Bunnahabhain Mòine Oloroso！ Distillery：Bunnahabhain Bottled：2017 Cask Type：Oloroso Sherry Casks Strength：60.1% Nose：強勁的煙燻感、泥炭味、煙霧繚繞的氛圍，佐著海鹽、肉脂香氣、複雜的深色水果、一絲絲木質、微微的薄荷小清新。 Taste：酒體中上、酒精感中上、油脂度中等。入口的酒精感頗具份量，等到酒精感漸為褪去之後，明顯的烤培根的油脂香氣、厚實的泥煤碳、皮革、黑咖啡、海鹽，充滿暗夜中中海灘的氣息，隨後青草、薄荷、一抹麥芽甜感湧上，較重的木質調性收尾。 Finish：黑咖啡、焦糖、深鬱的水果、橡木、黑胡椒，一如品飲時的黑暗氛圍。 Take home message：非常深色的雪莉桶與重泥煤的結合，開瓶時橡木與酒精感明顯較重並且帶有一絲絲的苦，醒半年之後甜感明顯上升。 85(開瓶)->91(開瓶後半年) points #whisky #whiskytasting #islay #islaywhisky #bunnahabhain #bunnahabhaindistillery #moineoloroso

Dornoch Distillery – Cask No.12: 🥃 The fourth whisky I tried during my visit to @dornoch_whisky_bar was this 4 year old @dornochdistillery single cask offering. The whisky had been matured in a first fill ex-Bourbon octave and was limited to just 73 bottles. Visiting Dornoch and staying in the castle hotel, I had to try a Dornoch Distillery release and this was a cracker of a dram. I’d love to try it again one day. The distillery is actually within the Dornoch castle hotel grounds and is located inside a tiny 135 year old fire house. They use heritage barley types (plumage archer in this instance) and various strains of brewers yeast. As someone who is heavily invested in the craft beer industry (and the wide variety of yeast strains that are used), seeing distilleries experiment with and discuss the role of yeast in their whisky is of great interest to me. Below are my tasting notes: Distillery: Dornoch Distillery (Thompson Bros) Founded: 2016 Location: Dornoch, Scotland Region: Highlands Strength: 59.1% ABV Distilled: 23/8/2017 Bottled: March 2022 Age Statement: 4 years old Number of bottles: 73 Cask type: First fill ex-Bourbon octave Note: According to the barman who served me (he was a lovely dude but unfortunately I didn’t get his name), the artwork for this bottle is based on the tattoo a guy who frequently visits the Dornoch Castle Hotel whisky bar. The nose: Industrial. Oak varnish. Cooked brown sugar. Cloves. Old leather. Digestive biscuits. Vintage candle holder. The palate: Crème caramel. Dried mango. Slightly resinous. Further brown sugar notes. Kiss of nutmeg. The finish: Oak spice. Caramelised ginger. Cocoa. Die Distillery ging 2019 an den Start, dieser Whisky erschien 2023 – er ist also nicht mehr als drei Jahre alt. Er ist hell, er stammt aus ex-Bourbon Fässern – viel erwarte ich ehrlich gesagt nicht. #Torabhaig Cnoc Na Moine ✅ ABV - 56% ✅ Non-Chill Filtered ✅ Natural Color “Heavily Peated single malt whisky made with a mix of concerto malted barley with an in-grain phenols content of 78.4 PPM. Fermented with Pinnacle and Anchor yeasts and aged in a mix of American Oak oloroso, Pedro Ximenez and ex-bourbon casks. Bottled at 46% with no chill-filtration or coloring and a residual phenols level of 18.7 PPM.” - Printed on bottle label (awesome!) Arrival - Sweet barley and lightly phenolic smoke Development - Sweetness extends into sherry fruits with light pepper spicyness Finish - Ripe berries followed by gentle phenols into short medium finish Overall experience - While this is from the Isle of Skye, it is not a Talisker replacement, different flavors and character altogether. It’s lightly peated but I didn’t find any unique coastal/Island characteristics that stands out like Lochranza (Arran), Highland Park, or Tobermory (Ledaig).
