Skinny Chicken Broccoli Macaroni & Cheese 🥦🧀 A healthier version of a classic comfort dish, packed with protein and vegetables. WOW, Butternut Squash & Coconut Soup 👌 If you have been following for a while, you will know that I am quite a fussy eater. As much as I love the look of vegetables, I really struggle with the texture. One of the things that initially sold the Thermomix to me was the ability to get silky smooth soups with minimal effort and no washing up. Today I had the pleasure of making lunch for a very good friend, but for health reasons there was a long list of foods that she couldn't eat. She challenged me with butternut squash, and I am ashamed to say I have never tried this before, so I was a bit apprehensive 🤦🏻‍♀️ Well, now this recipe has earned a top spot on my favourites list. Absolutely gorgeous 😍 The ginger makes it taste really fresh, and at just 227 calories per portion is a double win. Here are the ingredients for 6 portions; 110 g onions,quartered (we omitted these) 2 garlic cloves 3 cm fresh root ginger, peeled, cut in round slices (2 mm) 30 g coconut oil 750 g butternut squash, peeled and cubed (approx. 2cm) 400 g coconut milk 100 g water 1 vegetable stock cube (for 0.5 I) 1 pinch ground cayenne pepper 1 tsp fine sea salt, plus extra to taste 1 pinch ground black pepper, plus extra to taste The beauty of cooking with a Thermomix is that it does all the work, so I wasn't slaving in the kitchen tied to the stove. ⭐️⭐️flake overnight oats ⭐️⭐️ Not done a brekkie post for a bit so here we go 😁 todays inspo was a flake double chocolate overnight oats pot 😋 These are soooo good for prepping and having a high protein/low calorie brekkie for on the go. Give this a save and lemme know what you think! Makes 1: Mix 50g oats (I used @proteinworks ) with 150g yoghurt (I used fage), 10g @myprotein chocolate brownie protein powder, some strawberries and a dash of milk - how much depends what consistency you like. For the ganache, melt 10g chocolate spread and mix 20g fage yoghurt. Layer ontop of the oats Then crumble half a chocolate flake and enjoy!! Cauliflower Fritters Ingredients: 5 cups chopped cauliflower florets 2 eggs 1/2 cup all-purpose flour 1/2 tsp baking powder Salt and pepper to taste Vegetable oil for frying Directions: Place the cauliflower into the food processor and process until finely minced. Transfer the cauliflower into a large mixing bowl and add the rest of the ingredients, excluding the vegetable oil. Mix everything well. (You should have a nice, paste-like mixture. If the mixture looks a little too soft and moist – add some more flour.) Using an ice-cream scoop as a measure, form small, ⅓ inch-thick patties. You can make them smaller or larger depending on your personal preference. Fry the patties on medium heat, in a small amount of vegetable oil for about 2 minutes per side. 𝐏𝐞𝐫𝐢-𝐏𝐞𝐫𝐢 𝐂𝐡𝐢𝐜𝐤𝐞𝐧 𝐎𝐫𝐳𝐨 (Serves 4) A one pot recipe meaning its simple and saves on the washing up! A little spicy so half the peri seasoning if needed. 412 kcals per serving. 𝑰𝒏𝒈𝒓𝒆𝒅𝒊𝒆𝒏𝒕𝒔 - 3 chicken breasts diced - 200g Orzo - 2 peppers diced - 8 cherry tomatoes sliced - Peri-Peri seasoning - 500ml chicken stock (1 cube) - 500g passata 𝑴𝒆𝒕𝒉𝒐𝒅 - Season the chicken with 1 TBSP of peri seasoning and fry until cooked. - Add in the peppers & tomatoes and cook for 2-3 mins. - Stir in the passata, stock, Orzo and 1 TSP of peri seasoning. - Place a lid on the pan and cook on low-medium for 15 mins, stirring occasionally. ✨Frittatas for breakfast!✨ What did you have? I absolutely love making these. They are so easy and versatile you can put absolutely anything in them! Preheat oven to 375°. Spray a 12 count muffin pan. 8 eggs 8 oz cooked sausage or 6 strips bacon crumbled 1/2 cup shredded cheese 1/4 cup almond milk 1/4 cup diced pepper any color Salt and pepper Whisk eggs, milk and salt and pepper together. Pour mixture into muffin cups. Add cooked sausage or bacon and diced pepper to muffin cups. Top with shredded cheese. Bake for 20 to 25 minutes in a 375° oven. Chicken Barley Soup 🥣 Now I am fully aware the sun is shining for the first time since 2020 and this isn’t a very “summer recipe”, however, i’ve been so poorly and I just wanted something to sooth my body and soul and this did exactly that. Like a warm, delicious hug in a bowl. Super simple, quick and cheap to prepare and reheats well for meal prep. Low calorie and full of nutrients to heal you from the inside out 😇 You guys went mad for this on my stories so read below for full recipe….. We got four generous portions out of this below and worked out at ONLY 284 calories per portion! RECIPE: 2 tablespoons olive oil 1 large onion (chopped) 2 large carrots (peeled and chopped) 2 sticks celery (chopped) 3/4 Garlic (i’m not guna lie, I add about 6 but you do you boo 😂) 1.5 Litres chicken broth (I used @frejafoods bone broth, highly recommend this in that for extra nutrients! Failing that 3 good quality stock cubes will make 1.5 litres of stock) 2 chicken breasts 100g pearl barley (rinsed) Fresh Thyme (I used cos I had in but think rosemary would be nice aswell or could even omit) 2 bay leaves Heat the olive oil in a large pan over medium-high heat. Add the onion, carrots, celery, garlic and fresh thyme and sauté for 5 minutes, until the vegetables soften. Add the broth, chicken breasts, barley, salt, pepper and bay leaves. Bring to a boil, then reduce heat to medium-low. Cover with a lid and cook for 45 minutes to an hour, or until the barley is tender. Remove the bay leaves from the soup. Remove the chicken breasts and shred. This low fat Crock Pot Shrimp & White Beans is an easy, light, healthy and delicious recipe perfect for or any time of year.
