🌸🌸🌸🌸🌸 Weeds Are you seeing these in your garden? They always show up when the weather starts to cool, signaling a shift. A lot of people pull these up, but I leave them in as they cover the ground over winter providing flowers for the pollinators and they are edible & medicinal. Pictured here are pink & yellow wood sorrel. The genus name for wood sorrel is oxalis. Oxalis comes from the Greek word 'orxus', which means "sour", and is why this plant is best known for her tangy, lemony flavor. The oxalis species have three heart shaped leaves, and at night and in the rain, the leaves and flowers fold in. Sorrels are high in vitamin C and they also contain oxalic acid like many domesticated vegetables, including spinach and broccoli, which is considered toxic when consumed in large quantities because it inhibits the absorption of calcium. 🌸People with gout, rheumatism, arthritis, hyperacidity and kidney stones should avoid oxalic acid as much as possible🌸 I can't imagine anyone overeating this plant as opposed to all that spinach & broccoli people consume 😄 In moderate dosages, wood sorrel is cooling (refrigerant, febrifuge), diuretic, stomachic (soothing to the stomach, relieves indigestion) and is astringent. In a tea she tastes somewhat like lemonade (might have to try this) and people used to use her to make beer! The plant in the centre is Chickweed and she spreads through out our entire garden bed. Chickweed is rich in nutrients including vitamins C and A, B vitamins, magnesium, iron, calcium, and zinc. This lovely even contains a decent amount of protein and fiber. She can be taken internally as a tea or tincture for gut, digestion, kidney & bladder support. This Lady has mild diuretic properties that can reduce bloating, ease bladder infections and create ease within the elimination systems of the body. Not quite a dandelion. Sonchus oleraceus is a species of flowering plant in the tribe Cichorieae of the family Asteraceae, native to Europe and Western Asia. It has many common names including common sowthistle, sow thistle, smooth sow thistle, annual sow thistle, hare’s colwort, hare’s thistle, milky tassel, milk thistle and soft thistle. Leaves are eaten as salad greens or cooked like spinach. This is one of the species used in Chinese cuisine as kŭcài (苦菜; lit. bitter vegetable).[citation needed] The younger leaves are less bitter and better to eat raw. Mouse-eared Chickweed (Cerastium fontanum). The tiny hairs on the leaves and stem make it mouse-eared and not Common Chickweed. I think this is one of the prettiest edible wild plants, I bought some last year for the garden (everything growing here has to have a use). Then on the same day quite by chance and great coincidence, I actually found a small clump when I was out walking, I had never seen any before, so it was very exciting. But this year I went in search of some more and found an enormous swathe of it (even more exciting). So - this is pink purslane (Claytonia sibirica), and although it can be cooked like spinach I really love its raw earthiness in salads and I’m looking forward to trying it in pesto. This succulent plant likes damp woody places, but isn’t a native plant. It was introduced to the UK in the 1800s for gardens and has since become naturalised. Pink purslane has anti-inflammatory properties and has been used in traditional medicine for centuries. Its leaves and stems are known for their soothing effect on the skin and have been used for cuts and abrasions. The juice was used for eye drops and as an infusion to treat dandruff. Pineapple weed (false camomile) This is one of my favourite weeds. The little yellow fruits actually smell/taste like pineapple. You can make a tea with them- delicious! They’ll bloom a little later in the season.

An often overlooked and ignored plant .... sometimes even called a "weed" Yellow Wood Sorrel Oxalis. The seed pods are so fun because they literally explode when you touch them. You can even eat the leaves of this in a salad - they are tangy like limes! I've added them to my website on the off chance that there are other weirdos out there that want to grow this plant in their yard! I'm sure there are medicinal uses too, but you'd have to do your own research! PS - THEY DON'T USUALLY LOOK LIKE THIS ! Delighting in dandelions. 🌼 I know there are still going to be people wondering, why would I delight in a 'weed' that's so hard to remove? 😍 I'm guessing that in the case you haven't been introduced to them yet. Here's a little sneak peek: All parts of dandelion are worked with. They are nutrient dense powerhouses with compounds that support the kidneys, liver, gallbladder and bowels in a way that relieve digestive issues, skin concerns, balance blood pressure, give you more energy, and support the immune system. 💚🏃‍♀️ They contain a latex that kills and removes warts, and are an incredible early source of food for pollinators. They help mine up nutrients from deep in the soil which helps other plants to thrive. Their roots also break up and aerate compacted soil and reduce erosion. Spear Thistle, also known as "Bull Thistle" or "Common Thistle" You may find this surprising but this prickly plant is edible and medicinal. Spear Thistle's leaves, stems, and roots are edible and can be used in: - Salads - Soups - Stews - Teas - As a coffee substitute When using the petioles, cut and strip all the spines off, before peeling the outer, fibrous layer from the stalk. Use raw as crudités, pickle or ferment them, or chop into salads and serve them with a tandy vinaigrette. Some brief notes on Ground ivy (Glechoma hederacea) which I found a large patch of today… It has had many other names, but Ale-hoof seems to be the most well known. Ground ivy has hoof-shaped leaves and was used to flavour and clarify beer before hops were used. It is an attractive little plant, with the typical square stem of the dead nettle family and lavender-blue flowers. It has a low creeping habit, favouring grasslands, disturbed ground and woodland edges. Try using the aromatic, bitter leaves to flavour soups or stews. The first of many. 🌼🌻🪻🌸🏵️ : Roots get roasted, dehydrated, and ground for tea. 🫖🍵 Leaves get rinsed well and used as any other leafy green. 🥬🥗 Stems are rinsed, soaked, and either pickled or added to pesto. 🧄🧅🌿 Flowers are plucked and turned into jelly or cookies. 🍪 : Have always wanted to make fresh pasta and will try a variation of a nettle/herb pasta, either pure dandelion or a wild herb mix. 🌼🌼Dandelion fritters because we haven't mowed the lawn yet. Simple flower and water batter with a bit of baking soda. The key is you want it very thin like crepe batter. These turned out fantastic. I added some cayenne and black pepper because I thought the flowers themselves would be savory. However, I found them pretty neutral in flavor, I could have just as easily made them sweet. The texture is very similar to very well cooked zuchini. You can also see where they turned the oil yellow. Of weeds and wildflowers Tenacious resilience - through dark cracks and harsh concrete the tendrils creep out to seek the sky a spray of leaves a bedding of moss a riot of blooms. It feels very special to find and pick these because there's not a whole lot of them. They don't just grow everywhere in our region. And your picking window is 2 weeks every April. Fortunately this year I found a few more spots. It was originally introduced for erosion control, but quickly became an invasive species in most of the US. At least it is edible. I dug a beautiful mallow plant (Malva neglecta) from my garden and have been appreciating a mucilaginous tea brewed from its roots to support my digestive tract. Mallow is an old friend—so common, and so useful for calming inflammation. A few years ago I toted a water bottle full of leafy cold brew to a class when I had a dry, irritated throat and it worked wonders, allowing me to get through the long weekend with my voice intact. Whenever I have to weed it, I dry the leaves for future use.   Mallow is a spreading, low weed with roundish, textured, shallow-lobed leaves cut at the base where the long leaf stalks connect.
