I'm not sure if anything speaks to the simplicity and evolved perfection of Southern summer cuisine like the humble mater Sammich. Tis it's simplicity that has made it a staple since the invention of Duke's mayo, and those with a sophisticated Southern pallette realize that messing with the original leads to catastrophic times. There are only two.....maybe three....perhaps four (but the fourth is an ongoing debate that has broken families) variations that are deemed acceptable for this loved Sammich. Two slices of bread Vine ripe summer maters Mayonnaise (on both sides of bread) And for the love of all that is holy, miracle whip ain't mayonnaise. Don't even try. Salt Pepper •both white or wheat bread is acceptable and when you're living a lil high on the hog a Texas toast thick bread is fine. If ends aren't meeting like you want them to in life, then cheap ass white loaf bread (the kind that sticks to the roof of your mouth) is deemed acceptable. •bologna, both fried and straight from the pack and peeled of its red rings not only acceptable but encouraged as a topping. •mayonnaise......in Southern Appalachia it's a fight over Duke's or Hellman's. Further south and in MS or AL, Blue Plate is considered a traditional. The use of Miracle Whip will get you stared at with knowing looks and whispers. •cheese: herein lies the great debate and folks in these parts get pretty darn testy about this. They honestly don't care if one eats cheese on their mater Sammich, but don't go telling either side that it's the one true way. (That should kind of go for a lot of the religions around here as well) However you enjoy your mater Sammich, just know that you can stop in at any of our locations throughout the summer and partake of of one. Paired with chips and a glass bottle coke, (and fried bologna at our food truck) you might just find words like "y'all, yonder, and jeet" rolling off your tongue slicker than owl shit.
