Laatst serveerde ik een groepje gezellige dames een fantastische Crémant de Bourgogne. Ze hadden wat te vieren namelijk. Een van die gezelligerds vroeg of ’tie een beetje zoet was. Nog voor ik kon reageren lag er al een zoetje in haar flûte op te lossen. Deed ze altijd al ze haar wijn niet zoet genoeg vond vertelde ze met gepaste trots. Binnen no time gingen de zoetjes het groepje rond en had de helft van het gezelschap hun eigen blend gecreëerd. Nog voor ze ook maar 1 slokje genomen hadden. WTF!!!!! Ik weet niet hoe dat bij andere mensen werkt maar in mijn hoofd staat er meteen een groepje alter ego’s op die door elkaar gaan roepen; Huh, een zoetje bij haar Crémant?? Prachtig Bourgogne-nat in je glas en daar gaat dan een zoetje bij?? Hij is toch echt al heerlijk? Dat kan toch niet? Of wel? Wat vind jij hier nou van?? Mag je überhaupt wel wijn mengen??? JES! DOE FF NORMAAL! 2 seconden later doe ik weer normaal en denk ik; Tuurlijk mag dat! Er bestaat echt niet zoiets als de wijn-politie die ik in dit soort gevallen kan bellen. Imagine a blue South African sky and seeing (or is it tasting?) a wine that boldly soars where no grape has soared before! When I popped the cork of this 2020 wine made out of Shiraz grapes from Constantia, I expected to hear an eagle screech, but alas, it was just my own excitement. Suddenly, an entirely different image took over when I smelled it: a ballet of berries dressed in vanilla tutus was making a perfect pirouette in my nostrils. And when I took a sip, it was like a cheeky elegant cherry took a wrong turn and crashed into spicy nutmeg and clove. As if Charlize Theron was having the performance of her life, but Clint Eastwood, dressed in a poncho and a cowboy hat with gun drawn, stumbled onto the stage in an theatre adaptation of the movie "Where Eagle's Dare". Hmm, not sure that's a good comparison, but hey, that's my taste buds going wild and I never argue with them. And then the finish of this wine? It's almost longer than the 155 minutes running time of that movie. It's a wine that insists, "I may not be perfect, but I am a star and unforgettable," just like Charlize and Clint. So, if you're up for going where the Eagle from this nest in Constantia dares, be prepared for a wine that's as dramatic as an eagle's mating call and smoother than its flight.Why don't you give it a whirl. Wijnfouten Er wordt al snel geroepen ‘de wijn heeft kurk’, als er een stukje afgebroken kurk in het wijnglas dobbert. Dit is echter niet de wijnfout TCA oftewel kurk. Maar wat zijn dan wel fouten en is het écht fout? Ik zal proberen om deze fouten te beschrijven, in twee delen. 1. Troebelheid en depot 2. Wijnsteenzuur 3. TCA (kurk) 1. Troebelheid Dit hoeft geen fout te zijn en is vaak een keuze van de maker omwille van de smaak, bijvoorbeeld bij pet-nat. Maar is in de basis niet altijd gewenst, al hoeft het niet altijd de geur of smaak te schaden. Depot is het bezinksel onder in de fles. Ook dit hoeft ook geen fout te zijn en is onvermijdelijk bij bijvoorbeeld oude rode wijnen. Doordat kleurstoffen en tannine onderling met elkaar gaan reageren, ontstaan moleculen die het depot vormen. Dit heeft geen invloed op de smaak, maar schenk een oude fles niet helemaal leeg. 2. Wijnsteenzuur Bij witte wijnen zijn dit de suikerachtige kristalletjes die overblijven in je glas. Wijnsteenzuur is altijd aanwezig in de wijn en heeft overigens geen invloed op de smaak. Het wijnsteenzuur gaat een reactie met kalium aan, waarna het kristalliseert (tartraten). Kou helpt bij de vorming van tartraten. Een wijn kan teruggekoeld en gefilterd worden voor botteling, om deze tartraten uit de wijn te halen. 3. TCA oftewel kurk Kurk ontstaat door een besmetting met een schimmel, die in contact komt met chloorfenolen. Door een chemische reactie ontstaat TCA. Dit kan komen door overgebleven chloor na het bleken en desinfecteren van kurken of flessen. Dit heeft echter niets te maken met de daadwerkelijke kurk. Ook wijnen met schroefdoppen, kunnen TCA bevatten. Kurk herken je aan een muffe kelder lucht, natte hond of de geur van nat karton. Heb je een fles met de wijnfout kurk, is hier helaas niets meer aan te doen. Le Gewürztraminer Grand Cru ‘Zinnkoepfle’ Les Sinneles est un vin blanc d’Alsace qui bénéficie de l’appellation Alsace Grand Cru. Il est produit par le domaine Éric Rominger et est connu pour son équilibre et son élégance . Le terroir calcaro-gréseux du Zinnkoepflé, où ce vin est cultivé, est réputé pour apporter une finesse aromatique et une acidité remarquable aux vins2. Le millésime 2004 de ce vin a été particulièrement remarqué pour ses arômes de rose et de poire confite, et il est recommandé de le servir entre 8 à 12 °C1. Avec une production de 1 500 bouteilles, ce vin est élevé en cuve et peut être apprécié dès maintenant, notamment avec du foie gras en raison de ses sucres résiduels de 50 g/l1.
