It’s been awhile since I’ve posted anything food related. I found this recipe on Pinterest. I took two low-carb tortillas and put them in the dish, scrambled three eggs and 2 tablespoons of @good_culture cottage cheese. I diced up some cherry tomatoes and some spinach added some seasonings and then topped with mozzarella cheese. Baked at 350° for about 30 minutes. To stay disciplined on this journey, you have to take a stand for something, and that something is YOU. The person committed to their long-term health recognizes that relying on willpower or motivation is not feasible and does not lead to the achievement of their goals. This is because willpower and motivation are not sustainable. Discipline is needed over willpower; discipline is all about scheduling and planning. For us on the bariatric journey, this means meal planning. It means moving our body consistently. It means getting in our water. It means going after what we truly desire in life. It means making ourselves the priority. It means staying curious, humble, and finding ways to stay excited about this journey.
