An absolute must do event during the Spirit of Speyside is visiting Tamdhu Distillery. I've been here in previous years but always enjoy coming back for a tour. The team are amazing, I can't remember ever having laughed so much and having such fun on a tour anywhere! That's for another upcoming post though! It was also the perfect opportunity to sample and treat myself to this years Dalbeallie VII festival release 😇 As with all Tamdhu releases it's a real sherry monster and for that I love it! Coming in at a hefty 61.8% and limited to 1000 bottles it's definitely a dram to try if you get the chance! 📍𝐌𝐜𝐂𝐨𝐧𝐧𝐞𝐥𝐥'𝐬 𝐃𝐢𝐬𝐭𝐢𝐥𝐥𝐞𝐫𝐲 . We found ourselves in the wonderful city of Belfast and happened to be at a loose end after our plans fell through. But luckily, we were able to get onto a tour at @mcconnellsdistillery new setup on Crumlin Road - in the 'old jail'! . Now 1. I hadn't yet tried any @mcconnellsirishwhisky so had no idea what to expect and 2. I was slightly sceptical of how the tour may have been conducted in an old prison setting. I have (professionally btw 😅) visited several real-life/working prisons and wondered if they may have got it all wrong and almost a bit 'cheesey' like BUT, they had it all spot on 🙌🏻 . The tour was really insightful and the decor itself still replicated that of a 'jail' despite being converted into a full working distillery! The tasting room and bar is stunning and our tour guide Connor was great! Even the 'cell doors' and walking through the 'prison wing' were uncanny. Swipe ➡️ for photies. . The McConnell name had been around for years but closed it's distillery doors in 1930s due to the prohibition. Eleanor McConnell was however the legend here back in 1840s who saved the family name by continuing her husbands work after she became a widow! This distillery is keen to bring distilling back to Belfast and honour the McConnell name. You may have also noticed this Irish Whisky does not use the 'e' in its spelling 👀👀 . And now for the whisky! We got to try the 'McConnell's 5 year old' and the 'McConnell's Sherry Cask'... I definitely had a favourite and had to pick up a bottle 😍 Can you guess which one I went for? Oooooh, I've been trying to get my hands on a bottle of this since it's realease a few months ago, I loved its predecessor #alltgleann and this, as I'd hoped, does not disappoint! A gracious friend gave me a sample and it's sent my senses into the stratosphere. On first sniff I could have believed it was a solid islay expression with its deep velvety pettiness but its body gives the game away with that characteristic Skye signature @torabhaig_distillery flavour, the oloroso influence is front and foremost with cinnamon spices swiftly followed by fleshy dried fruits from its time in PX casks. Delicious! Cracked this @tipplesmcr @bunnahabhain 1989 25yo 44% bottled for @boisdale_restaurants in 2015. Cork in decent nick, see below pics for labels. Tasting notes below 🥃 Nose is juicy tropical fruit; peaches, apricots, guava with fleshy grapefruit, spearmint and gentle peat smoke. Palate continues the fruit, initially light, then it has a chilli kick, mint leafs with rolling tobacco developing, then more tropical fruit & gentle smoke. Both dry and juicy in equal measure. Cadenhead Staoisha 9yo red wine finish. Peated Bunna and wine is one of those great combinations. This one is fairly young, and with 3 years in the wine cask is more second maturation than finish. Bring it on. Thick, chewy smoke, then a wave of blackberry, cola bottles, cola cubes, soot and ash, rhubarb, welly boots, burnt toffee, treacle, vimpto and bitter coffee. There is a lot of wine influence here, but that peated 58.0% ABV Bunnahabhain spirit smacks it back into line. A bold, berry, peaty, salty, earthy, dram. Lovely stuff. This was from the Autumn 2023 outturn, but I think will work a treat as a firepit dram this summer 😋 Slàinte mhath 🥃!

Tonight's double dram tasting will be from @glengariochmalt distillery. Glen Garioch ("Glen Gee-ree or Geery", as it's known locally in the Doric dialect of Aberdeenshire) is a distillery that produces some of my favourite liquid and tonight I have two bottles that I was treated to at Christmas time. - Founders reserve 1797, no age statement, 48% Abv. Is a bottle of sweetness... if you've read a few of my posts you'll start to see a trend with my palette and choices. Vanilla, butterscotch and fresh green fruits. Buttercream and citrus as it says for the tasting notes. I love the fresh fruits but it's the long finish of amber warmth, Vanilla and butterscotch that makes this a go-to-dram. - 12 Year old, 48% Abv. Again, sweet goodness with more oakyness shining through. Bourbon and Sherry casks have been married together to give you flavours of fresh heather, rich poached pear and sweet malt barley. Crème brulee is one of my favourite tasting notes ever! A long finish is very much appreciated. I love these bottles. Trying them side by side is a wonderful way to see what Glen Garioch distillery is doing. These bottles have been a constant of Glen Garioch's range and I'm very happy about that. Review #288 - SMWS 44.152 'Polly Put the Kettle On' - Craigellachie 9 Year A Craigellachie single cask, with a 2012 vintage, from Speyside - it's an unusual cask from the distillery, as well, as it sees no sherry maturation or finishing. Instead, this was matured in a second fill bourbon cask, and then bottled at only 9 years old, so there's a chance this will still be quite spirity. Then again, that's the sort of bottling that allows us to dive into the real character of a distillery. The Scotch Malt Whisky Society has bottled over 150 casks now from Craigellachie, or distillery #44; the place is known for its use of worm tub condensers, which can add an oily, umami character to the spirit. Because this bottle is presented at a cask strength of 59.2%, and it's not chill filtered, we should have a great chance to find nuances like that. Nose: Strong and spirity - dry at first, with oak and a soft wood smoke. There's a vegetal, funky character to the spirit as well, slightly earthy at times, maybe some petrichor involved. Apple and white peach, along with vanilla, adds a slightly sweeter side; hints of honey and brown sugar can be found later. There is just a little savory scent lingering in the background. Palate: Oily, but also dry - dusty oak, sawdust, hints of sour malt, and white pepper to start. Vanilla, burnt caramel, and various brown baking spices are here, along with mild oak and some wood sugars. Applesauce, sour malt, and tannins are accent flavors and sensations in the aftertaste. [Rotten Glasses X RAASAY Masterclass with Seki Lee] 로튼 글래스 X 라세이 마스터 클래스 with 이세기 디스틸러 - 이번 로튼 글래스 시음회에서 좋았던 점은 역시 잘 몰랐던 증류소, 위스키를 편하게 만날 수 있었다는 점. 이름만 알고 있던 위스키를 조금이나마 배우고 체험해 볼 수 있어서 즐거웠던 시간이었다. - 라세이 증류소에서 일하고 계신 이세기 디스틸러님의 강의도 좋았다. 주류회사 영업사원에서 제주 맥주의 양조 직원, 스코틀랜드 유학을 거쳐 라세이 입사까지 멋진 삶을 살고 있는 것 같았다. 무언가를 덕질하다가 프로가 되려면 얼마나 애정이 있어야 하는 걸까. - 라세이 섬과 라세이 증류소에 대한 소개도 인상 깊었는데 특히 좋은 사진들이 많았다. 닿기 힘든 만큼, 숨 막히게 아름다운- 으로 표현한 라세이 섬의 풍경. 살아있는 박물관이라고 하는 천혜의 자연과 각종 동물들. 분당구 사이즈에 겨우 161명의 주민만 거주하는 라세이 섬. 언젠가 기회가 닿으면 갈 수 있을까, 카메라 들고 섬 한 바퀴 제대로 걸어보고 싶다 생각했다. - 몇 가지 위스키 설명들도 저장. 📌 밀주 제조의 성지 📌 라세이 땅의 단층을 몰드로 찍어서 만든 라세이 병 디자인 📌 은은한 피트에 검붉은 과실의 풍미를 추구 📌 100프로 스코틀랜드 보리 📌 라세이 섬에서도 보리 재배를 시도했고, 실제 경작한 보리로 양조도 했음 (아직 제품화 안됨) 📌 하이랜드 피트를 사용해서, 식물 뿌리와 낙엽 같은 피트 특징을 지님 (해조류가 축적된 아일라 피트와 다름) 📌 100시간 이상의 긴 발효시간과 콜드 자켓을 이용해서 32도 이하를 유지 - 그리고 무려 10종의 시음기 메모. 빈 속에 60도 넘는 술 들 마시느라 제 컨디션이 아니긴 했는데 간단하게만! 🥃 RAASAY New make spirit (Unpeated 63.5%) 집에서 딸기잼을 끓일 때 나는 새콤하고 달콤하고 약간은 쿰쿰한 향, 딸기가 곱게 갈린 상태도 아니고 이제 막 으스러지면서 끓기 시작할 때 (주방 말고) 거실쯤에 앉아 있는 기분이었다. 🥃 RAASAY New make spirit (Peated 63.5%) 딸기가 있기는 한데 꽤 옅어졌고, 잘 구운 보리, 부드러운 흙, 말랑한 지푸라기, 안동소주 생각도 한 스푼. 🥃 RAASAY Rye Whiskey Cask (Unpeated 61.8%) 이거 그 자리에서 영업 당할 뻔. 이성이 내 카드값을 붙들어 잡았다. 첫 모금부터 산뜻한 청량감, 솔의 눈 약간, 젖은 풀, 날카로운 허브, 달달 바닐라, 매애콤하고 아알싸한 후추, 마시고 나니 무슨 마라로 절여진 입이 되었는데 엄청 인상 깊었다. 🥃 RAASAY Rye Whiskey Cask (Peated 61.8%) 언피티드가 너무 좋았어요. 🥃 RAASAY Chinkapin Oak Cask (Unpeated 61%) 스카치 캔디, 바닐라, 카라멜, 음음. 🥃 RAASAY Chinkapin Oak (Peated 61%) 첫 인상은 벤리악 버니모스가 생각났다. 캠프파이어 장작 같은 스모키함. 아이오딘은 거의 없는 스모키. 구수한 보리 너머로 새콤달콤한 딸기. 따뜻하고 달달하게 올라오는 스파이시함. 두 번째로 좋았다. 🥃 RAASAY Signature 라세이의 방향성 그 자체. 🥃 RAASAY Bordeaux Red Wine (Unpeated) 딸기가 포도로 바뀐 것, 정제된 감칠맛, 근데 이미 이 시점부터 내 혀도 맛이 갔다. 🥃 RAASAY Bordeaux Red Wine (Peated) 점잖은 피트... 🥃 RAASAY Gin 네, 이건 좀 나중에 꼭 사서 먹어야겠습니다. 드라이 한 주니퍼 베리, 민트, 시트러스 필. - 오늘의 교훈 : 시음회는 너무 즐거웠는데 다음엔 꼭 밥 먹고 가자.
