Last Sunday I was having lunch with @gordonandmacphailstephen at @harbour.lights in Lossiemouth (also thank you to @scotchkirsty for the complimentary @scapa.distillery Skiren). I mentioned to him that I was heading to Toronto, and did he have any recommendations for whisky bars. Before I’d even finished, Stephen told me to head to @thecaledonian. A quick look at the online menu confirmed that this was from definitely worth checking out, with an enormous list of whisky, including multiple selections from nearly all the closed distilleries - in two pages I counted 2 Coleburn, 3 Dallas Dhu and 4 Convalmore! . . One bottle really caught my eye though, a 19Yr @springbank1828 distilled in 1975 and bottled by Signatory. I’ve only ever had one of these much older Springers once before, a 1967 40Yr by Duncan Taylor, which I was very impressed by, and at TBH where in Scotland are you finding 70s distillate Springbank these days? . . Springbank 19Yr 1975 (Signatory, Cask 3603, bottled 1995) - 54.1% . . Nose - much more restrained than modern Springbank, malty (vinegar?), also savoury batter before the deep fat fryer. An earthy spiciness, capsicum, and then into a heavy mint, more eucalyptus, it’s reminding me of a Fishermans Friend lozenge. Oatcakes and Branston Pickle rounds it off. . . Palate - ashy, gunpowder tea and sherbet dip, the fizziness hides a fruity flavour underneath. Tart, slightly underripe pineapple, the same underripe pear, moving into (ripe) honeydew melon. Water brings out white chocolate and cherry, plums, but also a chalky texture. . . A classic Springbank? That depends on your perspective. It clearly is Springbank, but one from a different era. It’s less Campbeltown funk and more Campbeltown rough. Sweaty, hard edged, but rewarding with time and effort. A dram to savour over several hours, to be appreciated for the snapshot that it is, but personally wouldn’t be chasing the big money that these go for at auction.

Highland Park 18 Years Viking Pride is a single malt whisky from the Scottish Orkney Islands, located north of the Scottish mainland. The drink is amber, almost brown in color. The base distillate undergoes a maturation process of no less than 18 years before being bottled. When the stopper is removed, sweet notes of honey are the first to greet the nose. These later develop into hints of cherries and rich influences of chocolate. The palate is also very complex in character, featuring tones of orange zest and sea salt, as well as a touch of peat smoke. The alcohol content of the Highland Park 18 Years Viking Pride is 43%. On the off chance you hadn't heard; it's World Whisky Day. And whilst our whisky isn't here just yet, the journey is well underway. In the last few months, our Whisky Ops Team has met their primary objective: to set up, and nail down, our production process. We stopped in with Vaibhav our Head of Whisky recently to hear more about how things are going, and learn about our new make spirit. And sample it, of course. The team have started trialling chosen yeasts and different fermentation techniques to enhance the flavour profile of the new make. We have ascertained the distillery character, which matches our pre-commissioning blueprint, but we'll continue to tweak the process, forever seeking to elevate the character nuances of the spirit. The journey has just begun and it's an incredibly exciting time for all of us here at Port of Leith Distillery - thanks for being here with us! Happy World Whisky Day 🥃
