The sixth edition was only recently shipped out to members of the Peat Elite. Fermented with Pinnacle and Anchor yeasts and aged in a mix of American Oak oloroso, Pedro Ximenez and ex-bourbon casks. Bottled at 46% with no chill-filtration or coloring and a residual phenols level of 18.7 PPM.” - Printed on bottle label (awesome!) Arrival - Sweet barley and lightly phenolic smoke Development - Sweetness extends into sherry fruits with light pepper spicyness Finish - Ripe berries followed by gentle phenols into short medium finish Overall experience - While this is from the Isle of Skye, it is not a Talisker replacement, different flavors and character altogether. It’s lightly peated but I didn’t find any unique coastal/Island characteristics that stands out like Lochranza (Arran), Highland Park, or Tobermory (Ledaig). @thedublinlibertiesdistillery is located only a few steps away from Teeling Distillery, so it’s also located at the once industrially prosperous The Liberties, an area in the city of Dublin. They are owned by an English company called Quintessential Brands ( @qb_news ) and they’ve been in the whiskey making game since 2019. . Now for some more “technical” info according to my charming tour guide, Gemma: their fermentation time is 3 days; yearly LPA production being 900.000 last year, aiming at more than 1 million this year - which frankly seems too much to them in my humble opinion but…; they are focused on the production of triple distilled single malt and their casks are aging in Co. Wexford, located to the south of Dublin. Unfortunately I could not get a straight answer regarding which type of casks they are working with now. So, in this way, I don’t have an ideia about their future releases of liquids actually distilled over there. . The tour was ok. Gemma followed her script linking Liberties’ history to whiskey production. There was an interesting twist to it regarding the additions of themes like murder and witchcraft in a black humorous way. It seemed to please everyone in the tour and it was a fun way to introduce their outsourced whiskies that have names like: Oak Devil and Murder Lane, the first being a 5 y/o ex-bourbon single malt and the latter a 13y/o single malt finished in Tokaji casks. Both quite ok. We also tasted their blend, called Dubliner, and honey liqueur. . At the end of the experience came one of its highlights. Thanks to Daire, a nice man who also works at the distillery’s visitors experience, I could taste some of DLD’s New Make and it was quite good. Malt sweetness with some wild dark berries touch to it. 🇪🇦🇲🇽En la primera jornada en el @bilbaowhisky , hemos podido disfrutar de pequeñas joyas del conocimiento del whisky, además de las clásicas catas por marcas. Comenzamos con una gran charla sobre “La influencia del envejecimiento en el mundo del whisky” por @bymariadelapena. En esta charla se realizo un acercamiento al mundo del envejecimiento del whisky donde el léxico importa, magnifica la diferencia entre anejar-envejecer-madurar, y las explicaciones claras y sencillas sobre todo el proceso. Para mostrar prácticamente lo enseñado se realizo una cata de un No Whisky de @clubsackman, envejecido en un depósito de inox. con duelas de barrica, y el core del Single Malt de @Bushmillsirl En la segunda charla técnica, “Profesionaliza tu cata: Influencia del agua en la evolución del perfil aromatico del Whisky. Un análisis detallado”, llevada a cabo por @ruthmateu , donde pudimos de disfrutar de una guía de consejos técnicos de la aplicación del agua en la cata de whisky, desde un punto matemático sencillo, formula mediante, hasta todos los aspectos a tener en cuenta, y una guía de consejos prácticos para mejorar tanto la cata de whisky como a nosotros mismos como catadores. Ambas charlas desbordaban pasión, conocimiento y técnica. Irreprochables e inmejorables. Por último asistimos a una pequeña mesa redonda sobre el whisky irlandés, donde @OisinDavis , Billy Abbot, @EimhinPrendergast nos dieron algunos apuntes sobre los whiskies irlandeses. Un charla entre amigos interesante. Con referente a lo catado, haremos algo más concreto al finalizar la Topaketa, aunque de este primer día destacaremos la cata vertical de @Sierra_Norte_whiskey y la exclusiva cata Macallan dirigida por @themacallanvic. Comentar que, por fin, coincidimos con Adrian, @coktail_hub al que agradecimos personalmente su aportación a la cata @Laphroaig y comentamos el estado del mercado actual; con @alejowhiskydyc , que siempre tiene algo interesante que contar sobre DYC, especialmente, cuando esperamos novedades sobre la marca, y por supuesto con José Luis de Navarro @Bmoonshiners que nos mostró los nuevos Bikkun, de los que daremos buena cuenta.
