For myself, this is the recipe of the spring/ summer. I’ve never been a big pasta salad person but this turned me. I saw the recipe on Facebook and made some baby changes to make it my own. The recipe is as follows: make pasta (however much you want, we made roughly 5-6 servings) and set aside. I tossed it with some olive oil, salt, and pepper first and then set it in the fridge. Chop up (I used a food processor on the chop setting to speed it up) half a red onion, 2 jalapeños, 1/4-1/2 bunch of cilantro, garlic, Cotija cheese and toss with the pasta once you’re ready to serve. The seasonings we used to toss with the pasta were salt, black pepper, garlic powder, onion powder, paprika, cayenne, and chili powder. We also sautéed some corn (1 can) with butter and elote seasoning and tossed that with the pasta too. For the sauce, we mixed Greek yogurt with lime juice and siracha. Finally we also grilled up 3 chicken breasts and cut up and tossed with the pasta. This was so good, it’s perfect for a bbq or just regular dinner or lunch Rate: 10/10

This Creamy Cucumber Salad is a hit at every summer picnic! So easy to make and incredibly delicious. 😍🥒 Ingredients: 4 large cucumbers, thinly sliced 1 small red onion, thinly sliced 1 cup sour cream 1/4 cup mayonnaise 2 tablespoons white vinegar 1 tablespoon fresh dill, chopped 1 tablespoon fresh parsley, chopped 1 teaspoon granulated sugar Salt and pepper to taste Directions: In a large bowl, combine the sour cream, mayonnaise, white vinegar, dill, parsley, sugar, salt, and pepper. Mexican Street Corn Coleslaw Ingredients: For the Coleslaw: - 4 cups shredded cabbage (green or purple) - 1 cup sweet corn kernels (fresh or thawed if frozen) - 1/2 cup red bell pepper, diced - 1/4 cup red onion, finely chopped - 1/4 cup fresh cilantro, chopped For the Dressing: - 1/4 cup mayonnaise - 1/4 cup sour cream - 2 tablespoons lime juice - 1 teaspoon chili powder - 1/2 teaspoon cumin - 1/4 teaspoon paprika - Salt and black pepper to taste For Garnish: - Crumbled cotija cheese - Additional chopped cilantro - Lime wedges Directions: 1.
