Aquesta setmana hem tocat un altre registre en els tallers als centres cívics! Hem tocat masas de pa, exactament una de #focaccia Tot un Mon per descobrir! Recepta: 900 grs. Farina de força 100 grs. Farina de ségol integral 6 grs. Llevat de forner 680 grs. d'aigua 100 grs. Oli d'oliva 1/2 culleradeta d'orenga i romaní 1 pot d'olives negres sense pinyol. Barrejar a mà (tot excepte les olives). Deixar reposar uns 15 min. tapat i tornar a pastar, posar la Massa en un recipient plastic amb tapa. Deixar 1 hora a temperatura ambient i posar a nevera 24 h. Estirar sobre paper de forn amb Oli i estirar Poc a poc la Massa sense trencar-la. Tapar amb film plastic i deixar llevar. Guarnir amb olives negres. FOCACCIA CON POOLISH 💗🍕👏 ¡Sin amasar, facilísima y súper esponjosa! Te comparto los ingredientes: Harina integral de fuerza 400gr Agua filtrada 320 ml Sal marina 8gr Levadura seca 3gr (si hace calor podes bajar la cantidad a 2gr) Aceite de oliva 1 cucharada Aceite de oliva cantidad a gusto para cubrir Procedimientos: Mezclá el agua, la sal, la levadura y el aceite. Agregá la harina, mezclá bien con ayuda de una espátula y dejá reposar tapada durante 30'. Pliegues: Ahora vas a realizar 4 tandas de pliegues cada 30' dejando en reposo la masa, tapada (los últimos dos plegados pueden ser con un descanso de 15' a 30', y si hace mucho calor dejá descansar 15'). Tapá la masa humedecida con aceite de oliva y refrigerá mínimo 12 horas. Retirá del frío , dejá a temperatura ambiente unos 30' y volá sobre placa bien aceitada, dejando duplicar su volumen. Introducí los dedos para distribuir el aire/gas y rociá con aceite. Cubrí con sal marina gruesa, romero o las hierbas que prefieras, tomates , cebollas o aceitunas (a gusto). Por último, horneá en horno precalentado a 230 grados por 30'/35' aproximadamente.
