Meat Free Monday: The Chelsea edition 🌺 A bucket list item checked off by going to Chelsea Flower Show last week. A beautiful (albeit slightly exhausting 🤣) day! For lunch, we headed to The Plant Cafe stand. Mum tucked into the falafel pita and I had the garden salad topped with halloumi. Both dishes were super tasty, fresh and nutritious, but at £30 for two small foot truck items, it’s clear you pay a HUGE premium! Whilst wandering around, we also had coffee and banana cake from @colicci_uk which was delicious, and much needed fuel to battle the crowds 🥊 ——— Did you watch any of the Flower Show on TV? My favourite garden was the @wateraid one — I loved the different levels and the structures really reminded me of Gardens by the Bay 🌳💦

Roasted Vegetable Healthy Lunch Bowls This was such a yummy lunch time meal that I feel like I need to share. Even my hubs loved it and he’s the person that needs to have meat with every meal. Don’t get me wrong. I am an omnivore but I will squeeze in as much veggies as possible to my meal or eat an entirely plant based meal. There’s nutrients in veggies that we need (as well as our microbiome) that we can’t get from just eating animal protein. Plus, it’s nice to change it up every once in a while. This is a roasted vegetable lunch bowl. Your source of protein is from the chickpeas, your fiber and carbs are from the veggies and healthy fats are from the cashews. I removed the tomatos bc I’m not a tomato person. I also had this with my vegan protein and fruit shake. Just hitting all the major food groups. Drain it. -1/2 cup (60g) flour -salt and pepper to taste -1/2 Tsp garlic powder -3/4 cup (180ml) plant milk Whisk. Bread the eggplant with the batter and then breadcrumbs. Fry in oil until crispy. 2️⃣ CHICKPEA PITA 🥙 A quick lunch which you can also take with you to work! 😋 Much love Maya ✨ RECIPE (4 servings, 15min prep time): -1 bell pepper -1 onion -2 cloves garlic Fry for a few minutes -1 can (220g) cooked chickpeas -1 Tsp each salt, paprika and dried herbs -1 heaped Tbsp Ajwar or tomato paste Cook 2-3 mins. Then mash down. Cut your pitas in half and generously add the filling. Brush with some oil and fry each side until golden brown. Serve with sriracha Mayo. . .

Bean soup with wholemeal and rye sourdough bread 😋😋 Saute a chopped red onion in a little vegetable stock then add 3 cloves of finely chopped garlic. Add the spices (a tsp each of cumin, chilli powder and oregano, 1/2 tsp of smoked paprika and 1/4 tsp of black pepper) and mix. Add a tin on chopped tomatoes, a tin of black beans, a tin of kidney beans and vegetable stock. You can also make sure they only contain good quality, wholesome ingredients. These homemade almond magnums are the perfect summer treat that contain only 6 ingredients. The ice cream is creamy and delicious with an outer shell of thick dark chocolate and chopped almonds. They are mini too - so the perfect size for guilt-free indulgence 😋 ✅ Save to try Ingredients for the filling: 1 cup cashews, soaked 400ml can of full fat coconut milk* 3 large medjool dates, pitted 2 tbsp almond butter Other ingredients 300g dark vegan chocolate Chopped almonds *try and use an organic full fat coconut milk if you can. One with no stabilisers and emulsifiers ( I use @bionaorganic - no affiliation - but it’s definitely my favourite as it’s just organic coconut and water). Makes 6-7 mini magnums 1, Soak the cashews in boiling water for 30 mins then drain and add to a blender with the other filling ingredients and blend until smooth. 2, Pour into lolly moulds and put in the freezer to set for at least 4 hours 3, Melt the chocolate and dip each lolly then add a few chopped nuts. Put back in the freezer to set (this will only take a few mins). They will keep for at least a month in the freezer. Just take out about 10-15 mins before eating for optimal creaminess.

Homemade seeded crackers with beetroot hummus, potato salad, tomatoes, black olives, roast beetroot and red bell pepper 😋 Crackers: to a bowl add 33g of hemp seeds, 25g of sesame seeds, 28g of ground flax, 8g of nutritional yeast, a tsp if oregano, 1/2 a tsp of garlic powder, 1/2 a tsp of chilli flakes, a tbsp of olive oil and 40ml of warm water. Mix and let rest for 5 minutes then roll between to pieces of greaseproof paper until thin (about 2mm). Remove the top sheet and bake for about 25 minutes at 160°C. The crunchy base is gluten free with crushed up pecans combined with nut butter, maple and a little coconut oil and the gooey topping is sticky and delicious with dates and more pecans. It’s then simply topped with some pecan halves. ✅ Save to try Makes 15 squares Base ingredients: 1 cup pecans @justnatural_uk 1 cup ground almonds @justnatural_uk 3 tbsp melted coconut oil 1/4 cup nut butter (I used peanut) 3 tbsp maple syrup 1/2 tsp sea salt, optional Topping ingredients: 12 large medjool dates 1 cup pecans Extra pecans for the top 1, To make the base, blend 1 cup pecans into a flour and mix with the other base ingredients then press into a greased (and lined) loaf tin 2, To make the topping, blend the dates and pecans (if your dates are a bit dry add 1-2 tbsp as you blend) and once fully combined spread on top of the base and top with extra pecans and put in the fridge to set. Cut into squares and they’ll keep in the fridge for about a week

Lentil Curry With Roasted Butternut Squash 🧡 by @jackfruitfulkitchen 1 large butternut squash, peeled, deseeded, and cubed 1 TBSP olive oil 1 red onion, finely diced 4 garlic cloves, minced 2 TBSP fresh ginger, minced 2 tsp cumin seed 1 tsp ground cumin 1 TBSP curry powder 1 tsp turmeric 1 tsp paprika 1/2 tsp cayenne optional, for extra spice 1/2 tsp salt and pepper 1 TBSP tomato paste 1 1/2 C red lentils 14 oz can diced tomatoes 28 oz water 3 kaffir lime leaves 14 oz full fat coconut milk 1 TBSP chili garlic sauce 1 carrot, shredded 1/2 C cilantro, chopped To Serve 🥬 massaged lacinto kale pumpkin seeds cucumber, sliced fresh cilantro basmati rice naan bread 1️⃣ Preheat oven to 400 and line a baking sheet with foil. 2️⃣ Spread cubed squash on baking sheet. Drizzle with oil and season with salt and pepper. Coat evenly. Place in oven and roast for 30-40 minutes until golden. 3️⃣ Warm a large dutch oven or pot over medium low heat. Melt vegan butter or oil. 4️⃣ Add in onion and sauté until fragrant. Add in garlic, ginger and seasonings. Sauté for 1-2 more minutes. Stir in tomato paste and lentils to combine. 5️⃣ Pour in tomatoes and water and add in lime leaves. Bring to a boil. Reduce heat and simmer for 20 minutes, stirring occasionally. 6️⃣ Once your lentils have thickened, add in coconut milk, chili garlic sauce, shredded carrot and cilantro. Gently simmer for 5 more minutes. Season to taste. ⏺Vegan nut and seed crusted tofu with creamy dill sauce by @daria_cooks_vegan ⏺Ingredients 🌱For the tofu: •16 ounces / 450 g high protein tofu (super firm) •1/2 cup / 70 g dry roasted cashews •1 tablespoon chia seeds •1 tablespoon ground flaxseed •1/2 cup / 70 g roasted hazelnuts •1/4 cup / 35 g roasted almonds •1 tablespoon pumpkin seeds •2 tablespoons olive oil (sub in any other vegetable oil you prefer) •dash of salt 🌱For the dill sauce: •3 tablespoons vegan butter •3 tablespoons all-purpose flour •1/4 cup / 60 ml vegetable stock •1 cup / 250 ml plant-based milk (I used oat milk) •1/2 cup - 3/4 cup / 120 ml - 180 ml vegan cream (I used soy cream) •1/2 teaspoon onion powder dash of garlic powder •salt and pepper to taste •3-4 tablespoons (or to taste) dill, chopped ⏺Instructions 1️⃣Preheat oven to 410 °F / 210 °C. 2️⃣In a food processor combine nuts, seeds, oil and salt. Blend until it is a crunchy paste. 3️⃣Cut tofu into pieces (about 8-10). Line a baking tray with parchment paper and transfer all the tofu pieces onto the tray. Cover tofu pieces with nut and seed paste, then turn over and cover the other side with paste. Drizzle tofu pieces with olive oil and bake for about 20-30 minutes, or until golden brown. 4️⃣Meanwhile prepare dill sauce. In a pot heat 3 tablespoons of vegan butter until butter is melted. Add flour and mix until combined. Add vegetable stock and milk and stir constantly, until the sauce is smooth. Add cream, onion powder, garlic powder, salt and pepper. Let simmer. Add fresh chopped dill and serve with the tofu. Serve with steamed rice and cucumber salad, if desired. Need quick sandwich fillers for summertime outings? My all time favorite is chickpea salad! A plant-based take on tuna or chicken salad, this goes great on bread, wraps, rolls, or right on a salad. Mash 1 can of rinsed & drained chickpeas with a fork or potato masher. I've been visiting family and friends in Edinburgh for a few days and I've missed my soup. I was tempted to throw something quick on a bagel before work but my gut was having none of it. Soup is what I craved, so soup it was. I made this with the veggies available in my fridge and the whole process took 35 minutes. Chickpea salad with roasted red pepper dressing By @kissmywheatgrass_ INGREDIENTS 1/4 cup of chickpeas (rinsed & drained) 1/3 cup of sliced Persian cucumbers 1/3 cup of sliced cherry tomatoes 2 tbsp of diced red onion 2 tbsp green olives 1 tbsp dairy free feta Organic spinach . Dressing: 1 heaping tbsp of roasted red pepper hummus 1/2 tbsp lemon juice 1/2 tbsp water 1 tsp dried oregano Pinch of salt & pep This serves one but can be doubled, tripled, etc for however much you need! . DIRECTIONS In a large bowl, add the base of spinach (I roughly chop before) & all the rest of your ingredients listed above. In a small bowl, add the dressing ingredients & stir. Add more hummus/less liquid if you want it thicker & vice versa for thinner. Creamy mushrooms & kale on sourdough 🌿 Ingredients: 💛 4 slices of sourdough 💛olive oil 💛 3 tbsp oat crème fraiche 💛 200g mushrooms 💛a large handful of kale, chopped 💛 I/2 leek, finely sliced 💛1/2 tsp dried Italian herbs 💛1 tsp Dijon mustard 💛175ml veg bouillon stock 💛 2 garlic cloves, minced 💛 3/4 tsp rice mirin 💛1.5 tsp nutritional yeast 💛rock salt/cracked black pepper 💛fresh parsley, chopped 💛mixed seeds (optional) 1 tsp tamari (optional) Directions: 💛 heat 1 tbsp olive oil in a frying pan or cast iron pan over medium to low heat. Add the leek and gently fry with a sprinkling of rock salt for 3 mins. 💛Add the mushrooms,minced garlic & dried herbs. Stir together and allow to cook until the mushrooms have started to reduce in size. 💛 add the mirin, nutritional yeast & Dijon mustard. Mix together, then slowly add the stock. Allow to cook for a couple mins then stir in the kale. CREAMY COCONUT, CHICKPEA & POTATO CURRY 💛 By @nourishingalex Serves 4 - 1 medium onion, diced - 3 tsp garlic granules - 1 & 1/2 tsp ground ginger - 2 tsp ground cumin - 2 tsp ground coriander - 1 tsp dried chilli flakes - 1 tsp of turmeric - 1/4 tsp ground cinnamon - 1/4 tsp nutmeg - 650g baby potatoes, halved - 1 large carrot, sliced - 500ml veggie stock - 1 can of chickpeas, drained & rinsed - 1/2 can full fat coconut milk - salt & pepper to taste Method 1. Cook onion in a large saucepan or pot using a little olive oil (or water for oil free) on a medium heat setting for 8 mins until soft and translucent. 2. Add in all the spices including the garlic granules and cook for 1 minute until fragrant. 3. Add in the potatoes & carrot & chickpeas, then pour in the veg stock. 4. Bring it all to boil, give it a good stir, cover then leave to simmer on a lower heat setting for 15-20 mins until potatoes are soft enough to poke a fork through without breaking them apart. 5. When the potatoes are soft, pour in the coconut milk, cook for a further 15 mins with the lid off until the liquid has reduced a little. 6. Taste and season with your desired amount of salt and pepper. 7. We enjoyed lunch at the restaurant at @boxendpark on the weekend and we were really impressed with the food we had! The coconut and chilli udon noodles were so delicious. They had so much flavour and a good little kick to them 😋 (they also have vegan pizzas available according to the menu) We followed the noodles with the Oreo waffle dessert, which came with vegan vanilla ice cream, chocolate sauce, strawberries and crumbled Oreo biscuits... Such a treat! (A vegan biscoff dessert is also available) Definitely one to check out if you're over that way 😊

15 minute one-pot lentil daal 🌱 By @mazaboutplants Ingredients: 1 brown onion diced Packets of brown lentils & gungo split peas 1 tbsp curry powder 1 tbsp garam masala 1 tsp turmeric 1 tsp ground coriander 2 tsp garlic powder 1 tbsp minced ginger 600ml veg stock (1 & half stock cubes) 70g coconut cream Vegan naans Yoghurt, coriander & crispy onions to serve Method: 1. Cook the onion for about 5 mins or until soft 2. Add all spices & minced ginger & cook for a few mins 3. Add lentils & peas, veg stock & coconut cream 4. A surprise find @moments_cafe in Barnard Castle! This little cafe is a real gem for any vegans/plant based people living in or visiting the area. Lovely staff who explained that though the menu is not 100% vegan, it is possible to either choose the vegan equivalent on the menu, or they will swap things out and make any meal vegan! Also, their cakes/baked goods are 90% vegan! I enjoyed a gorgeous Peach Oolong iced tea with a vegan ploughman's!! Both were amazing, and this will be my go-to every time I visit! LOBIANI 🫘🫓🧅 From the GEORGIAN series Lobiani is a traditional Georgian🇬🇪 dish, the name of which is derived from the word "lobio" - bean🫘. It is a bread filled with beans and is served especially on St. Barbara's day on 17.12.. It can be prepared in the oven or by frying in a pan🙂 🍴4 portions ⏳120 minutes 📜INGREDIENTS: FILLING: 400 g = 2 cups dry red/pinto beans 280 g = 2 cups finely chopped onion 60 ml = ¼ cup sunflower/rapeseed oil 1 tbsp salt 1 tsp dried thyme 1 tsp ground coriander 1 ½ tsp paprika 3 bay leaves + oil for greasing the bowl in which the dough will rise DOUGH: 580 g = 4 ½ cups all-purpose flour 350 ml = 1 ½ cup warm water 2 tsp sugar 2 tsp salt ¾ tsp active dry yeast 🍳METHOD: 1. Soak the beans overnight in clean water. 2. Drain them, put in a pot with clean water and bay leaves and cook until soft. 3. While the beans are cooking, prepare the dough. 4. Mix all the dry ingredients in a large bowl. 5. Gradually add warm water and mix. 6. Work the dough, shape it into a loaf, transfer into an oil-greased bowl, cover with a kitchen towel and let it rise for about an hour or until the dough doubles in size. 7. Drain the cooked beans, remove the bay leaves and grind or mash them until you have the consistency of mashed potatoes. Set aside. 8. Heat the oil in a pan. 9. Add onions with a little salt and fry until translucent. 10. When the onions soften, add thyme, coriander and paprika. Be careful not to burn the paprika! 11. Mix the onions with the beans and add the rest of the salt. Set aside to cool down. 12. Divide the leavened dough and the bean filling into 4 parts. 13. Form a ball from each part of the dough, roll it into a circle and put the filling in the middle. Connect the edges of the dough so that the filling is safely encapsulated inside. 14. Then carefully press the filled dough with your hands into a flat circle. 15. Make a few shallow cuts with a knife across the top of each lobiani. 16. Bake at 190°C/375°F for 15-20 minutes. Add a little more plant-based milk (1 tbsp at a time), if necessary. Set aside. ⁣ ⁣⁣ ⁣In your now empty pea frying pan, add oil and garlic. Cook over medium heat.Then, add grated tofu. Cook until golden and slightly crispy. Season. ⁣ ⁣⁣ ⁣Add cauliflower to the pan along, get everything nice and hot and then add water. Cover and steam cauliflower for a few minutes until nearly tender. ⁣ ⁣⁣ ⁣Meanwhile, cook pasta according to package instructions, reserving 125ml salty pasta cooking water. Set aside. ⁣ ⁣⁣ ⁣Uncover frying pan with cauliflower, add remaining ingredients and stir to coat everything. Cook until tender but crisp and golden. ⁣ ⁣⁣ ⁣Drain pasta, return to pot with pea sauce. Stir and cook over low for a minute or two. Add a little pasta water. UDON SALAD WITH PEANUT SAUCE By @betterfoodguru Serves 6 Ready in 15 minutes Ingredients: For salad 8 oz cooked and cooled udon noodles 2 Persian cucumbers in matchsticks 1/2 bell pepper in matchsticks 2 stalks celery chopped 2 cups red cabbage chopped 1 carrot peeled and chopped 1 mango peeled and diced 1 block extra firm tofu drained, pressed and cubed 1/2 bunch cilantro chopped For Dressing 3/4 cup peanut butter 1/2 cup water 1 1/2 limes juiced 1 tsp Sriracha 2 tbsp sweet chili sauce 1 tbsp rice vinegar 1 tbsp tamari soy sauce Instructions: 1. 10 Minute Chilli Oil Noodles 🌶👏 This has been my favourite lockdown meal to make when I’m feeling lazy but craving something delicious. No measuring needed either but I’ll list every ingredient I use below! By @thrivingonplants Serves: 1 Time: 10 mins Ingredients 1 serving of noodles (I used fresh wheat noodles) Protein & veg of choice The Sauce Base: Light soy sauce Dark soy sauce (optional, see method 3) Sweetener of choice eg. brown sugar Sesame oil Chinese chilli oil Optional add-ins: Fresh minced garlic and/or ginger Sesame paste if you want it to be creamy A splash of black vinegar for an extra kick of flavour + tartness A few toasted sichuan peppercorns, ground up finely 1. Bring a small pot of water to the boil. How did your noodles and cook according to packet instructions. In the last minute I add in the bokchoy. Drain, rinse with cold water and set aside. 2. In the meantime, fry up your tofu or protein of choice. You can also just add thinly sliced pieces of firm tofu to the boiling noodles instead (even quicker!). 3. In a large bowl, add in about 1 tbsp light soy sauce, a tiny splash of dark soy sauce (for colour), sweetener to taste (around 1-2 tsp), sesame oil (1/2-1 tsp) and a as much chilli oil as you’d like. Here you can also use any of the recommended add-ins as mentioned in the ingredients list above. Whisk well until combined. 4. Add in the noodles, greens and tofu and mix until well coated. Garnish with sesame seeds, green onions, and cucumber. Drizzle on more chilli oil and serve immediately! 👏 As much as I love cooking, a lot of the time I just want to make some quick and easy but still feel satisfied. So these kind of meals are perfect for just that!
