Garlic Butter Steak and Scallops Ingredients: 2 beef tenderloin fillets, 1 1/2 inches thick (about 6 to 8 ounces each) Kosher salt and freshly ground black pepper, to taste 3 tablespoons unsalted butter, divided 8-10 large sea scallops 3 cloves garlic, minced 6 tablespoons unsalted butter, cubed (for the sauce) 2 tablespoons chopped fresh parsley 2 tablespoons chopped fresh chives 1 tablespoon freshly squeezed lemon juice 2 teaspoons lemon zest Directions: Heat a 12-inch cast iron skillet over medium high heat for 8-10 minutes. Pat steaks dry with paper towels; season both sides with salt and pepper, to taste. Melt 2 tablespoons of butter in the skillet. Place the steaks in the skillet and cook until a dark crust has formed, about 4-6 minutes per side, depending on desired doneness. Set steaks aside, loosely covered with foil. Wipe the skillet clean, melt the remaining 1 tablespoon of butter, and prepare the scallops. Remove the small side muscle from the scallops, rinse and pat dry. Season with salt and pepper. Cook scallops in the skillet in a single layer, flipping once, until golden brown and translucent in the center, about 2-3 minutes per side. Remove and keep warm. For the garlic butter sauce, reduce heat to low. Add minced garlic to the skillet and stir until fragrant, about 1 minute. Add cubed butter, parsley, chives, lemon juice, and lemon zest; season with salt and pepper. Stir until the butter is melted and ingredients are well combined. Serve the steak and scallops immediately with the garlic butter sauce drizzled over.
