It's just 9 days until the launch of the 8th in the @threeshipswhisky Masters Collection on the 18th of May @worldwhiskyday The latest release will be a 13yr Old Single Malt which spent 8 years in American Oak before being transferred across into Cape Ruby (Port) casks for the last 5 years. Only 5 casks were chosen and bottled at 53.6% abv. The concept of the Masters Collection started back in 2015 with the launch of a 10yr Single Malt finished in a PX sherry cask. There were just 800 bottles and this has now become one of the rarest and sought after South African Whiskies! We have only missed one year since then, 2017 when a bottle upgrade was delayed. Do you add water to your whisky? If not, here’s why you should consider it! 🥃✨💧 Is it wrong to add water to your whisky? Absolutely not! In fact, most whiskies on the market have already undergone some dilution. Adding water not only gives you control over the strength but may also enhance flavour and enjoyment. But why? There is an interesting article by two Swedish researchers exploring the molecular perspective of whisky dilution. Their research is based on data simulation and delves into how molecules change with different alcohol levels. They ran their simulations on a whisky model, consisting of a mix of water and ethanol, with a touch of guaiacol, a known well-flavour enhancer, typically found in Scotch whisky. Guaiacol gives whisky its smoky flavour. Guaiacol is among other things present in something called wood creosote, which is made by charring wood. So, by charring oak barrels the liquid in it will interact with the wood and the guaiacol will migrate into the liquid. The study discovered that at higher alcohol percentages (above 59 %), guaiacol molecules is surrounded by ethanol and remain submerged, and therefore harder to detect. At lower percentages, more guaiacol surfaces, enhancing the nose and contributing to the taste experience. In a whisky with around 40 % guaiacol is mostly found at the interface between air and liquid, intensifying the flavour and aroma. Further dilution to 27% alcohol increases the concentration of guaiacol at the surface, supporting the idea that adding water enhances the taste or flavour of whisky. But how much water should you add? I usually say it depends, and you should experiment to find what level that suits the dram and your palate. Interested in the research? Common myths include: 1. Older the better, NAS is meh. 2. Limited edition is so limited I’ve to buy it. 3. You add water you’re out. 4. Single malts > Blends. 5. You need to be an expert to enjoy whisky. The marketing hype around whisky these days doesn’t help either. Terms like “rare,” “forgotten cask,” “luxurious flavor,” and “one-time experiment” get thrown around so much that they lose meaning. So, I’ve decided to use the platform to share my experiences. I’ve splurged on ultra-premium whiskies only to find that sometimes, the ones on the supermarket shelf taste just as good. But not everyone has to go through that trial and error. That’s why I started sharing my tasting notes on new releases, pricey bottles, and sometimes hidden gems that won’t break the bank (check those out using hashtags in my bio!). Occasionally, I also delve into topics like how I explore whisky without emptying my wallet, the influence of casks, and my adventures visiting distilleries. Learn more about the new Bruichladdich 18🥃🔥: Earth Day +1 because good stewardship of the planet is everyday, which thankfully coincides with better terroir and better flavors. Now a Certified B Corp, using lighter glass and recycled paper packaging to reduce waste and the carbon footprint, nearing carbon neutral and fossil fuel free production, while supporting local farmers, and the surrounding community, et cetera. All great things that we hopefully all support, but at the end of the day these things also only matter if the product tastes great and people buy it. Thankfully this distillery was reopened with a focus on flavor and the best flavors of barley come from local, organic, sustainable barley. This commitment to flavor and terroir is also seen in their transparency which has been reflected for years in the classic but now has the same tracable features for the 18 year. Now 18 years seemed a little young for a distillery re-opened in 2001, but I am thrilled by the reasoning that they chose to feature the 2004 and 2005 distillate that encompasses the first work with local farmers and the flavor of Islay. While anxious to look up my bottle, I of course want to test my nose. Bourbon barrels seem to be the primary vessels used but there is some definite red wine and French oak baking spice influence with just a touch of sweetness that makes me curious if there is a touch of sherry or perhaps some white wine casks. Honeyed grain, vanilla, toffee, and bread pudding with some baked spiced peach, apple, and a whisper of flowers. More currant and apricot with cinnamon, creme brulee, and a touch of espresso bean on the finish make the palate just a little different than the nose. Spendy, but a fair value when compared to other 18 year single malts of similar quality. Not rushing out to buy a second bottle, but I am very happy I own one and will absolutely buy a second when this bottle is finished, so just about the perfect place that I want pricing to match quality and deter hording to allow consumers to find a great product at any given time. #whisky #scotch #terroir #terroirmatters #whiskysomm #whiskylife #whiskyeducation #sommlife #bcorp #islay

Almost…. Last night’s Milk @ Honey @milkandhoney.london was one of the best I’ve been to. A mixture of Distillery editions like the standard 46%, Dead Sea, Cranberry Wine Cask as well as SMWS own independent bottling. All which exceed 60% in strength. It was fascinating listening to some of the details about Israel climate & ABV going down and then back up after a time. When I was wee my Mum and her friends made Corn Dollies from barley. 🌾❤️💫 . Corn dollies are pleated and wound in distinct patterns to create a female shape. 🧍♀️🌾❤️💫 . Corn dollies harken to a time when the last sheaf of barley was ritualistically cut and Goddess figures were woven from these last stalks of harvest. 💫❤️🌾🧍♀️ . These doll figures are special and were revered. They were looked after, offered milk and kept in warm places. . They represent the Goddess and fertility and were taken care of to ensure a good crop the following year. 🧍♀️🌾❤️💫 . It was lucky to have corn dollies. People whispered to them, asked them to watch over babies and valuables. 💫❤️🌾🧍♀️🥃 . In Bruichladdich Distillery, in Jim McEwan’s time, a corn dolly was situated above the spirit safe, blessing the spirit and ensuring abundance. . 🥃🌍❤️💫🌾🥃 . People are always curious about the best things you taste in the wine and spirits business, but very rarely do they ask you about the most interesting and the worst things that you have tried. Out of 10 blind products this was the only one I could not identify for the broader category or the region. Dirty, funky, sour, earthy, and still somewhat sweet and barrel aged, my best guess was barrel aged Marc or Grappa from a producer with some funky grapes that had gone sideways and carried through that dirty brettanomyces through distillation. Gorgeous packaging and I am very curious to try more whiskies made from Icelandic barley, but that weird flavor was literally smoky sheep shit. Glad to have tried it to have the knowledge and flavor experience reference point, as well as knowing that I am generally spoiled with fantastic products so recalibration is always healthy. SHERRY. What a fantastic drink. Jerez or Xérés is in a Southern coastal section of Andalusia in Spain... . The word 'sherry' is an English language bastardisation of Jerez. And boy! does it pair well with our amazing Scotch whisky. . Two fantastic drams from Islay - 🥃🥃 David Simson Distillery Exclusive from Bowmore was matured in Oloroso & PX - Pedro Ximénez - casks. . The Jim McEwan Laddie Valinch was matured in a Fino sherry cask. For a stonking 23 years!! . 🥃 Both drams are fantastic. As we’re wrapping up our certification course of the Eh, B,C’s of Canadian Whisky and grading exams, I’m reminded that I haven’t shown off our last and certainly not least fourth featured bartender of the 2024 season. If you don’t already know her, please meet Evelyn Chick. She is a highly accredited specialist in the world of wine, spirits, and the anatomy of all things bar & beverage. She has a gleaming resume of globally recognized certifications includingWSET, Sommelier and Certified Specialist of Spirits. Evelyn is an industry leader who advocates for the continued growth and sustainability of an inclusive and integrated food and drink community within the Canadian market. She is a serial entrepreneur who has grown her passion to develop creative initiatives such as her bar consultancy Evelyn Chick Projects Inc, umbrella company to her event space @this_is_ahma and cocktail experience company @loveof_cocktails, as well as her restaurant + bar @simplthings.to, an all day cocktail and snack bar named one of Canada’s best, and Air Canada En Route Magazine’s top 30 new openings in the country. Her recently published book ‘For the Love of Cocktails’ with distribution across North America was named one of Indigo’s most anticipated fall launches in 2023. And she has recently launched her own glassware line @storyglassco. As we figured she was sitting around with nothing to do, I asked her to come up with some cocktails using Lot No.40 and this is one of our favourites. The Nutty Doctor Glass: Old Fashioned 1.5 oz. Lot No. 40 (45ml) 0.5 oz. Coconut infused Amontillado Sherry (15ml) 0.75 oz. Cashew ‘Orgeat (22ml) 0.75 oz. fresh lemon (22ml) 2 dashes Bittered Sling Moondog Latin Bitters Garnish: toasted coconut and mint Method: Add all ingredients to shaker tin and give it a hard, short shake for 5-10 seconds. Strain into Old Fashioned glass over cracked ice. Garnish with large pieces of toasted coconut and a full mint spring. Glam 📸 by @brilynnf

#suppliersunday GLENMORANGIE. Meaning land of tranquility in Gaelic, Glenmorangie has been making single malt scotch since 1843 and is up there with one of the most well known Scottish distillery houses. Originally on the site next to Dornoch Firth in a series of handsome red sandstone buildings, the Glenmorangie distillery started life as the local brewery for the town of Tain. In 1843 a farmer William Matheson and his wife Anne, bought the property and converted it into a distillery where they sold the whisky for mere shillings per gallon (wouldn’t that be nice today!) It stayed with the family until 1887, when it was sold to the Glenmorangie Distillery Co, co-owned by the Maitland brothers and Duncan Cameron. They continued until the end of the First World War when the distillery was sold again to a partnership between two blending and broking firms, Macdonald & Muir and Durham & Co, soon passing entirely to the former, which used the whisky for blends such as Highland Queen. In 1959 however, the game changed and they revived as a single malt that soon became Scotland’s biggest seller. Glenmorangie has had many loyal team members over the years, but few men or women devoted so much of their lives to the Distillery as Gordon L Smart (1895-1972). Gordon was appointed Distillery manager in 1920 after his father Alexander, the previous Distillery manager, passed away. It was a position he would fill for a remarkable fifty years. His core workforce at the Distillery - the so-ca ‘16 Men of Tain’ - were also long-serving and provided a wealth of whisky making experience ar time-honoured skills. MATURATION .🥃 Maturation is not simply linear improvement. Traditional dunnage warehouses are cool and humid, and the casks are stacked three high. They can impart a greater mellowness to the spirit than modern racked warehouses which are temperature controlled. .🥃 Warehouses located on the coast - Like @Bowmore No1 - are permeated by damp salty air and produce whiskies with different characteristics than those matured inland. 🥃 George Mackay Brown tells us in "A Time to Keep" ~ " Put thy ear against the vat, thou hearest a ceaseless murmur, a slow full suspiration. The juice is clothing itself in sound, in song, in psalmody" Page 71. .🥃🔥🔥 . CHARRED CASKS ~ active carbon on inside removes some unwanted compounds.
