Forest Bathing with Miriam from The Canddo Project, Anna, Mark and myself. We spent the morning gliding along the path at Cwmtillery Lakes, and soaking in the still, yet vivacious lives that dwell under the forest canopy. We heard ducks quaking, building, birds singing and fleeting, streams running down into their resting place, gushes of water turning into gentle trickles. We saw people, kind hearted and calm, who gave us duck food to bless the ducks. We stopped, breathed, talked, learned, leant on trees and got drenched with rain. It was a fantastic experience. Connecting with nature, and ultimately, connecting even more with my Divine Creator, my Darling Daddy, our GOD.

Chance and providence throw us in strange places. We got posted over here after 5.4 eventful years in Delhi. I can't remember any dull week in all those years. Delhi enticed us with its rich cultural heritage that lies still in its monuments and ruins. Its chowks and bazaars and its forests and birds engulfed us in their magical webs. And when we were not visiting any of those aforementioned places we were getting lost in those art exhibitions nd theatres that are the soul and heart of Delhi's existence. Delhi had literally become our dil ki dhadkan. But nothing lasts forever 🙂 We got posted in Assam. We were mentally prepared for our posting. There is difference however, between being mentally prepared for a situation and BEING in the situation. Life was quiet over here. Our children had left our nest too. There was not much to explore around. I missed my children and my previous home. Dusk fell fast in this part of the world. And it rained frequently. That prevented me from taking my evening walks too. So we changed our routine. We started waking up at the break of dawn and went for walks. The intense greenery around was a balm for my soul. It healed my being. I started to discover a deep connection with the living world.. My garden flourished in this wonderful weather. The local farmers market was a joy to behold. The local nurseries had an exquisite collection of rare plants at throwaway prices! I befriended some local tribal women at the market. Simple, hard working, honest souls. My home slowly has started to become a recluse for birds and animals too. A pair of mynahs is nesting in our washroom. My kitty brings his feline friends along for treats. I cook simple, wholesome meals for myself and my husband every day. The variety nd quality of local veggies and fruits available over here are unbelievable . My terrace is overflowing with plants. I compost. I read. I listen to music every morning. And of course there is Netflix ☺ Feeling connected with the living world around has made a huge difference for me. Endless to do lists are unproductive. It's silly the level of expectation we have of ourselves at this moment in history. Why so much pressure? We are not machines. Even robots need to recharge. This comes from a variety of reasons and it may be worth asking yourself why you feel so driven to do so much in the first place. This is not a prompt to make you add a bunch of things to your self improvement list, just a nudge to look at what you are scared of or insecure about if you don't do certain things. I think only in the uk can we have two days so drastically different from one another. Sunday we were basking in blue skies and warm sunshine after the same all week and yesterday we had winds and rain all day and the lights needed to be on inside it was so dark. But thanks to those days of sunshine the garden has started to take on a life of her own again and every year the borders take on a different persona. The first couple of photos I have shared today are what we call our upper decking room because it’s not at the top or in the middle. It’s the last spot in the garden to have the sun before it departs. This is the enveloping feel with my plants that I wanted to recreate with our lower decking room. Right now the ox eye daisies, red campion and my Mrs Bradshaw red Geums are hugging this area and helping to create a wild softness. Tucked inside also is another of my favourite geum’s the soft peachy tones of Mai Tai. This is such a pretty flower with its frilly edged petticoat petals. My Granny bonnets otherwise known as Aquilegia are also putting on a beautiful show around the garden. I grew a few of these from seed they are so easy to grow and are great self seeders themselves. Well iv had a rough night with the makings of a sore throat on Saturday morning. Yesterday it was that dry as I was coughing it was making me urge each time and bring up bile. But it’s not a dryness which is eased by a drink it’s very strange. So coughed pretty much all night. My little granddaughter was diagnosed with croup last Thursday and I had her the day before so it maybe to do with that. She’s absolutely fine now thank goodness. Well it’s a windy and grey old day here again and I’m thinking a gentle day is needed. Homemade mozzarella 🖤 Ingredients 8 cups whole milk 7 tbsp white vinegar (or lemon juice) 1/3 cup salt Instructions In a large saucepan, over medium heat, bring the milk to 115°F. Once the milk has reached the desired temperature, turn the heat off and add the acid of your choice. Stir gently for 2-3 minutes until the curds have fully separated from the whey. You'll be able to see the golden whey and the curds very distinctly. If the whey is still white, add more acid 1 tbsp at a time and continue stirring until it's golden. With a slotted spoon, lift out the curds from the milk and place them in a medium-sized bowl. Once you have the curds removed, you want to start pressing out the whey. You can do this with your hands, or the back of a spoon, but apply pressure in some way to remove the whey. Add the salt to the pot of whey and heat to 170°F. Once you have removed the whey and the cheese is pressed into a nice ball, lower the ball into a pot of hot whey for about 2-3 minutes to reheat it for stretching. Using a spoon or two, stretch the hot cheese until it's cool enough to manage with your hands. Stretch only until smooth, you don't want to overstretch or the cheese will be too hard. Heat the cheese one last time and form into a smooth ball. Use this homemade mozzarella right away. You can also wrap the finished cheese in cling wrap, or place in an air-tight container, and chill if desired. Store any leftovers for 1-2 weeks in the fridge. WAFFLES- • 1 cup canned pumpkin • 3/4 cup maple syrup • 1/3 cup neutral oil (I like avocado) • 2 large eggs, room temperature • 1/4 cup of milk/buttermilk • 2 teaspoons vanilla • 1.5 cups all-purpose flour • 1 teaspoon cinnamon • 3/4 teaspoon salt • 1/2 teaspoon of baking powder baking soda • 1 1/2 teaspoon of pumpkin pie spice (cinnamon, ginger, cloves, nutmeg) • Butter for topping APPLE CIDER SURUP- • 1/2 cup of maple syrup • 1/2 cup of apple cider For the waffles: 1. Preheat your cast iron waffle iron. 2. In a large mixing bowl, whisk all the wet ingredients together. 3. In a separate bowl, combine all the dry ingredients. 4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. 5. Grease the preheated cast iron waffle iron with butter or avocado oil spray. 6. Pour the waffle batter onto the center of the waffle iron. 7. Close the waffle iron and cook until the waffles are golden brown and cooked through. 8. Remove the waffles from the waffle iron and repeat with the remaining batter. For the apple cider syrup: 1. In a small saucepan, combine the maple syrup and apple cider. 2. Bring the mixture to a simmer over medium heat. 3. Reduce the heat to low and let the syrup simmer for about 10 minutes, or until it has thickened slightly. 4. Remove the syrup from the heat and let it cool slightly for a few minutes before serving with waffles.
