Голубцы с мясом и рисом. 💛💙Украинская кухня Ингредиенты: Основа: белокочанная капуста молодая (1 крупный кочан) 3 кг фарш 1 кг луковица крупная 2 шт. рис 70 грамм яйца 1 шт. соль и перец по вкусу морковь крупная 2 шт. томаты в собственном соку 400 грамм лавровый лист 2 шт. специи по вкусу растительное масло для жарки томатный соус 3-4 ст.л. Способ приготовления: У капусты вырезаем кочерыжку, кладем в кастрюлю и заливаем крутым кипятком. Держим до тех пор, пока верхние листья не начнут легко отделяться от кочана. Если капуста не молодая – кастрюлю ставим на медленный огонь и варим до тех пор, пока листья не начнут отделяться. Рис варим до состояния al dente (чуть недоварен). 1 луковицу мелко рубим, 1 морковь трем на терке среднего размера, обжариваем на растительном масле до золотистого цвета. Кладем в миску к фаршу, добавляем рис, соль и перец. Отделяем от капусты листья, толстую прожилку у основания каждого листа срезаем. Обрезки не выбрасываем. В каждый лист капусты выкладываем фарш и заворачиваем конвертик. Поступаем так со всеми листьями и фаршем. Морковь трем на крупной терке, лук режем полукольцами. Обжариваем в кастрюле на растительном масле в течение 3-4 минут. Кладем в сотейник первый слой из обрезков капусты, слой моркови и лука, голубцы, заливаем томатами (сами помидоры взбить в блендере) при необходимости доливаем чуть воды, что бы покрыть голубцы, снова слой из моркови и лука, накрываем листьями капусты сверху. Добавляем соль по вкусу, кладем лавровый лист и специи, томатный соус, ставим на огонь и тушим до готовности, около 30 минут. Капуста должна стать мягкой.
