One of my favorite appetizers to bring to a party are my Shrimp Cocktail. It’s a classic, timeless dish that most people either buy or overlook, but when you make it from scratch, it’s really special. I poach my jumbo shrimp in a seafood stock with fresh fennel, shallots, lemon, and herbs until cooked then I shock them in an ice bath. Quick and Simple Shrimp Fried Rice Ingredients: 2 tablespoons vegetable oil 1 pound medium shrimp, peeled and deveined 2 eggs, beaten 2 cups cooked white rice, chilled 1 cup frozen peas and carrots, thawed 1 onion, finely chopped 2 cloves garlic, minced 3 tablespoons soy sauce Salt and pepper to taste Green onions, sliced, for garnish Directions: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. 270 calories Pork, Sprouts, and Potatoes with 27g protein  -3oz cooked pork tenderloin (120kcal with 20g protein) -170g brussel sprouts (70kcal with 6g protein) -75g potatoes (65kcal with 1g protein) -1tsp ranch powder seasoning (10kcal) -1tsp Kevin's Natural Foods Korean BBQ sauce (~6kcal) drizzled on top. The pork tenderloin I cooked in my pressure cooker for 45 minutes with 1/2c water and about 1/4c of Kevin's Natural Foods Korean BBQ sauce. This BBQ sauce is 50kcal for 1/4cup. Once cooked I simmer in the instant pot until some liquid cooks off while shredding the meat. The potatoes and brussel sprouts were both steamed in the microwave. Once steamed add 1tsp ranch powder and a little salt and air fry for about 8-10 minutes. Tonight's family dinner is giving summer; shame the weather hasn't caught on! Garlic & Lemon Roasted Chicken Breast - cooked in a hot oven in a drizzle of olive oil, black pepper, sea salt, a squeeze of lemon & a pinch of garlic - bashed about until even sized and cooked until they reach 74 degrees C; (about 23-25 mins in mine), then rested for 8-9 minutes before carving. @jerseyroyals were cooked until soft in lightly salted water; drained and then add a spoonful of butter & a pinch of dried mint, sea salt & black pepper - our first of the season & they were 😍😍 Simple salad of rocket, cucumber, vine tomato, Kalamata olives and avocado dressed in lemon juice & crusty French bread for the troops. I remember being so tired when I got home to make this dinner that I texted a friend 'noodles or rice?' so that he would choose for me. It was my first dinner alone after my dad died and it took me ages to get up off the sofa to make it. A broth of garlic, yellow bean, ginger, purple sprouting broccoli and wheat noodles. Salmon glazed with gochujang and maple. Lots and lots of kimchi-fermented spring greens. It was great. It was easy. It was full of things that felt life-giving. I sat quietly and ate and thought about what a different landscape I live in now. I am officially unparented, just as I was finding my legs as a grown up. In a really tiring phase of my life. I will be okay. I have been being gentle with myself the past few weeks because as the only adult in my household there is nowhere else for gentleness to come from. I have been cutting out a lot of things that feel like noise and focusing on what feels meaningful. It's all okay.
