After a bit of a hiatus, I’m back, and going right to the grill. I picked up some Chilean Sea Bass, seasoned it with a Harissa Spice Mix, and Cedar Planked it for some sweet smokiness. I topped it with a relish of Red Onion, Fresh Corn, and Red Bell Pepper with a Lemon-Ginger Balsamic Vinegar. But the real difference maker here was a sauce called Buerre Monte which is just an emulsion of simmered water with butter slowly incorporated through rapid whisking. I know it doesn’t sound like much, but it’s butter like you’ve never experienced before, and doesn’t break or melt when it’s poured over hot food. Try it some time. Also on the plate is Sautéed Chard and a garnish of Chopped Pistachios. This doesn’t look like anything special but it was so tasty! 😋 My sister used to make this when I was younger with regular pasta so I keto-fied it! I used @explorecuisine edamame and mung bean fettuccine noodles (the best noodle replacement I’ve found on keto yet) with crumbled sausage, olive oil and butter, blackened roasted broccoli, garlic, freshly shredded mozzarella cheese, and seasons.

These are Keto Chicken Nuggets... (I flipped them half way through and they squished a bit 🤷🏻‍♀️) Shred a can of chicken with an egg, 1/3 cup of your favorite Shredded Cheese, & seasonings of choice. “I have a hard time believing I can eat this and still lose weight” 👆🏼 my client said this to me on our call and I totally understood where this was stemming from. For SO LONG we’ve been told we need to cut things out of our diet and restrict ourselves from the foods we love in order to lose weight. “Carbs are bad” “Only buy low-fat” “Sugar makes you gain weight” But in all seriousness - your diet could consist of strictly chips and soda and you’ll lose weight. As long as you’re burning more calories than you’re eating. Obviously I don’t recommend this, but there’s nothing wrong with having your cake and eating it too (in moderation). Breaking down beliefs like this and leading women into a truly SUSTAINABLE lifestyle is why I do what I do. Tonights dinner was a "throw it in the pan" meal of meatballs in a creamy sauce. I cooked the meatballs in the oven first for about 15 minutes and whilst they were cooking I fried off some chopped onion, peppers, mushrooms and garlic until softened, then added some chopped tinned tomatoes, cream and grated cheese, I then mixed the meatballs into it and simmered them together for about 15 minutes more. I was off the wagon during vacation, but I'm crawling back on! Who doesn't love copycat cheddar bay biscuits? Recipe is from @carbquik ! Ingredients: 2 cups Carbquik 2 ounces butter, cold 1/2 cup shredded cheddar cheese 1 pinch garlic powder 1 pinch salt 1/4 cup heavy cream 1/4 cup water Cheddar Cheese Biscuits Instructions: -Preheat oven to 450 degrees -Cut the cold butter into the Carbquik with either a pastry cutter or two knives, till the mixture resembles coarse meal. -Add the shredded cheese, a pinch of salt, and garlic powder and blend well. -Mix the heavy cream with water to equal 1/2 cup of liquid, pour into dry mix. -Mix till dough forms and comes together, but do not overwork the dough. -Drop the dough onto a lightly greased cookie sheet approx 1 ounce size portions. -Bake in hot oven 8-10 minutes till biscuits are golden brown. #lowcarbsnacks #lowcarbcheddarbiscuits #keto #lowcarbrecipes

Add the beef slices and cook until browned on both sides, about 4-5 minutes. Remove the beef from the skillet and set aside. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3 minutes. Add the sliced mushrooms to the skillet and cook until they release their juices and begin to brown, about 5 minutes.
