The other day I baked Elderflower cake for a class on using petals in the kitchen. When the cupcakes were baked and still hot, they had holes poked in them and 1 Tbsp of an elderflower cordial and lemon juice mixture was poured on top of each cupcake. You have probably seen a lemon pound cake recipe where the liquid was fresh lemon juice and sugar. It got me thinking about the herbal simple syrup above. Over a plain or lemon cake; as a loaf, a double layer or cupcakes, this mixture will bring a real taste of spring/summer if the herbs are growing in your garden (or a friend's?). L I T H A T A P E R E D C A N D L E S I was so inspired by my celebration of Beltane yesterday, that I am already looking towards the next sabbat - Litha. This usually falls on June 21st. In anticipation, I am making myself some tapered candles! I spent this morning gathering flowers to press, for decorative purposes. My candles are currently setting and I can't wait to decorate them! Summer Solstice Blessings to all my friends in the Southern Hemisphere! A day of equilibrium, equal day and night, and it is time to celebrate summer! From tomorrow, the daylight hours will grow shorter as we start the slow descent into winter. It is the first day of my holidays, the weather is perfect, and what better way to honour this special day than to visit two of my favourite gardens - Alowyn Gardens in the Yarra Valley and Cloude Hill in Olinda. These gardens are world-class and are looking magnificent right now. The feng shui of these gardens is exceptional, and the Sheng Qi they generate is what I needed to ground I needed after a hectic year! Walking through the labyrinth @alowyngardens was calming and restorative. And, of course, I treated myself to some "Christmas presents" -plants! I'm looking forward to planting them in my garden over Christmas. LITHA celebrations~ To celebrate the festival of Litha (summer solstice) we decided on a project for ourself as much as for the kids ( though they thoroughly enjoyed it too). We decided to make a tree out of foraged sticks with a firewood base decorated with seasonal flowers from our yard, and a couple of aussie felt christmas decorations, that will also double as our christmas tree =). Projects like this encourage us to get out in the garden and be a bit more in touch with the seasons and the turning of the earth, which is especially great for the little ones. We followed this project up with a seasonal Litha feast of herbed chicken thighs, vegetable filled pasta salad and corn on the cob- delicious! Yes the tree is on our fireplace- its already fenced off from grabby toddler hands and its not as if we will be using the fireplace in the australian summer! #summersolstice #lithablessings #lithafeast #australianchristmas #festivaltree
