SUFLÊ DE ESPINAFRE: 🍃 Ingredientes: 1 maço de espinafre (lavado e picado, folhas e talos) 4 ovos (gemas e claras separadas, e as claras batidas em ponto de neve) 3 colheres de sopa (cheia) de farinha de aveia ( no meu blog está com farinha de trigo) 2 colheres de sopa ( cheia ) de manteiga ghee 1/2 cebola roxa cortada bem picadinha 1 colher de chá de cúrcuma Mix de pimentas Sal rosa do Himalaia a gosto 1 xícara de chá de leite vegetal ( usei de amêndoas sem açúcar) quente 4 colheres de sopa de queijo grana padano unte uma forma pequena com manteiga ghee e farinha de aveia! Modo de preparo : Pegue o espinafre picado, coloque em uma panela e leve ao fogo para dar uma murchadinha, reduzir ele (libera a água dele mesmo). Retire do fogo e reserve, Na mesma panela, coloque a manteiga,ghee derreta em fogo baixo. Assim que derreter, imediatamente coloque a cebola roxa doure, acrescente a farinha de aveia e mexa sem parar até dar uma douradinha( com um fuê) Em seguida , despeje aos poucos o leite quente, continue mexendo e misturando, tomando cuidado para não empelotar (caso aconteça, uma boa dica é mexer rapidamente com um fuê, ele ajuda bem). Deixe engrossar um pouco (esse processo é o mesmo do molho bechamel) até virar um creme. Coloque a cúrcuma, mix de pimentas e sal ! Desligue o fogo, acrescente as gemas e mexa bem. Coloque o queijo, o espinafre e mexa mais um instante, misturando tudo. Enquanto esfria um pouco, leve as claras para bater, e ficar bem firmes. ponto de neve. Esfriando um pouco a mistura, acrescente aos poucos as claras batidas, de baixo para cima, bem delicadamente. Despeje numa assadeira pequena untada e leve ao forno pré aquecido a 180°, por aproximadamente 30 a 40 minutinhos, pois varia de forno e travessa. Dá uma olhadinha, estando dourado está no ponto.
