ﾌﾌﾌ、実は私は干しそばと同じぐらい豆腐が好きで好きで‥、陰で隠れてよく色々と食べております。そんな性分からか、絹豆腐やら堅豆腐、寄せ豆腐、一時期有名になった男前豆腐なども一式いただきました。今でも新しそうなのを見つけてはずいぶん食べているのですが、やはり私は木綿豆腐が一番！そして様々な木綿豆腐の中でも、相模屋食料株式会社の、さらにco-opでしか手に入らないこの300gのものが一番の好みです！ 相模屋食料さんはこれに似た商品、いわゆる普通の木綿豆腐もいくつか出していますが、なぜかこのco-op販売品が旨いのです！ なんというか「まめまめ」しております！ひょっとして製造工程の最後にオカラでもブチこんでいるのではないかといった大豆の旨みと舌ざわり！マジぱねっす！＜古い そんな大好きな木綿豆腐には、やはり大好きなキッコーマン生しょうゆだけをかけて丁寧にいただくのです。 もちろんネギやら鰹節やらショウガやら加えても美味しいでしょう、しかし私は「素」のままがイイ！ 実のところ、醤油さえかけず、手に持ってムシャムシャ食べている時もあるほどに豆腐本来の旨さが好きなのです！ でもそうして食べると、なんというかあまりにも勿体ない食べ方をしているようで、食べた後に後悔の念が激しく、、最近では醤油をきちんとかけていただくことにしております。 そして最後に残ったキッコーマン生しょうゆと木綿豆腐から染み出た「汁（水？）」、 これも私は啜ります(￣▽￣)ﾆﾔﾘ まぁ前出の通り、キッコーマン醤油は好物なので、ついついやっちゃうのですが、塩分を気にされる方にはお勧めしません。 まぁでもＷＨＯが言ってる塩分摂取量なんて、あれは世界平均のもので、もっというと白人社会のデータに依存しているので基本的には日本人には関係ないと私は考えておりますし、塩分＝高血圧という話も、どうも最近の研究結果では、あまりアテにならなさそうだと聞きました。 まーそもそも私は低血圧症なので、塩分とって血圧が上がったほうが色々よさそうでもございます。 それはておき、子供の頃から大好きだった豆腐ですが、昨今では昔以上に、日に一丁は最低でもいただくようになりました。 食糧危機で肉が食えない？海洋汚染で魚が獲れない？みんな豆腐を食べようよ、豆腐は大豆そのもので、畑のお肉、最終兵器野菜とも呼ばれています。日本人たるもの、これを喰わずにどうするというのでしょう！ あぁでもたまには「から好し」や「中津屋」の唐揚げは食べたいな (´・∀・｀) #もめん豆腐 #木綿とうふ #木綿豆腐 #相模屋食料株式会社 #相模屋食料 #一日一丁 #キッコーマン #生しょうゆ #Tofu #firmtofu #soy #japanesefood #japanfood

Today’s late lunch of crispy, custardy salt and pepper tofu cubes with leftover ginger-scallion-serrano sauce, brown rice, snap peas and sliced radish. This warm, springy weather has me craving light lunches and every bright shade of flavor that exists in the vast, colorful spectrum of Asian cuisine. Even better than the one I get from the restaurant! The package says to use canned lentils but definitely use homemade lentils instead of canned. I made my own lentils with the #epicurevegetablebroth, and it was amazing! For the #CoconutCurry I used a package of the #ThaiCoconutSoup, and did these modifications to make a #curry instead of soup... then served it over #brownrice. Ingredients for curry: • 1 pkg #EpicureThaiCoconutSoup • 2 cans #lowfat #coconutmilk • 1½ blocks #firmtofu, cubed • about 6-7 cups mixed #vegetables • Soy sauce & lime juice, to taste. Directions: 1. Firm tofu bowl. Been awhile since I have done a tofu post. Personally, for me, I like either the firm or soft (silken) tofu. Interesting fact, the nutritional differences between firm and silken are pretty big. Silken contains only about half the calories and fat, while firm tofu contains over twice the protein. Meatless Monday featuring this Black pepper Tofu Stir Fry. Tofu & I have a very long history since childhood, & now I’m more in love with tofu than before. I used firm tofu for this recipe as they’re more robust & don’t break during my over stirring & frying process. I first heat some vegetable oil & seasoned with salt & crushed black pepper, then tossed in the cubed tofu chunks (coated in corn flour) to get that black pepper flavour throughout the chunks. For the sauce, I first mixed some soy sauce, Chinese cooking wine, black pepper, crispy chilli & palm sugar together, then sautéed the onions, dried chillies, garlic & ginger before adding the veggies. Then I stir in the sauce mixture & cook until the sauce slightly thickened & finally toss the fried tofu back into the wok. Udon Noodles with Fried Tofu and Orange Nam Jim from #flavour by @ottolenghi. The starting point for this dish was the blood oranges. I absolutely love them, their season is short, and I had two to use. The sauce is a wonderful taste combination of sweet, sour, spicy and salty: oranges; chilli flakes; tamarind paste; fish sauce; maple syrup; soy sauce, onion and fresh coriander. The recipe recommends straight-to-wok noodles, and these are warmed in the sauce. The firm tofu is marinaded in garlic, soy sauce, maple syrup and sunflower oil, before stir-frying until crisp and golden-brown. I had a yellow pepper and two portabello mushrooms, so they went in as well. Tofu and haricots verts with chraimeh sauce From @ottolenghi SIMPLE To make the chraimeh sauce, fry garlic, hot paprika, caraway seeds, cumin, cinnamon. Add tomato paste, sugar, lime, and water. Cook sauce until thickened. Cook blanched haricot verts in the sauce for a min, then stir in fried tofu and cilantro. The sauce was actually suprisingly way better than I thought it was going to be. Really nicely tomatoey and spiced, and works really well with this dish. I got haricot verts from Costco, but normal green beans would work as well. But whatever you use, the sauce really is the star of the show. A piquant sauce indeed.

The BEST Tofu Lettuce Wraps 🥬 1 TB olive oil 1 block extra firm Tofu (pressed, frozen and pressed again) 2-3 can of water chestnuts (diced) 1 cup carrots (grated) 1/4 cup cilantro (chopped) 1/4 cup green onions (chopped) Garnish with optional chopped peanuts and more sauce Sauce 6 TB coconut aminos (or soy sauce) 6 TB hoisin sauce 2 TB sesame oil 2 TB rice wine vinegar 2 TB peanut butter (I use sugar free) 2 TB agave or honey 6 cloves of garlic minced (or 1 tsp powder) 1 tsp ginger minced (or 1/4 tsp ginger powder) Heat oil in skillet and crumble up pressed tofu and water chestnuts to brown in oil. While browning add carrots and cook until tender. Slowly add sauce as needed and when fully cooked, turn off heat and stir in cilantro and green onions. Serve in lettuce and drizzle with more sauce and garnish with chopped nuts.
