義侠「田尻農園」 「義侠」を造る山忠本家の新商品です。 今まで、義侠として兵庫県特A地区特別栽培米山田錦として使用されていた、お米農家の田尻さんによりフォーカスしたお酒です。 兵庫県東条地区で、2000年に特別栽培米として無農薬無化学肥料の山田錦を手がけた当時、農家さんは１０軒くらいいらっしゃったようです。ところが、後継問題などで廃れ、現在はたった一軒となってしまいました。これが田尻農園です。 この田尻農園の米作りを守らねばと、ここ数年間は山忠本家酒造社長、社員自ら、泊まり込みで除草作業しています。弱輩掛田も微力ながら参加させて頂いたことがあります。 イベントとしてファンと共に田植えをするのも素敵です。しかし、この田尻さんの米作りは、特別栽培米を崖っぷちにいるような思いで死守している、良酒を醸すために農家はどうあるべきかを問う、蔵と農家の真剣勝負なのです。蔵は圃場に入り、田尻農園の社長の田尻倫生さんは、良い米を作るため毎年蔵に来て仕込みを手伝いながら、米がどうあるべきかを酒の造り手と共に考え続ける関係性。 良い風景を映像で見て和むことがある一方で、この風景のために装備を背負い、山に赴いて、時を待って出会える風景とは感じるものが違い過ぎるのではないかと考えることがあります。 楽なことは本当に良いことなのか。 除草作業は本当に大変です。薬を使わないやり方は、非効率で生産性が低いと思う人も多く、そして忌避されます。しかし、良いものを作るために思いを持って米作りをする人には、苦労以上の知恵を絞って得られた結果なのだと私は思います。 酒米生産者に思いを寄せて、そこに添う山忠本家の山田さんと、酒米農家として酒に近づいて、米を極めたいと努力する田尻さん。 共に担う苦労と良いものを分かち合う喜び。 田尻倫生さんのように、若い農家さんが米作りを続けたいと思うような酒こそ、私達は選びたいし、飲めなくなってもこれを選んで欲しいと、次の世代に訴える売り手と飲み手でありたいです。 ちょっと特別な、義侠です。 日本酒の一つの歴史だと思うのです。立ち会って頂きたい一本です。 #掛田商店 #地酒 #日本酒 #熟成酒 #横須賀 #三浦半島 #発酵 #つくり手 #食文化 #kakeda #sake #natural #liquor #traditionalfood #handmade #miura #fermentedfood #fermentation #義侠 #田尻農園 #山忠本家酒造 #東条特a地区
