Tonight’s Golden Beet Soup. I’ve spoken of my love for golden beets a few times before. I forgo the red ones because to me they taste like dirt. The golden ones, though. Ahhhhhhhh. They are sweet + surprisingly do not taste like dirt. Here, I washed two large golden beets, trimmed the tops and bottoms, then diced them (yes, I kept the skin on) and placed them on a rimmed baking sheet covered with parchment paper (see my Stories for visuals). I roasted the beets at 400 degrees F for 35 minutes or until they were very tender. I tossed the roasted beets into a high-speed blender with 3 cups of water + a few large pinches of sea salt for a simple (very soothing) soup. I served this soup warm with a bit of Aleppo pepper sprinkled on top for a little pop of heat. p.s. I didn’t peel the skin, even after roasting. No need to. It all blends together nicely in the soup we’re making. . . . .

Cut the peeled beets into small cubes and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly. Roast the beets in the preheated oven for 25-30 minutes, or until tender when pierced with a fork. Remove from the oven and let cool slightly. Beet salad with whipped feta cream and honey nuts Could eat this dish every day! Roast beets for min 40min in 400F preheated oven or pressure cook in Instant Pot for about 20min, quick release. Peel and cut in small pieces. For the feta cream I used 200g Greek sheep feta and 1/4 cup milk. Add salt, pepper, cayenne to taste and blend well. Cut pecan or walnuts in small pieces and stir into melted honey in a hot pan. Looks a mess but tastes soooo good 😊 Feeling the lentil-love with this flavourful and dramatic coloured salad of green lentils, roasted beets and red peppers, caramelised balsamic shallots, tahini yogurt and chimichurri topped with dill. I used precooked beetroots and lentils to save a bit of time. Rinse 2 packets of vacuum-packed cooked beetroots, cut into quarters and then lightly toss in 2 tbsp of olive oil, salt and pepper. Slice a red pepper into 2cm thick slices and also toss in oil and salt and pepper. Roast both in a 180C/350F oven for 30 mins until they start to crispen on the edges. Skin and slice 4-6 shallots thinly and cook in a frying pan in a knob of butter and 2 tbsp of olive oil on a low heat until softened. Add a tbsp of honey and a tbsp of balsamic vinegar until caramelised and sticky. Taste and add more honey and vinegar according to your taste preference. Put to one side. Toss the lentils (I used a pack of Merchant Gormet puy and green lentils) in olive oil, a few sprigs of chopped dill, salt and pepper and set aside. For the tahini yogurt, mix 1 crushed garlic clove with 2 tbsp tahini, 200g of natural yogurt and the juice of ½ lemon with salt and pepper. For chimichurri, combine the following in a hand-blender; 3 tbsp olive oil, 1 tbsp red wine vinegar, 1 tbsp capers, a handful of flat leaf parsley, 1 tbsp of lemon juice, a drop of runny honey and ground black pepper.
