple and not the painted floral buttercream cake that I envisioned for myself. Sooo... to improve my cake making and decorating skills i with design a series of 52 tasks for myself to increase my ability and hopefully a year from now I will be able to see much improvements in this area. 09/05/2024 Really busy day today, hopefully things can start to calm down now 🫣. This morning we went to hartbeeps, I was really disappointed with this weeks class. The usual teacher wasn’t there, and the class finished 15 minutes early… we then went to meet a friend for brunch which was really nice, been a while since we’ve had a catch up. Worked today, and also did a food shop. Finally stopped at 9:30 tonight 😅. Dexter is learning his farm animals, he can woof, moo and quack now 🤣. He is also good with raaa. Hit SAVE for a tasty mid week 📌📌 𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦 500g chicken mince 1 bulb of garlic 1 tbsp dried parsley 1 tbsp fresh chopped mint 1 egg 2 tbsp breadcrumbs 1/2 tsp oregano 500g rice 200g feta cheese 4 tbsp lemon juice 1/2 red onion 1/2 red onion 125g tomatoes 1/2 red pepper 1 tsp garlic powder 100ml natural yoghurt 200ml chicken stock 𝗠𝗘𝗧𝗛𝗢𝗗 🇬🇷 Preheat the oven to 200 degrees. 🇬🇷 Add the chicken mince to a bowl with 1/2 a grated onion, parsley, mint, 2 tablespoons lemon juice, breadcrumbs, egg and garlic powder and combine with a spoon. 🇬🇷 Wet your hands so the mixture doesn’t stick and shape the mixture into 10-12 kofta shapes and set aside. 🇬🇷 Using a knife, remove a little feta cheese for the end then place the rest of the block into a large baking dish, add the tomatoes, peppers and 1/2 sliced onion then drizzle with olive oil. 🇬🇷 Slice the end of the bulb of garlic, drizzle a little oil inside and wrap in foil. Place the garlic in the dish and put the dish in the oven for 30 mins. 🇬🇷 Add the rice to a large pan of boiling water and cook for 20 minutes until soft. Heat up a little oil in a frying pan, place the koftas in and fry on a medium heat on both sides for 8 minutes until golden and crispy. 🇬🇷 Remove the baking dish from the oven, remove the foil from the garlic and squeeze most of the soft, roasted garlic into the feta. 🇬🇷 Add 2 tablespoons of lemon juice, 1 tablespoon of yoghurt, 200ml of chicken stock and mix everything together. Vanochtend ging Tycho al vroeg naar de camping. Wij zijn toen planten gaan halen en naar kennissen voor pioenrozen helaas niet voor mij zelf Tycho kan die helaas niet altijd even goed verdragen🙈 daarna alles in de tuin gezet, even bosje afgegeven op de camping en bij mijn schoonmoeder, daarna even naar de hemelvaartsmarkt hier in het dorp geweest met mijn schoonmoeder en toen moest er een halve kip mee hij rook zo lekker🤤 verder de rest van de dag in de tuin gerommeld. Nu lekker saampjes op de bank. 💜 09.05.24 💜 Tomorrow, my 14th week of #slimmingworld will come to an end - I am so happy with myself for being consistent with my tracking and eating and also the gym! We've been going 3 times a week pretty much consistently for a month now, and for me, that's really huge.
