Domaine BASTIAN WOLBER !!💛❤️🩶 Bastian Wolber est Originaire du Bade-Wurtemberg juste à côté de la forêt noire en Allemagne. Il passe sa jeunesse en école Steiner, ce qui épanoui sa curiosité et son rapport à la nature. C’est en rendant visite à son frère qui travaille dans les vignes en Bourgogne qu’il déguste une bouteille de vin du domaine Ganevat qui l’époustoufle et lui donnera le déclic. De retour en Allemagne, il se retrouve à écumer tous les magasins de vins naturels de son quartier, pour essayer de ré-expérimenter ces sensations gustatives nouvelles. Suivant les pas de son frère, il se retrouve à la vigne en Bourgogne en 2013 au domaine Leflaive. Il effectuera par la suite les vendanges avec Rudolph Trossen en Moselle et avec Jean-Marc Dreyer en Alsace, la boucle sera finalement bouclée en 2019, lorsque Bastian se retrouve apprenti chez Ganevat dans le Jura. Malheureusement il se blesse lors d’une chute en skateboard au milieu des vendanges et ne peux pas aider en cave. Cette arrêt inopiné lui donne l’envie et la possibilité de commencer son propre vin. Il achète des raisins biologique en France et en Allemagne et les vinifie au domaine de son frère « Wasenhaus » en Allemagne. Il baptise ce projet “Laisse Tomber”, avec un cavalier tombant de cheval, allusion à son accident de skateboard et à sa mère monitrice d’équitation. Sa production anecdotique de 4 barriques en 2019 étant trop petite pour qu’il en vive, il décide de poursuivre ses études viticoles à Dijon, où il effectue un diplôme d’œnologie tout en travaillant au domaine de Jean-Yves Bizot jusqu’au printemps 2022 Dès 2020, Bastian élabore ses vins à Auxey-Duresses, dans une cave partagée avec Santini, Vin Noé, et le Domaine Dandelion. Il est déterminé à cultiver ses propres raisins. Tasting wines right at the winery is always special especially with our brand new partner like Enzo Boglietti. The wines were all amazing and we are more confident than before about the quality and people behind. Linda, the daughter of Enzo, guided us through the whole range and here are some of the bottles. The 2022 Dolcetto d’Alba was super fresh with juicy texture. Personally, this is a strong candidate for my favourite Dolcetto. For the Barbera range, the 2022 Barbera d’Alba was rich with smooth body but what blew us away was the single vineyard Vigna dei Romani Barbera d’Alba with its concentration and great length. The 2022 Langhe Nebbiolo was just delicious with red fruits, leather and roasted coffee. It’s not a Barolo but close enough. Things got more serious with the first Barolo which is a blend of different plot in La Morra. Very aromatic with velvety tannin. A great Barolo that showed beautifully the style of the estate. Next we tasted the single vineyard Barolo. The 2019 Fossati and 2020 Case Nere showed depth and great structure. The 2020 Brunate was wow and there’s no doubt that this was the wine that has kicked off their success story. We ended the tasting with the 2005 Barolo Riserva and saw how beautifully the wine from Enzo Boglietti has aged.
