I know people make jokes and memes about leftover wine like it doesn't exist, but in our house, it is a regular thing! 🍷 When we open a bottle of wine, the goal isn't to kill the bottle, the goal is to pair it with a meal that makes both more delicious! Tonight we finished a bottle of Cairanne, a French red from the Rhône Valley that we had not tried before. We were surprised at it's punch, because Rhônes tend more towards "juicy" or "elegant" in my experience. We ordered this from @wtso a couple of years ago in a 4 pack from the Rhône region. At the time, there was a zoom tasting with @the.wine.rebel, but Hubby refused to open it that soon. 🤣😂 We are glad we waited, because it was so good paired with our burgers tonight and with the venison pot roast I prepared earlier in the week! 🙌 Last night I grilled chicken leg quarters and cut up a chunk of watermelon. Spring has definitely sprung and we are enjoying all the things it has to offer! When our wine comes in a half size bottle, we usually manage to polish it off. On Monday evening we had a variety of meats, cheeses and crackers, along with some special truffled honey and figs I brought back from Tuscany. The 20 year old Sauternes was the perfect accompaniment, and there were no leftovers. 🥂 #springhassprung #bringonsummer #grilling

Yup, I’m still on the back deck soaking up the sun, and you can bet this will be my default spot for the next several months! ☀️ But before I dive into tonight’s wine, let’s talk about the incredible X-OMNI vineyard. Walter Scott makes a Chardonnay from its sibling vineyard, X-NOVO, that is absolutely to die for! Abbott Claim’s Chardonnay from X-OMNI is equally stellar. And when Corollary announced their Blanc de Blanc from X-OMNI, I didn’t hesitate to snap up 6 bottles—even before tasting it! On the podcast, Seth shared some insights into why X-OMNI is so special. His 2021 X-OMNI Chardonnay was only the second Oregon Chardonnay to score 100 points—a testament to both the vineyard’s quality and Seth’s ability to showcase its terroir. I felt a twinge of guilt opening the 2022 Willamette Valley Chardonnay so early, but when I saw the DIAM 30 cork on the 2022 X-OMNI Chardonnay, I was nearly moved to tears. Although the journey this bottle was intended to take was cut short, I did my utmost to respect what was inside. I took this wine to day 6, and it was still going strong, maintaining everything in place along with a crisp, linear acidity. Tyrrell’s Hunter Valley Chardonnay is sourced from across the Pokolbin area, producing excellent Chardonnay each of the sites have slightly different microclimates / terroir. Each element brings a unique personality to the blend. An abundance of rain in spring led up to the 2023 vintage, allowing for much appreciated soil moisture heading into December and January’s dry period. For the viticulture crew their labours were a relatively stress-free. The vintage in the winery lived up to reputation, producing a well balanced, fruit forward complex wines a another quality Hunter Valley vintage. Predominantly citrus and white stone fruit nose with hints of oak spice and solids complexity. On the palate intense fruit, body and texture through the mid-palate, with a soft, yet tantalising acid finish.
