🥃 Review 085 🥃 GlenDronach 12YO Original 43% ABV, natural colour matured in PX and Olorso sherry casks from Spain ． 😸Not a sherry bomb but quite a nice example of a sherried single malt. ． 👽A few things about GlenDronach that may interest you: - The distillery remained quite low-profile until it was bought in 2008 by Billy Walker, who successfully restored the distillery’s reputation for bold, sherried whiskies. - The distillery was mothballed between 1996 and May 2002. This production gap forces the distillery to use much older casks than necessary. Ginger and nuts are good for the guts. 【Whisky cork maintenance 威士忌木塞保養】 ❓What to do to prevent the whisky cork from breaking? 1. Wet the cork by resting the bottle horizontally for a while (say a few minutes) once or twice a year. Or, 2. Use Parafilm to wrap around the seal of the bottle. 3. Better do both. ❓What to do when your whisky cork broke? If you have empty whisky bottles with screw caps — some Japanese whiskies do use screw caps for example — you may use it as a container. But make sure the empty bottle’s previous content is of the same type as the new refill: it’s not a good idea to fill an empty peated whisky bottle with non-peated one. Better rinse the empty bottle with the refill. Don’t have an empty bottle with a screw cap? Find an intact cork that perfectly replaces the broken one. When the stills needed to be replaced, the original design by George Smith was carefully re-created by the modern coppersmiths. #DoYouKnow why Scottish distilleries have pagodas? This distinctive style of Scottish distillery chimney, modeled after Chinese architecture, was originally introduced by Charles Doig, a Scottish architect, in the 19th century. The primary purpose of the pagoda roof is to facilitate the malt drying process. After barley is malted (soaked and germinated), it needs to be dried to stop germination. The pagoda roof design helps to vent warm air from the kiln where the malted barley is spread out for drying. The slanted tiers of the roof create a natural updraft that ensures consistent airflow and temperature distribution, preventing the malt from overheating. Newer distilleries or those that have undergone modernization might not feature this traditional architectural element, but the pagoda roof remains a distinctive and iconic symbol of the history and artistry of Scotch whisky production. Pic for the day: Driving off the feints at the Tormore distillery in Speyside, Scotland. Distillation is simply the process of boiling a fermented wash (i.e. an unhopped beer). The steam or vapours that come off during the boiling process are collected and condensed back into liquid. In Scotland, most distilleries practice "double distillation". The first distillation takes the beer from around 8% ABV up to a low-strength spirit of around 25% ABV, which is then termed "low wines". The low wines are then distilled again (i.e. the second distillation) to produce the spirit that will go on to become whisky. During the second distillation, the first vapours that come up the still are high in undesirable compounds. They're known as the foreshots or "heads". Next comes the middle cut, aka the "heart of the run". That's what we want to keep and put into cask for maturation. And finally, the feints (or "tails") come through at the end. These are high in fusel oils and are also undesirable. The distillers typically turn up the heat and drive them off quickly. They're collected and mixed in with the next batch of low wines coming through. As you can see in the photo here, contrary to common belief, the spirit collected from distillation is actually clear! It takes its colour from the wood in which it is aged. Ever wondered why all stills aren't a standard shape? Well, the degree of reflux influences the concentration of flavor compounds in the final whisky, resulting in variations in taste, aroma, and complexity. The swan neck can shape the character of the whisky. They can have curvy adornments such as boil balls (the bulbous copper swelling at the base of the neck of a copper pot still), pinched, riveted waists, wide necks shaped like a lantern, plain straight columns, or flat tops. The shape of the swan neck can give the vapors a smooth ride or act as a baffle, leading heavier elements to condense against the copper surface and drop back down into the pot, leaving the lighter elements in the vapor to carry over the top. Certain countries favor one spelling over the other—for example, Scotland and Canada always use “whisky,” while Ireland and the United States tend to favor “whiskey.” At Whisky Advocate, we use the spelling without the e when referring to the whole category, but will revert to each country's or brand's preference when writing about its specific products.
