Baked Pasta with Ricotta and Spring Vegetables (from @rachelaliceroddy in @guardianfeast ). This was my first time using large shell pasta. It is stuffed with lemony ricotta cheese, surrounded by courgettes, spring onions and peas and topped with bechamel and (vegetarian) Parmesan before baking. After challenging months it lifted a lot my mood to attend a workout and Q&A with Joe Wicks @thebodycoach at work for #mentalhealthweek. He is a very inspiring person who is using lots of his impressive energy to help people get fitter, happier and healthier. His messages were clear: 1. Exercise as many days as possible, any fitness activity is good: walking outside, exercising in front of a video… 2. Any time of the day is good for sport but morning is specially useful as it will be done (in case later you get upset with family, work…and don’t feel like exercising anymore) 3. To be fit you have to eat well to, planning food in advance make it much easier 4. Help others with mental health by speaking about it 5. Well-being bonuses: cold showers and barefoot type shoes 🙃 Personally I find that yoga is an incredible way to easily stay fit and feel better everyday. A surprise find @moments_cafe in Barnard Castle! This little cafe is a real gem for any vegans/plant based people living in or visiting the area. Lovely staff who explained that though the menu is not 100% vegan, it is possible to either choose the vegan equivalent on the menu, or they will swap things out and make any meal vegan! Confit tandoori chickpeas and black beans, with buttery basmati and a mint/coriander yoghurt dip. As with all #ottolenghi dishes it is super tasty. I had my doubts tbh, there's a lot of oil and I feared it might be greasy, but I needn't have worried. This is smoky skillet lasagna in the pan, topped with crispy lentils, a very different and tasty dinner from @veganricha . It took me a while longer than the suggested 50 minutes but I think that's always the way when trying something for the first time. The lentils are really unusual - you fry ready cooked lentils until they start to crisp, then add spices, maple syrup and soy sauces and crisp up even more. Scattered on the top they give a fantastic umami hit which I think could be used on all sorts of plates. This was very different and really very nice. Cabbage, Paneer and Pea Curry, served with natural yoghurt and Greek yoghurt. I'll be honest and say that I usually like my curry to be saucy, and here the lovely spice mix coats the veg and paneer creating a dry curry but I was pleasantly surprised. Will definitely make again. Absolutely delicious quick paneer and pea curry from @chetnamakan . Had it with plain basmati for an easy midweek supper. It was sprinkled with chopped fresh coriander but I forgot to rake a pic. If you swapped paneer for tofu it would be vegan. Only change I make is that I fry off the paneer first. I added some tender stem broccoli and had sweet, fresh from the garden griddled cherry tomatoes on the side. You'd never have spotted the grated parsnip if you didn't know it was there. The miso/soy sauce/curry powder mix gave a tasty, decent umami hit. Used @pinchofnom as inspiration for this quite honestly amazing dinner 😆 1 wholemeal wrap, @quorn_uk mince, red onion, green pepper, passata, white wine vinegar, balsamic vinegar, Worcestershire sauce, grated cheddar cheese, lettuce and mayonnaise. Seasoning of salt, pepper and fajita seasoning.
