It’s late but I have a list that I need to complete for myself. So I’m making croutons from one of my homemade loaves of bread. They are my favorite! Today I've had fun in the kitchen using a few fresh items and other things from the pantry in my cooking. I've made meatloaf for tea with some of my dehydrated breadcrumbs, shout out @the_purposefulpantry and Darcy for continued inspiration, and fresh onions from the garden. Pasta salad to go with the loaf, inspiration from Jessica from @threerivershomestead, and this included homemade pesto, more of the onions then rhubarb and mint from the garden to make a compote/drizzle to go over ice cream. Everyone was stuffed from the meatloaf so yet to try it with the ice cream; may not look that appetising but tastes yummy. I'm drying the mint in my kitchen window instead of using my dehydrator. There will be salad leftovers for lunch tomorrow. RHUBARB 🌿💕 Harvested most of this rhubarb patch last week. Like anything, it’s alot of work but so worth having my own supply of frozen rhubarb and canned stewed rhubarb on hand throughout the year to bake with and make all sorts of yummy dishes. Firstly, when harvesting rhubarb know that only the stems are edible. The leaves are poisonous. Gently pull on the stems so they detach from the base of the plant, cut leaf off and wash thoroughly. Once all washed, I chopped up in small pieces and added to a pot. I had about 10 cups in there and added 1 cup of sugar. As you heat the pot and the rhubarb gets warm, it starts to release its juices. Keep stirring in the sugar until dissolved and the rhubarb is cooked down. In the meantime I boiled my mason jars 🫙 and once everything was good to go, they were filled, sealed and processed in a water bath for 15 min. The result was about 6 x 500 ml jars of sweet stewed rhubarb. The other half of my harvest was cut up and stored in the freezer for future use as well. Rhubarb is a perennial plant that grows back year after year so we are very fortunate we will keep having it around for years to come. My absolute favorite desert to make is a strawberry and rhubarb crumble. Already dreaming of making one. Rhabarberblätter sind nicht nur ein schöner Fotohintergrund, mit den Blättern kann man auch gut mulchen und auch ganz einfach Dünger herstellen, denn Rhabarberblätter enthalten viel Kalium. Einfach 1kg Rhabarberblätter zerkleinern, mit 10l Wasser übergießen und mindestens 10 Tage stehen lassen. Danach die Blätter absieben und die Jauche 1:5 ins Gießwasser mischen. 🥬 Kalium spielt eine große Rolle im Wasserhaushalt der Pflanzen und ist gerade in Trockenzeiten besonders wichtig. Außerdem werden die Pflanzen durch eine ausreichende Kaliumzufuhr widerstandsfähiger gegen Schädlinge und Krankheiten! Seit dem 7. April ernte ich Rhabarber und das ist nun die finale Ernte für dieses Jahr 🥬 bis zum 24. Juni kann man den Rhabarber ernten, danach ist die Oxalsäurekonzentration so hoch, dass man lieber darauf verzichten sollte. Ich habe nach 3 Monaten der Ernte jetzt noch einmal richtig groß geerntet. Rhubarb. I’ve got a ton of the stuff in the garden at the moment - this little lot weighed in at 1365g which is quite a lot for a 2 person household but I made rhubarb ketchup last night which used quite a lot (still enough for some weekend baking though). I remember when you just popped a jar or a bottle in some warm water and 10 mins later the label came off - not anymore- I don’t know what they use to glue them nowadays but it’s hard work! Anyway, here’s the ketchup recipe: RHUBARB KETCHUP 1. Roast 1kg chopped rhubarb with a finely chopped onion and a couple of peeled cloves of garlic at 180c/360f/gas 4 for an hour (or until it’s soft). 2. Whizz together in the food processor to get a thick sauce consistency (or put it thru a sieve if you like). 3. Pour into a pan and add 50ml cider vinegar, 50g Demerera sugar, 3/4 tsp each salt, ground cumin, ground coriander & 1/2 tsp ground ginger. 4. Heat and simmer for about 25 mins then taste for sweetness- I added more sugar at this point as my rhubarb was quite tart. 5. Bottle in sterilised glass while it’s still hot and label when cool.
