Such was the idea of 9 Danish friends as well, who chose to get together and begin the crazy endeavour of creating a brand of Nordic whisky, namely Stauning! So this week we're enjoying some local Danish floor malted rye and barley, fabricated in the liquid form of the Stauning Rye Danish Whisky. Without further ado, let's start of this review with the nose! Herbs enter our nostrils immediately and take a central place in the smell experience. This is followed by the impression of taking a walk through a pine forest, which adds a bit of freshness. Next up comes the fruity flavors, such as cranberries and blackberries, joined by caramel and vanilla, which are more hidden behind the other scents. When we drink from our glencairn, it remains within the same realm of flavors, but spiciness does become very present, with cayenne and black pepper clearly a part of the pallet. Since the Northwestern part of Jutland where our fourth distillery stop is located – in general is very wealthy of windy weather and gigantic waves, then a dinghy and a lot of enthusiasm must be sufficient for manufacturing a prize-winning gin from this part of Denmark. Tranum Mølle Destilleri has in the remains of an old and decommissioned windmill succeeded to establish a ‘hyggeligt’ (cozy) micro-distillery -that actually has managed to manufacture a gin line of six gins that since the beginning has won prizes from many distant regions of the world. . When the winds of changes blow, some people build walls – and other re-build a windmill. Luckily @tranum.moelle.destilleri did the last thing and modified their mill to a distillery. Despite the noticeable increment of the production cost, then it has since the beginning been a dogma for Uffe & Sara only to use local ingredients from Møn. So instead of using classic gin botanicals from other parts of the world, then they have found herbs, plants, roots and berries from the wild nature of Møn- that adding the same elements for creating a classic gin. Daily inspiration & education with @empiricalcph "MInor Threat" Driven by an obsessive focus on flavour, Empirical Spirits was founded by Lars WIlliams and Mark Emil Hermansen, both alumni of five time world’s best restaurant Noma. Their aim is to take inspiration from both eastern and western techniques and traditions, deconstructing them in order to build something entirely new. Instead of producing spirits that fit into well known categories they use alcohol as a vessel for experimentation, combining surprising ingredients and concentrating on gastronomic experience over intoxication. The distillery uses a custom built vacuum still for distilling their spirits which allows them to do so under a lover temperature — around 15C (as opposed to 80C under atmospheric pressure) which allows them to capture the more floral notes and volatiles that the yeast produce durifermentation and ‘fresh’ or earthy flavours of seasonal botanicals and barley. Empirical Spirits uses barley koji, replacing the traditional germination process with the inoculation of the Aspergillus Oryzae fungi onto the pearl barley which, as a result, produces the enzymes required for the breakdown of the starches into sugars. Koji is a traditional Far Eastern fermentation method used for, amongst other things, sake, shoyu, miso and amazake production. It was founded in February 2018 and is the first and only distillery in the center of Sønderborg. The high quality products are 100% organically grown. The distillations are made in small batches on a traditional copper pot from Portugal. The Dybbøl Gin has a fresh, fruity taste, which is partly due to the sea buckthorn. The other known botanicals are juniper, anise, cardamon and fennel. This gin is also double distilled. Again, the Danish artist Georg Persson is responsible for the beautiful label. It shows a historic building Sønderborgs: The Dybbøl Mill. Only a few hundred meters from the distillery. The motif was not chosen arbitrarily. On the 18th of April 1864 the German-Danish war was ended where the old mill stands today.
