Red Curry Glass Noodles with Chickpeas. By @missmarzipancom 100g (3.5 oz) glass noodles 1 1/2 cans (21 oz) coconut milk 1 can chickpeas, drained and rinsed 3 tbsp red curry paste 2 tbsp gf tamari (or soy sauce) 1/2-1 tsp garlic powder 1/2-1 tsp onion powder A shake of dried chilli flakes A pinch of coconut sugar, optional Water if/as needed Approx. 720 ml (3 cups) sautéed kale or baby spinach (or whatever greens you have on hand) Approx. 240-480 ml (1-2 cups) leftover roasted veg, such as diced sweet potatoes or sliced butternut squash (or whatever veg you have on hand) DIRECTIONS Cover the noodles in boiling water (in a large bowl) and leave for 3-4 minutes. Meanwhile add the coconut milk, drained chickpeas, curry paste, tamari and seasonings to a pan. Stir to combine and allow to bubble over medium heat while the noodles cook in the boiled water. Add the cooked noodles to the curry, stir through (adding a little water if necessary). Add veg. a thoroughly nourishing Sunday, starting with a yin yoga workshop @thedurhamyogastudio led by @emilycharlotte.yoga, delving into the significance of the wood element and associated liver & gallbladder meridians in traditional Chinese medicine. feeling very energised with the bites of knowledge peppered through the practice, and the gorgeous raw vegan brownie bites Emily made to keep us fuelled (it’s an Anna Jones recipe available on the Guardian website if you’re keen to try!). I arrived home to an equally soothing sight - meals and snacks for the next 3 busy work days covered by @lionsprep, a meal delivery service that cater to different health goals/needs, with a solid vegan selection. I was curious to try it after seeing @emmahitsthespot’s recommendation, and as always, I wasn’t steered wrong if tonight’s dinner is anything to go by! I enjoyed this gorgeously-spiced smoky baharat vegan chickXn on a bed of steamed sweet potato and roasted cherry tomatoes with a lovely smoky-sweet sauce - I just added some rocket to freshen things up! I got the 2 meals + 1 snack option as some of the snacks like the tofu bites with rice pot can easily serve as a light lunch, which is exactly what I’ve packed for work tomorrow. 3 days’ worth of meals and snacks came up to around £36 which is very reasonable I think, for the quality of these nutritionally-balanced meals. I’ll do a full review once I’ve gotten through everything - watch this space! and have a lovely week ahead!

Creamy Vegan Fajita Pasta Ingredients: 300 g (10.5 oz) pasta 1 tablespoon olive oil 1 large onion, sliced 1 large red pepper, sliced 200 g (7 oz) chestnut mushrooms, sliced 4 garlic cloves, minced 1 tablespoon tomato paste 4 tablespoons fajita seasoning mix 400 ml (13.5 fl oz) can coconut milk 100 g (3.5 oz) baby spinach, roughly shredded 1 tablespoon nutritional yeast (optional) Directions: Bring a large pot of water to a boil and cook the pasta 1 minute less than the package instructions. Reserve a cup of pasta water before draining. Heat the olive oil in a large pan over medium heat. Saute the onion and red pepper for 5-6 minutes until softened. Add the mushrooms and continue to cook for another 5 minutes until the liquid evaporates and the mushrooms are slightly browned. Stir in the garlic and cook for another minute until fragrant. Add the tomato paste and fajita seasoning, mixing well. Pour in the coconut milk, bring to a boil, then reduce heat and simmer for 2-3 minutes until the sauce thickens. Add the baby spinach and continue cooking for 1-2 minutes until wilted. Toss the cooked pasta in the sauce, stir in the nutritional yeast if using, adjust seasoning, and serve. Falafel Waffles (Crispy Chickpea Delight) Ingredients: 1 cup dried chickpeas, soaked overnight and drained 1 small onion, chopped 2 cloves garlic, minced 1/4 cup fresh parsley, chopped 1/4 cup fresh cilantro, chopped 1 teaspoon ground cumin 1 teaspoon ground coriander 1/2 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon cayenne pepper 1 teaspoon baking powder 2 tablespoons flour Olive oil for brushing Directions: I. Place the soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and cayenne pepper in a food processor. Pulse until well combined but still slightly coarse. II. Transfer the mixture to a bowl, and stir in the baking powder and flour until well mixed. III. Preheat your waffle iron and brush it with olive oil. IV. Depending on the size of your waffle iron, scoop the appropriate amount of falafel mixture onto the center of the iron. Close and cook until the waffle is golden and crisp, about 5-7 minutes. V. Follow @plantiful.palate for more recipes🗒️ Recipe: Ingredients: - For the ravioli dough: - 300g plain flour - 1 tsp salt - 2 tbsp olive oil - 120ml water - For the filling: - 250g vegan ricotta cheese - 50g spinach, finely chopped - Salt and pepper, to taste - For the infused oil: - 6 tbsp olive oil - 2 cloves garlic, thinly sliced - 1 tsp red chilli flakes - Fresh basil and parsley, finely chopped - Salt and black pepper, to taste Method: 1. Begin by making the ravioli dough. Mix the flour and salt in a large bowl. Make a well in the center, add the olive oil and gradually mix in the water to form a smooth dough. Knead for about 10 minutes until elastic. Cover with a damp cloth and let it rest for 30 minutes. 2. For the filling, combine the vegan ricotta, spinach, salt, and pepper in a bowl. Mix until well combined. 3. Roll out the ravioli dough on a floured surface to a thin sheet. Place teaspoons of the filling at regular intervals over half of the pasta sheet. Fold the other half over the filling. Press around each mound of filling to seal the dough, removing any air pockets. Cut out the ravioli using a pastry cutter or a sharp knife. 4. Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 4 minutes, or until they float to the surface and are tender. Drain. 5. Curry 🍛 Eine gewürfelte Zwiebel, zwei in Streifen geschnittene Spitzpaprika, etwa 400g Kaisergemüse (TK) und eine abgetropfte Dose Kichererbsen in zwei EL Kokosöl und zwei EL Currypaste anbraten. Breakfast at Tiffany’s Croissant; 6 Hours(Plus overnight chilling) Croissant 500g Strong White Bread Flour 1 1/2 Tsp Salt 50g Sugar 1 Tbsp Yeast 300ml Warm Water 300g Butter or Vegan alternative 1. Activate your Yeast by placing it in the Water, stir and leave for 5-10 minutes. 2. Combine your Flour, Salt and Sugar in a bowl and create a well in the centre. Pour in the activated yeast and mix. Once a dough forms, knead for 10 minutes. Cover in cling film and place in the fridge. 3. Take two pieces of Baking paper and mark 20 x 15 cm rectangle. Take your butter and shape to the lines. Cover with the second sheet at roll to the thickness of a pound coin. Place in the fridge for 2 hours. 4. After 2 hours remove your dough from the fridge and roll it into a 40 x 20 cm rectangle. Remove your butter from the fridge and place in the centre of the rectangle. Fold the bottom half into the centre and do the same with top. Fold over and flatten into a 20 x 10 cm rectangle. Chill in the fridge for 30 minutes. 5. Remove from the fridge and roll another 40 x 20 cm rectangle. Fold the bottom and top thirds over and place in the fridge for another 30 minutes. Repeat again in the other direction. 6. Once your lamination is complete place in the fridge overnight. 7. On a floured surface roll our your dough to a 60 x 30 cm rectangle. On the top mark every 10 cm starting from 5 and on the bottom mark every 10 cm starting from 1. Cut out 8-10 droopy triangles and roll up form the widest part to the thinnest. Place on a oiled tray and leave to rise for 2 hours. 8. Preheat the oven to 200*C and bake the goods for 12 minutes till golden brown. Enjoy!

DINER | Vegan wok met, udon noodles, tofu en homemade pindasaus. // 2 personen // 200g tofu (ik kocht reeds in blokjes gesneden naturel) 140g udon noodles 250 paddenstoelenmix; gesneden 1 rode paprika; in blokjes 1 teen knoflook; gesnipperd 3 stengels bosui PINDASAUS 2el pindakaas 1tl sambal oelek 1tl sojasaus 1cm verse gember; fijngesnipperd 1 teen knoflook; fijngesnipperd 1 sjalot; fijngesnipperd 150ml plantaardige melk (bv. Rijstmelk) HOW IT'S MADE? Gebruik je een blok tofu? Knijp het water eruit, wikkel hem in een handdoek en leg er 30min iets zwaars op. Als je reeds voorgesneden blokjes koopt mag je dit uiteraard overslaan. 1) Kook de udon noodles zoals vermeld op de verpakking. 2) Marineer de tofublokjes in een marinade van sojasaus, paprikapoeder, gemberpoeder, kurkuma, lookpoeder en uienpoeder dat je naar smaak toevoegd. Dek het af en zet voor 15min in de koelkast. 3) Verhit een el olijfolie in een wokpan en fruit de knoflook. Vervolgens voeg je de paprika toe en bak je nog 5min mee. Als laatste doe je de paddenstoelenmix erbij en de bosuien en bak nog even kort mee. Zet van het vuur als de paddenstoelen mooi gaar zijn. 4) Ondertussen maak je de pindasaus. Voeg alle ingrediënten toe in een steelpannetje en laat even doorwarmen zodat het een mooi lopende saus wordt. Wil je hem wat vaster voeg je extra pindakaas toen. Wil je hem iets lichter voeg je meer melk toe. 5) Als de tofublokjes voldoende gemarineerd zijn hussel je alles even goed door en voeg je de blokjes toe aan de groenten. Bak de tofu een 4-5min nog even mee. 6) Voeg als laatste stap de noodles en de pindasaus bij de groenten en warm alles samen mee door. Serveer in 2 diepe kommen. DELUXE VEGAN GOURMET RECIPE by Marcus Tam GREEN SPINACH NOODLE SOUP W MIXED VEGETABLES (Can be replaced w Mee Sua, ban mian etc) Ingredients: Green spinach noodle x 1 block Xiao Bai Cai Cherry tomato Shitake mushroom Tofu x half block Seaweed Spring onion Light soy sauce x 1 tbsp White miso x half tbsp Cooking instructions: Put tofu, miso n light soy sauce in a cooking pot filled w water. Turn on fire. When water is boiling, add noodles, shitake mushroom n vegetables, cook for 5 mins. When almost ready, add tomato n seaweed. Sprinkle spring onion and off fire. Ooey gooey chewy Keto-friendly and vegan blondie 🌱 Perfect go-to sweet treat, super easy to rustle up a batch which is lucky as they're incredibly moreish! Ingredients: * 1 cup tahini * 1/4 cup almond or soya milk * 1 tsp vanilla extract * 1/2 cup brown sweetener (I used Pure Via Demerara) * 2 cups almond flour * 1/2 tsp baking soda * 1/4 tsp salt * 1/2 vegan chocolate chips * 1/2 chopped pecans Instructions: 1. Preheat oven to 175°C (350°F). 2. Mix tahini, almond milk, vanilla extract and sweetener together until combined. 3. Fold in almond flour, baking soda, salt, chocolate chips and pecans. 4. Add batter to prepared pan (parchment paper is a must). 5. Smooth over top and bake for 20 mins. 6. Leave to cool and serve. Nyt laatikot ihan metritavarasta mittatilauksena tuohon kohtaan. Nederterraanse gazpacho, zeg maar ;) Hoe: Handje gekookte asperges Schilletje van een halve citroen Citroensap van halve citroen Peper en zout Flinke scheut hete pepersaus (of tabasco oid) 1 grote sappige trostomaat Half glaasje water 1 klein teentje verse knoflook Alles in de blender. Scheutje olijfolie 'on top'. 3.5 years of school later…. I officially have graduated with my BS in Nutrition/Dietetics and Nutrition, Fitness, and Health. Freshman year Emma would actually have not believed it. I never thought I would graduate on time with my class. From countless admissions, 3 abdominal surgeries, picc lines, feeding tubes, 2am ER trips, and more it’s amazing to see how far I have come. And we have just only started…. as I will start my Masters and DI program in the fall at Indiana University Indianapolis. It’s gonna be quite the adjustment living back at home, doing my rotations, and working in the milk lab but I am so excited for the next chapter! Hoping to be a RD by 2026 💛 I have not introduced myself on here for a LONG TIME so here we go! Here are 10 fun facts about me! 1. I have a slight addiction to raspberry matchas. 2. I have 2 right kidneys (not born that way, but had one surgically removed). 3. I try to read at least 50 books a year so I am always looking for recs. 4. I love baking even if I can’t eat it lol. 5. I am a huge Beyonce and Taylor Swift fan and have been loving both of their new albums. 6. I help run a couple AND (academy of nutrition/dietetics) social media accounts. 7. I work in a milk lab as a clinical enteral nutrition specialist at my local childrens hospital. 8. I am always looking and wanting to travel and explore new places (especially coffee/smoothie bars). 9. I would love to write my own book (nutrition related or not idk yet) 10. Greece is top of my bucket list!
