Melt the butter in a large high-walled skillet over medium-low heat. Add the garlic and cook for 2 minutes, stirring continuously. Add the flour and cook for 2 more minutes. Caprese dip 🍅 I had leftover tomatoes and bocconcini from making Tuesday’s salami skewers which inspired this high protein, low calorie dip that has all the great flavours of a caprese salad. It’s quickly become a favourite for meal prep, potlucks, and just general snacking! 1 cup @good_culture blended low fat cottage cheese 1-2 garlic cloves, minced 1/2 tsp @diamondcrystalsalt kosher salt 1/4 tsp pepper 1 tsp balsamic vinegar 12 cherry tomatoes 10-15 @saputo_inc bocconcini balls Fresh basil To make the blended cottage cheese add a container of cottage cheese to a high powdered blender (I used a @vitamix) or food processor. Blend until completely smooth. Spoon the now blended cottage cheese back into the container and refrigerate till ready to use. When ready to serve your dip whisk together the cottage cheese, garlic, salt, pepper, and vinegar. Next chop up the tomatoes and cheese into 1/4” pieces. Lastly, dice the basil and add that along with tomatoes and bocconcini to the cottage cheese mixture. Gently fold everything together till fully incorporated. Serve with your favourite chips, crackers, or veggies.
