Stauning Høst 🌾🥃 I already announced the Høst a couple of weeks ago here in Instagram, but I've finally had some time to sip and savour this dram for myself. 😋 As all things Stauning this dram is both unique and innovative. I'm a huge fan of what the distillery is producing and I was over the moon to see a new and highly affordable entry in their core range. 🌒 Høst is a double malt made of barley and rye, with a finish in Port Wine barriques. All the grains are sourced locally and the dram was inspired by a sunny day on an autumn harvest. 🍁 👃 Oatmeal, graham crackers, rye bread and sackcloths full of barley straight from the mill. The grains are the star of the show here but there are also fruity elements such as strawberries, blackberries, and prunes. 👅 Rusk and biscuits. Fennel, aniseed, and kardemom. Dried apples and pomegranate juice. And a hint of smoked mackerel. The palate is highly complex and the port and rye influences are clearly noticeable. 🏁 A medium to short finish makes this a perfect easy sipper. Last night, under the guidance of Master Distiller Jakob, I had the privilege of experiencing a masterclass tasting of Thu’s (pronounced Thuuu) core range. May 1st will mark the unveiling of their next venture—a trio of exceptional core range spirits. The lineup and core range features THY Single Malt Whisky, BOG Single Malt Whisky, and SPELT-RYE Malted Rye Whisky, each meticulously crafted with distinctive flavors and maturation techniques, offering a nice introduction and journey of Thu whisky. In addition to the core range whisky, we also drank a few single casks. The THY Single Malt Whisky was for me the best of the core range. It’s from a mix of bourbon, oloroso, and PX casks. Their is a bit of Danish beechwood smoke, a perfect balance of sweet wine flavors, warm oak spice, and vanilla. And their Nordic interpretation of a rye whisky was surprisingly good! Normally this is not my drink but their implementation of this was really a surprise for me. This Spelt-Rye was awarded gold at the World Whisky Awards 2024. Brilliant World Whiskey Tasting by @thewhiskeynomads who let us try few pours from five different countries! No Irish or Scotch whiskies! All coming from @masterofmalt bottlings: 1. Fary Lochan 6 YO Bourbon Cask single malt from Denmark - 51,9% abv 2. Puni 4 YO Pinot Noir Barrique Blended Whisky from Italy - 47,1% abv 3. Penderyn 7YO Fino Sherry Barrique single malt from Wales - 52,9% abv 4. Millstone 4 YO PX Cask single malt from Netherlands - 53,8% abv 5. Copperworks 3 YO New American Oak single malt from Seattle, USA - 50,5% They were all unique and fantastic drams but two of them stood out. My favourite was Fary Lochan which was slightly smoky due to its peated barley over fresh nettles! I was getting a lot of herbacious and incense notes contrasting with sweet caramel, vanilla and honey. Second was the Copperworks American Single Malt which had super heavy honey like texture. This 8th generation farm started in 2010 as one of the first in Denmark to start making whisky. There are 4 owners: Jakob Stjernholm is the master distiller, Marie Stjernholm is responsible for Farming and Accounting, Ellen Nicolajsen is responsible Distiller and Tours/Events and Andreas Poulsen is responsible for sales, communications and the malthouse. And the rest of the team are Thomas, Mads, Andrei, Klaus and Mathias. They do everything themselves, from cultivation to bottling. All in the name of the quality of their grain and the distinctive flavours of Denmark. A self-developed malting and kilning drum and a ‘single run’ distillation method ensure that they capture the essence of the grain The production capacity of the distillery is approximately 50,000 litres of organic new make. Since 2019, they opened a visitor’s centre, a new whisky warehouse and two additional malting drums. 🌾 STAUNING HØST 🌾 A heavenly evening last night for the launch of @stauningwhisky's new expression, Høst. Meaning 'harvest' in Danish, this new liquid from one of new wave whisky's pioneers is a blend of their single malt and rye, using local grain floor-malted at the distillery's in-house maltings. We were treated to a dinner at one of my favourite restaurants in London @silolondon whose sustainable ethos mirrors that of Stauning. The incredibly bright and drinkable whisky - with notes of beeswax, wildflower honey and white fleshed fruit - was the perfect match for each of the dishes we were treated too, especially a ridiculously moreish wild rabbit pie and XO sauce. And a moment of silence for thr Bread and Wine Old Fashioned - sheer perfection. Every inch of this brand hums with Danish precision and elegance - from the bottle design to the distillery and the clever collaborations they're exciting whisky drinkers with, old and new. The focus on rye is a clever (and tasty) move from these folks too - testament to their drive to make new wave whisky more prominent on the map. What a treat to celebrate Earth Day with super sustainable @stauningwhisky at beautiful @bloomsburyflowerslondon! [Invite] In addition to meeting co-founder @martin_vesterby and learning all about the history of Stauning Danish Whisky, we were also treated to a taste of their latest release HØST; a delicious double malt whisky made from locally sourced Danish rye and barley and matured on-site in heavily charred American oak casks and and first-fill Port barriques. I’m still fairly new to whisky, but found HØST remarkably approachable and loved its slightly sweet, fruity notes. Smooth and super sippable it’s definitely worth a try if you get the opportunity! Today we’re taking a trip to a small town located at the Danish West Coast - Stauning. A distillery that fully unveiled in 2018, Stauning has been gaining attention in their expression of their native grain, but more so in their breakthroughs of marrying technology in whisky making. We had the chance to attend a masterclass held by Alex, one of the founders of Stauning, right at The Single Cask Singapore. There's much to get into for Stauning (especially their distillery - link in bio for the full read) but for now, let's take a look at the whiskies! - Høst Double Malt Whisky, 40.5% The first in our core lineup of Stauning whiskies is the Høst (pronounced something like hurst), meaning “harvest” in Danish. The Høst was meant to be the accessible, anti-scalper bottle from Stauning. This whisky makes use a 50/50 of malt and rye, sourced from farms near the distillery (within 25km). The whisky, like most from Stauning, is first aged in 3.5 years of ex-bourbon cask and virgin white oak heavy char barrels. For Høst, the whiskies are finished in tawny port casks for six to eight months. - Rye Whisky, 48% Next in the core range is the Rye whisky, sporting a 60/40 split rye and barley. The liquid was aged for around 3 ½ years old in white virgin American oak that has been heavily charred. - Kaos Triple Malt Whisky, 46% There are two reasons why the whisky is named Kaos - firstly, it is somewhat chaotic - using 20% non-smoked malt, 30% smoked malt (with both heather and peat), as well as 50% rye. The second is it's named after PM Thorvald Stauning and his slogan "Stauning eller Kaos (Stauning or chaos)"\ - Smoke Single Malt Whisky, 47% For this expression, smoked malt, using local peat and heather, is used. The liquids are aged in ex bourbon casks, madeira casks, Jamaican rum casks and the usual American virgin white oak heavy char. - El Clásico, 45.7% The El Clásico is one of four from Stauning’s “Research” series - experimental whiskies that see limited batch releases that only see production for around two years. Made with the Manhattan in mind, the El Clásico was finished in vermouth casks. Link in bio for the full tasting review!
