Chicken Cheesesteak Skillet The Chicken Cheesesteak Skillet is a homage to the classic cheesesteak with a healthy, poultry twist. This skillet dish showcases thinly sliced chicken breast, seasoned to perfection with Italian herbs and smoked paprika, nestled amongst a medley of tender sautéed onions and bell peppers. The crowning glory is a generous layer of provolone cheese, melted to oozy perfection, creating a harmonious blend of flavors and textures. Ingredients: 2 tbsp olive oil, divided 1 yellow onion, halved and thinly sliced 1 red bell pepper, thinly sliced 1 green bell pepper, thinly sliced 1 1/4 lbs boneless skinless chicken breasts, thinly sliced 1 1/2 tsp Italian seasoning 1/2 tsp smoked paprika Kosher salt, to taste Fresh ground black pepper, to taste 1 cup shredded provolone cheese Directions: Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the sliced peppers and onion, seasoning with salt and pepper. Sauté until tender, then transfer to a plate. In the same skillet, add the remaining olive oil and the sliced chicken. Season with Italian seasoning, smoked paprika, salt, and pepper. Arrange in a single layer and allow to brown for a couple of minutes before stirring. Once the chicken is fully cooked, reintroduce the sautéed vegetables along with their juices. Mix well. Top with shredded provolone cheese and cover the skillet until the cheese melts. Who’s ready for breakfast meets dinner? I’m making Steak Hash as I had bell peppers, onion and steak in the fridge. This dish is super easy to make and with ingredients easy to find. You’ve got steak, potatoes, peppers, onions, cheese and a fried egg on top. Hashes are always one dish I enjoy ordering when I go out for breakfast or brunch and this homemade version is ready in 30 minutes or less. Saute peppers and onions for 5-6 mins. Stir in garlic, salt and pepper cooking 1-2 mins. Remove from heat. Add skillet back to medium heat with more oil. Cook potatoes 12-15 mins until start to crisp up and get tender. Season with salt and pepper. Reduce heat to medium low and fold in peppers/onions and steak cooking 1 min. Remove from heat. Fold in cheese. Top with fried eggs and garnish with parsley.
