Korean Lunch Tuesday 21/05/24 @the_cups_malmesbury Although when it comes to eating habits, we Koreans have an expression that translates as "Fight heat, with heat," I am choosing a lighter, more refreshing approach here. This week's inspiration comes from our next door neighbour: Japan. Soba noodles are typically cooked, cooled and then served with a light dipping sauce, which I am sure is one of the few bearable meals when the temperature goes over 40°c. I combined tangy kimchi with umami-packed miso, and added the bitter sweetness of tahini to make the dressing. With different textures of edamame, asparagus, cucumber, carrot and pickled onion, finished with nori seaweed and toasted pine nuts, this makes a fresh yet satisfying meal. Served from 12pm till 2:30pm. Takeaway available. Contains gluten, sesame, soya, pine nuts. Vegan. Gluten free option avaliable.

Never know the best way to store your bread? If stored properly, traditional sourdough bread (the proper stuff that is, that’s been fermented slowly and is full of natural acidity) can last four to five days. Did you know, the natural acidity of sourdough bread discourages bacteria, so it takes longer than yeasted bread to develop mould? Each loaf baked at Milawa Bread is a ‘slow’ product. It’s been treated with respect and given ample time to develop into the tastiest, most digestible bread. Our slow-made sourdough is particularly stable, which means it keeps especially well. Ideally, you should store your loaf in a cotton bread bag or wrapped in a large tea towel, so that the bread can ‘breathe’. Leave your bread in a relatively cool place so it can maintain normal ambient moisture levels. It is not recommended to store bread in the fridge. A fridge is an extremely dry environment and will harden the bread quickly. In our previous post, we talked about the presence of calcium in our teeth. Could yogurt help us to have a dazzling smile? ✨ Tooth decay, or dental caries, is damage to a tooth that can happen when ‘bad’ bacteria (Streptococcus mutans) in your mouth produce acids that attack the enamel on the surface of the tooth. The research has shown that consuming probiotic dairy products could improve the oral microbiota profile and hamper the development of caries in children, adolescents, adults and elderly. A free range @bostockbrothers chicken stuffed w thirty different plants from our garden, each with their own purpose. Herbs like pineapple sage which have positive neurological properties. Slow cooked and finished over fire. Turned into a chicken salad, w @cathedralcovenaturals coconut yoghurt instead of mayo, and a good dose of @living_goodness feremented kimchi . With your body temple nourished, we can then dive into all the other modalities we share with men on our deep dive into wellbeing, on retreat. If you’d like to research more about the link between mental health and diet, I highly suggest the book The Better Brain by Julia Rucklidge. Or better still, book a retreat!

The beautiful airpockets inside a selroti. My non compromisable morning coffee companion here in Kalimpong as I set down with my journal , planning out the day, occassionally getting distracted by the multitasking that I have to do today including getting the second shot of anti rabies. Do you suffer from allergies that leave you feeling constantly bloated, congested or itchy? Allergies are on the rise worldwide, affecting millions of individuals of all ages. While genetic predisposition plays a role, environmental factors, including diet and gut health, also influence immune irritation & allergy development. Fermented foods offer a promising approach to allergy prevention and management by supporting our gut microbiota and biome. The gut is intricately linked to the immune system, and when the colonies that reside in our digestive tracts become unbalanced, ill health and allergic issues can commence or become worse. These fermenting foods serve as a natural remedy for gut dysbiosis by replenishing beneficial bacteria and promoting microbial diversity. Lactic acid bacteria, such as Lactobacillus and Bifidobacterium species, dominate many fermented foods and exert numerous health-promoting effects. These probiotics help strengthen the intestinal barrier, reduce inflammation, and modulate immune responses, thereby restoring gut health and function. Research suggests that fermented foods modulate immune function by promoting the development of regulatory cells and enhancing the production of anti-inflammatory immune signalling. Fermented foods can be high in histamine, which can be responsible for digestive issues and allergy-like symptoms in some people. A probiotic breakfast. If you’re the type of person that needs a nourishing meal in the morning, here’s a simple, satisfying meal to push you through the first hours of the day. From Julie’s Fresh & Fermented cookbook - - 1/3 c Puréed Probiotics* - 2 pitted dates, finely chopped - 1/4 tsp ground cinnamon - 1/4 tsp ground cardamom - 2 c plant milk - 1/2 c roughly chopped nuts (optional topping) - 3 tbsp unsweetened coconut (optional topping) *You can make your own Puréed Probiotics by blending Classic Kraut until it is the consistency of applesauce. Mix together dates, chia seeds, and cinnamon in quart-sized bowl. Pour milk over mixture, stirring until gently mixed. Cover and refrigerate overnight. In the morning, the mixture will have taken on a thick, pudding-like consistency.
