Just whipped up a pot of this Lemon Chicken Orzo Soup! 🍋🍗 Perfect for a cozy night in. Ingredients: 1 tablespoon olive oil 1 cup diced onion 2 cloves garlic, minced 2 medium carrots, peeled and diced 2 celery stalks, diced 8 cups chicken broth 1 teaspoon dried oregano 1/2 teaspoon dried thyme 1 cup orzo pasta 2 cups cooked chicken breast, shredded 1/4 cup fresh lemon juice Salt and pepper to taste 2 cups fresh spinach 1/4 cup fresh parsley, chopped Directions: Heat the olive oil in a large pot over medium heat. Cơm Nhà #13 🌱 Lâu lâu mới lại up cơm nhà ☺️ Dạo này bị đủ thể loại thần bánh ngọt, thần bánh mì,.. nên cứ phải để các em lên sóng trước 😆 🌱 Hôm nay có: Thịt heo nướng - Đậu non kho tương - Canh spinat (rau chân vịt) nấu tôm - Bí ngòi nhúng trứng áp chảo. Thịt heo mình ướp kiểu truyền thống: 5 lạng thịt nạc vai ướp với 1 thìa hạt nêm, 1 thìa đường, 1 thìa mật ong, 1 thìa nước mắm, 1 thìa dầu hào, 1 chút xả cho thơm, vài tép tỏi băm nhỏ và 1/2 muỗng cafe tiêu xay. Tất cả trộn đều rồi để khoảng 2 tiếng đồng hồ cho thịt thấm gia vị. Rồi tuỳ từng độ to, dày của thịt mà căn chỉnh nhiệt độ và thời gian nướng nhé. 5 lạng mình chia thành 2 miếng to, dài và dày nên nướng mất 35 phút 180 độ C. Đậu non áp chảo. Không lật mặt đậu nhé. Để nguyên rồi cho thêm chút nước, nước tương(mình dùng kikkoman), chút đường. Morning - spinach, ruby chard and broad bean tops from the new raised beds - the chickens have taken over the old veg patch for now! This colander load got made into a soup - sautéed a chopped onion, a little bit of lovage and a leek in a little butter and olive oil. Added vegetable stock a chopped potato, chard and broad bean tops, simmered until the potato was tender. The spinach was then added and allowed to just wilt. Then the whole lot got liquidised - poured back into the pan and reheated gently with a dollop of crème fraiche, a good grating of nutmeg and seasoned with S and P 🌱🌱🌱🌱🌱

Spring leek & spinach soup w/ homemade garlic croutons! 🌱💕 This recipe was inspired by an old leek sitting at the bottom of my fridge 😂 I turned it into this beautiful soup using whatever ingredients I had at home! Also shoutout to my @vitamix blender because it makes any soup so smooth and velvety! 😍 Ingredients: 1 tbsp. avocado oil 1 cup of chopped leeks 1 can of cannellini beans 1 handful of spinach 1 stalk of celery 2 cloves garlic, sliced 1 tbsp. chives, chopped 4-6 cups homemade veggie broth Salt & pepper to taste Heat a pot over medium heat. Add oil, leeks, garlic and celery. Cook, stirring frequently, until veggies are soft. Add cannellini beans, chives, spinach and broth. Bring to a boil and simmer for 10 to 12 min. Remove from heat and transfer to a blender. Blend until smooth. Pour soup back through a strainer and into the pot. Keep warm on stove until ready to serve! Crispy croutons: cut sourdough bread into small cubes, season with garlic powder, paprika, parmesan cheese and salt. Bake for 15 minutes or until crunchy! 🍞

Have spinach soup, will travel! As I get back out into the world again, there are going to be ups and downs and plenty of fears. Re-entering the world after 5 years recovering from chronic illness certainly is not easy emotionally. You notice how the world isn’t really geared up for wellness, at least not in a major way, but there are signs of that changing. Until then, my trusty @medicalmedium raw spinach soup can somewhat easily be transported. This may be around my 1200th MM raw spinach soup as I’ve been eating it nearly daily for 4 years. It takes a long time to heal the body. You don’t feel it’s going until it’s pretty well gone because of how the nerves that die/are dead don’t allow us to feel. On the way back to health you get to feel all that went wrong, healing is feeling! I can’t encourage you enough to start making small steps towards supporting the body the way it truly needs. It just tastes so sweet yet salty savory just incredibly yummy! It’s amazing how our taste completely changes as we come off of all those addictive food additives that mess with our brain and perception of taste. Raw food is actually incredibly delicious when you taste it free of that chemical addiction and it makes it super fun to eat. We seem to be conditioned and desensitized to natural sense experiences and how nourishing they are. Like smells we are conditioned to use those awful fragrances when nature has such a beautiful smell like the salty ocean air or wild flowers and wild herbs. Food has such a yummy taste yet it’s hard to taste the full experience of a natural food when our taste buds are craving the poison flavors.
