Dhondt-Grellet Les Terres Fines Blanc des Blancs If you are a champagne fan and aren’t already drinking Dhondt-Grellet, then you need to change that right away! To say that there’s been a revolution in Champagne almost feels like words that have been said many times over. Instead, what I will say is that the talent that exists there right now keeps me on my toes and my mouth thirsting for more! Adrien Dhondt is one of those talents. Since taking over the reigns for his family’s winery, he’s quickly taken them right to the top and he sure as hell isn’t stopping any time soon. He uses organic and biodynamic practices, but he doesn’t seek out certifications as it’s really about living the life and doing the doing. And that shines through in his wines like this one. This is from a blend of parcels around the villages of Cuis and Chouilly that is then aged in stainless steel with 70% coming from a designated vintage (that I forgot to note) and the rest coming from a solera going back to 1986. What we get is a wine with tension and expression that still has a lovely roundness that quickly quieted the entire table (and all of us can certainly talk away!). We took a “European Classics” cheese class on a Thursday night from 6:30-8. We opted to pay a little extra to add the wine flight to our cheese tasting. The owner of the shop runs the class and goes through each cheese and gives fun facts while you taste the cheese and wine. We experienced many wonderful experiences & flavors on our way around Sicily, but one I will cherish was our tasting at Palmento Caselle, I Vigneri’s estate & vineyards. We had the privilege of a vineyard tour with Salvo Foti. . His impact on Etna winemaking is difficult to characterize in a few sentences. He began his career as a viticultural advisor to estates that are today the best in the region. About 25 years ago, he created his own project, I Vigneri. That name was associated with an association founded on Etna in 1435, now disbanded. The name is now Salvo’s & his sons’. . Salvo generously shared his vineyard insights - & his love for this place shone. He said this terroir is best for Carricante, the great Etna white (& its original home). His farms at 800 meters elevation, almost midway between Etna & the ocean. Perfectly placed. . His facility, a renovated palmento (winery) built in 1840 has modern touches, but relies, as he says, on gravity, human strength & ingenuity. He farms organically; his wines are pure & transparent. . We enjoyed a tasting of his portfolio, presented by his son Simone. A beautiful, diverse lineup. Among the Carricantes, Nerello Mascaleses, a Grenache & a field blend Rosato, these stood out for me: 2022 Vigna di Milo Etna Bianco Superiore, citrus, herbaceous, floral, bright & shiny; 100% Carricante 2020 Palmento Caselle Etna Bianco Superiore, from a very small plot of ungrafted Carricante vines, honeyed apricot, almonds, spice, floral, lemon peel. Rich & textural. 2022 Vinupetra Etna Rosso (wine from the field of rocks), Nerello Mascalese, rocky black cherry, plum, tobacco, old vines, finessed & powerful 2016 Vinupetra ‘Viti Centenarie’, made from exclusively 100-year-old Nerello vines. So complex, plum, cherry, mushroom, earth, spices, leather, dry leaves. Ever evolving in the glass. . The time danced by, we left thinking about when we could return to Milo.
