At Woodcrest Kitchen we love surplus produce! Remember - surplus doesn’t mean substandard! There’s so much local surplus food which is organically grown in allotments and back gardens and we’re delighted to reduce waste and use this in our homemade preserves. Sometimes produce is wonky, but always very fresh and great quality! It’s often the case that people grow too much and get a seasonal glut, other times people run out of time to preserve their own harvest; one apple tree normally yields more fruit than one family can cope with! We’ve been delighted to swap surplus produce for our homemade preserves through the growing season. The majority of the harvests are now in but this week we’ve had the delight of extra beetroot. Beetroot can survive quite happily in the ground until the first frosts but it’s getting to that time of year when allotment beds are being tidied up for the winter

Due to changing allotment tenancy agreements we’ll be making some slight changes to Woodcrest Kitchen in the near future, since produce can’t be grown from our own plot to support business ventures. This will therefore probably be the last of the photos from the family allotment. However, we’ll still be using local homegrown surplus fruit and veg for our preserves. There are plenty of gardens locally with unwanted produce that will still be used in making our delicious recipes – individuals just don’t always want their gardens photographing! A sunny morning and time to bring in more homegrown beetroot! This will be turned into chutney this evening - the best and freshest produce for the best preserves! According to my neighbour and his weather keeping records, yesterday was the wettest day in August since he started collecting data from his Burnopfield garden (2001)! The allotment water butts are certainly full, and everything is looking lush and green this year; although more sunshine would be appreciated to progress the beans, pumpkins and chillis! Behind the scenes.... So many allotments have a gooseberry bush, yet so many are wasted (or left for the birds!). Gooseberries make a wonderful jam due to their high acidity and rich pectin content. When these tart berries are combined with sugar it makes for a great preserve! However, it's not just a case of picking the berries, washing them and cooking them. Gooseberries grow from blossom and each berry still has the shrivelled flower attached to it. Each flower has to be removed by hand before jam making begins; a labour of love which takes hours. It's necessary though - no one wants bits of flower in their jam! Woodcrest Kitchen's gooseberry jam is now available, priced at £4.50 a jar with free local delivery in Burnopfield and surrounding villages; just send a message to order. The Spotlight is on the broad beans today. After multiple sowings last autumn they’ve finally come up trumps and so far no blackfly. Rhubarb & Almond Crumb Pie recipe by @bbcgoodfood Instead of store bought shortbread, I made my own pie crust. Rhubarb came from my friend, @catslave_v allotment and as always they are amazing! After baking the rhubarb in sugar & orange juice, the recipe calls for draining off the syrup and serving it along side the pie. I did add a teaspoon of sugar to sweeten the syrup as I didn’t want to overpower the amazing tartness of Rhubarb. Time to harvest pumpkins! It's been a great year for them with still more ripening, including some real giants. They're ready to pick when they're a good orange colour all over, and sound hollow when tapped. When pumpkins are cured thoroughly by the sun they'll store for several months in a cool dry place. This little lot will be heading into Woodcrest Kitchen's Pumpkin and Naga Chilli Chutney over the coming weeks (as well as lots of family dinners!)
