I’ve spent part of my diabetes journey not caring enough, I’ve spent part of my diabetes journey caring too much ⁉️ LEARN FROM MY MISTAKES ⁉️ • There was a time that every high reading I saw, sent me spiralling into thoughts of going blind, dying early and heart failure • There was a time that every high reading I saw, I ignored and pretended it didn’t exist • There was a time I wouldn’t treat lows because of the calories • There was a time I’d inject too much just to eat sugar You guys see the very best version of me; the one that’s chipped away and learnt how to navigate these thoughts over years and years, I’ve been through the mud so hopefully you don’t have to, or at least I know the most effective way to drag you out. This is where the CORE pillar of my program came from. 80% time in target range, for 80% of the time. A beautiful and harmonious balance of: extremely well controlled diabetes, where fluctuating levels are minimised so daily suffering is limited, WITH, an allowance to live. 80 for 80 means you can experience life to the fullest whilst limiting your chance of complications. And the tools and knowledge I’ve learnt over the years, means 80 for 80 is sustained in a way that diabetes slots into your life, your existence does not revolve around diabetes I’m tagging just a few of my current girls on this post, incase you have any questions you’d like to ask from their perspective of working with me to achieve 80 for 80 💚

There’s few things in this world that brings me more joy than seeing my girls work relentlessly and against all odds, absolutely thrive. As T1’s we are often limited by our beliefs, the internet, the healthcare systems, our doctors, feeding us the idea that we can’t do certain things, that being diabetic will hold us back and limit our capabilities. My girls defy all of those odds, and this amazing lady has been showing up every week to the, eating right and balancing her bloods, doing this is a whole other ball game when you’re T1D, T has found such a harmonias balance of making her diabetes, her training and nutrition a priority, whilst sensibly incorporating life into that as well, it’s not been all in or all out with being social, it’s identifying what we can do surrounding the events to micromanage macros, diabetes and training to produce results like this. It’s been a process and throughout that, she’s gained a tonne of strength, confidence, reversed damage to her eyes from T1, enhanced her quality of life, completely changed her body composition and continued to enjoy holidays, events and life, but with more knowledge and understanding behind her. I’m so excited for what the future has in store for us, the epitome of a LIFT1 girl ⏳❤️‍🔥

ZUCCHINI BOATS 😋 Makes 4 servings 2 zucchini – total weight one pound 2 teaspoons crushed garlic 4 teaspoons olive oil – divided use 1/4 teaspoon salt 1/2 teaspoon pepper 1 pound grape tomatoes 4 ounces part skim mozzarella 4 tablespoons parmesan Just cut a zucchini in half lengthwise and trim a little off the bottom so it sit still in a baking dish. Scoop out the center where the seeds are with a spoon. Brush the surface with a mixture of crushed garlic, olive oil, salt and pepper. Arrange halved grape tomatoes into the grooves, and bake in a 350 degree oven for about 30 minutes. Remove and place diced mozzarella in between the tomatoes, place them back in, but now under the broiler until golden and bubbling. Remove and drizzle with olive oil and a sprinkling of grated parmesan. Be sure to add more lean (4 oz of beef, 5 oz of chicken or 6 oz of shrimp) for more protein! Cabbage Wrapped Beef Pot Stickers 😋 Ingredients: 1/2 cup Cabbage cooked 1 cup Broccoli (as a side) 8 oz 95% Ground Beef raw- should yield 6 oz cooked 1/4 cup chopped Green Onion 1/2 tsp Sesame Oil 1 tbsp Soy Sauce 1/4 tsp Ground Ginger 1/8 tsp Garlic Powder 10 1/4 sec sprays of Cooking Spray Directions: Bring a large pot of water to a boil. Wash and cut cabbage in half. Cut the core from each half of the cabbage by slicing it out in a triangular wedge. Separate at least at least 8 of the larger outer cabbage leaves from both halves, and then add to boiling water. (Save remaining cabbage for another meal). Boil for 2 minutes, until cabbage is crisp-tender. Use a slotted spoon to transfer cooked cabbage to a plate of paper towels to drain. Prepare the pot sticker filling by combining beef, chopped green onions, sesame oil, soy sauce, ground ginger and garlic powder in a mixing bowl. Mix well. Place a large nonstick pan over medium heat and spray with non-stick cooking spray. Form the filling into thick oval patties about the shape and size of your thumb. Place the filling patties into the pan and cook about 4 minutes on each side, until cutting into one shows no pink throughout. Wrap cooked patties in cabbage leaves and secure with toothpicks. Serve with broccoli for the remainder of your greens. Makes 1 serving: 1 Lean, 3 Greens, 1/2 Healthy Fat and 3 Condiments (You still need 1/2 a Healthy Fat) WANT MORE HEALTHY RECIPES? Lasagna Stuffed Peppers 😋😋 Ingredients: 2 cups Part-Skim Ricotta Cheese 1 cup Reduced Fat Mozzarella Cheese 21 oz turkey, ground, 95-97% lean (Yields 12 oz cooked) 4 cups Cooked Tomatoes, canned 2 cups Raw Brown Mushrooms 1 cup Raw Green Peppers 1 cup Raw Red Peppers 2 cups Raw Yellow Peppers 1 tsp Bay Leaf (1/2 condiment) 2 tbsp fresh Parsley 1/4 tsp Crushed Red Pepper Flakes 2 cloves Garlic 2 tbsp Raw Onion 1/2 tsp Salt l 1 tsp ground Basil 1/2 tsp Garlic Powder 1/2 tsp Garlic Salt 1 tbsp Italian Seasonings 1/2 tsp Onion Powder 1 tsp Oregano, ground 1 tbsp Tomato Paste 1/2 cup (8 tbsp) Parmesan Cheese Preparation: To make meat sauce: 1. In a large non-stick sauce pan over medium-high heat, brown ground beef with onion, minced garlic, and garlic salt. Drain excess grease. 2. To the sauce pan, add tomatoes. Mash the tomatoes into meat until they are crushed and broken up. 3. To the sauce, mix in tomato paste, mushrooms, oregano, basil, parsley, bay leaf, garlic powder, onion powder, sea salt, and red pepper flakes. 4. Reduce heat to low and simmer uncovered – 30 minutes. To make peppers: 1. Preheat oven to 400° Line a baking sheet with aluminum foil. 2. Slice bell peppers in half lengthwise and remove ribs and seeds. Place pepper halves on baking sheet and bake for 20 minutes. 3. Remove peppers from oven. Fill each pepper with ¼ cup tomato meat sauce. 4. Spoon 2 Tbsp. of ricotta cheese on top of the meat sauce in each pepper cup. Pour an additional 1 Tbsp. meat sauce on top of the ricotta cheese. 5. Top each pepper with 2 Tbsp. mozzarella cheese. Bake for 12 minutes. 6. Remove peppers from oven. Top each pepper with 1 Tbsp. Parmesan cheese and a sprinkle of Italian seasoning. Bake 5 additional minutes. Makes 10 servings: Each serving provides: 1/2 lean, 2 greens, 3 condiments.

SKILLET SPAGHETTI🍝 😋 Serves 6 Per serving: 3 green, 1 lean, ¼ healthy fat*, and 2.5 condiments Ingredients: 4 ½ cups cooked spaghetti squash 1 tsp extra virgin olive oil 2 lbs 90-94% lean ground beef or turkey 1/4 cup yellow onion, diced 3 cloves garlic, minced 1/2 cup diced green bell pepper 1 cup sliced mushrooms 3 cups canned low sodium organic diced tomatoes, -OR- 3 cups fresh diced tomatoes 3 cups canned or fresh tomatoes, pureed 2 Tbsp fresh parsley 2 tsp dried basil 1/2 tsp dried oregano ¼ tsp sea salt ½ tsp freshly ground black pepper ¼ cup freshly grated parmesan cheese ¼ cup freshly shredded basil Instructions: Heat large skillet over medium-high heat. Once hot, crumble in meat and cook until browned, stirring occasionally. Drain fat, set cooked meat aside. Heat olive oil in skillet, once hot and add onion & green peppers and saute until tender, about 3 minutes, adding in garlic & mushrooms during last 30 seconds of sauteing. Pour in diced tomatoes, and sauce. Stir in fresh parsley, the basil, oregano, and season with salt and pepper to taste. Bring just to a gentle boil then add cooked spaghetti squash noodles and cooked meat, stir and submerge noodles in liquid, then reduce heat to a simmer for 2 minutes until heated through. My morning reality as a Type 1 diabetic 💉💊☕️ I always have to start the day with injecting my slow release insulin and then my fast activating insulin for the meal I’m about to have. I do this around 20 minutes before I eat and I have to calculate my insulin dosage based on the carb ratio of my meal. Getting back on plan can be tough when blood sugar levels drop and I’ve got to treat the hypo and I’m guilty of being too mindful of syns rather than just treating my hypo. Creamed Spinach & Mushroom Smothered Chicken Makes 6 servings Per serving: 1 Leaner protein; 1 green; 3 condiments; 1 healthy fat Ingredients: FOR THE CREAMED SPINACH: 6 cups spinach leaves 2 ounces reduced fat cream cheese 1/8 C shredded parmesan cheese 1 clove garlic, minced 3 T onion, minced olive oil in a mister bottle ¼ tsp Salt ½ tsp pepper FOR THE SAUTEED MUSHROOMS: 8 oz package of mushrooms, sliced 2 Tbs butter olive oil in mister bottle 1/2 C chicken broth 2 cloves garlic, minced ¼ tsp Salt ½ tsp pepper FOR THE CHICKEN: 2 ¾ pounds chicken breasts, sliced in half horizontally to make 8 thinner breast portions 4 oz shredded part-skim Mozzarella ½ tsp garlic powder ¼ tsp seasoned salt ¼ tsp pepper Directions: Preheat the oven to 350 degrees F. Sprinkle the garlic powder, seasoned salt, and pepper on both sides of the chicken. Bake for 16 minutes. Meanwhile, make the creamed spinach. Over medium-high heat, mist olive oil in a skillet. Add in the minced onions and saute 2-3 minutes. Add in the spinach and garlic. It will shrink ridiculously. When it’s cooked through, stir in the cream cheese and parmesan cheese. Continue cooking and stirring until the cream cheese is melted. Remove from heat. For the mushrooms, melt butter and mist olive oil in a skillet. Put the mushrooms in and cook until browned all over. Don’t season with salt until they are browned or they will never brown. Add in the garlic and season with salt and pepper. Flip the chicken pieces over. Divide the spinach and mushrooms over the top of each breast. Place cheese on top of chicken. Cook another 12-14 minutes or until cheese is browned and chicken is done. Grilled Asian Chicken Zucchini Pasta 🍝  Makes 6 servings: ½ Leaner protein; 3 Greens; 3 condiments; 1 fat • 3/4 cup lime juice • 1 tablespoon olive oil • 1 tablespoon sesame oil • 3 tablespoons reduced-sodium soy sauce • 2 tablespoons minced fresh gingerroot • 3 garlic cloves, minced • 1 tablespoon splenda • 54 oz boneless skinless chicken breasts • 1 ¼ pounds uncooked zucchini • 1 large sweet yellow pepper, chopped • 1 large sweet red pepper, chopped • 1 medium cucumber, peeled and chopped • 1/4 cup minced fresh parsley • 2 green onions, sliced • 1/4 teaspoon crushed red pepper flakes or sesame seeds DIRECTIONS Combine the first seven ingredients. Pour 1/4 cup of marinade into a shallow dish, reserving remainder. Add chicken and turn to coat. Refrigerate 30 minutes. Drain chicken; discard marinade. Grill chicken, covered, on an oiled grill rack with pam over medium heat (or broil 4 in. from heat) 5-7 minutes on each side, until a thermometer reads 165°. Combine remaining ingredients with reserved marinade. Cut chicken into 1-in. slices. Add zucchini and chicken to vegetable mixture; toss to coat. Crustless Turkey Cheddar Quiche 😋 🥚 Ingredients: 6 ounces turkey, cooked and cubed 2/3 cup reduced fat cheddar cheese 1 tbsp light butter ¼ cup onion 1-1/2 cups fresh broccoli florets cooked, chopped finely 4 eggs 1/2 cup unsweetened cashew milk ¼ tsp salt ¼ tsp pepper Directions: Preheat 375 degrees. Melt butter in a medium skillet over medium high heat. Cook onion and garlic until onions are translucent. Layer turkey, cheese and broccoli in a 9 inch pie dish. In medium bowl, beat eggs, cashew milk, salt, and pepper with a fork. Pour over turkey, cheese, and broccoli. Bake 40 to 45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving. Diabetes shouldn’t ever be your reason for not doing something, learn to make it your driving force, an excuse is nothing more than an excuse Something as powerful, and wonderful as exercise, should be valued as such an integral part of every humans life, but more so if you are T1, there is no better key to unlock improved management, improved quality of life, improved insulin sensitivity. Yes navigation can be tricky initially, but be a logical human, use the data and adapt to the outcome, make the required changes to accommodate fluctuations, if everytime you ate something you got a big rash, you’d probably stop eating it, if every time you play sport, you hypo, don’t stop playing sport, change your approach to management in the lead up and post finishing. Saying you aren’t going to exercise because of the impact on glucose, is less than a poor excuse, you need to be proactive and you will eventually resolve the problems you’re having. But don’t just keep doing the same thing and expect a new outcome

ALWAYS ON THE GO⁉️ Here’s a delicious healthy slow cooker recipe to help you stay on track! 😋 TEX MEX SHREDDED BEEF 😋 InstantPot or Slow Cooker Ingredients: 3 1/2 pounds chuck roast 1 tsp salt 1 tsp ground black pepper 2 cups beef broth 1 (14.5 oz) fire-roasted diced tomatoes with garlic 1/4 cup green chilies, canned 1/2 tsp onion powder 1/2 tsp garlic powder 1/2 tsp smoked paprika or regular paprika 1 tbsp ground cumin 1 tsp chili powder Optional garnish: cilantro or green onions Directions: Season beef with salt and pepper. Pour broth, tomatoes, and chilies over beef. Stir in onion powder, garlic powder, smoked paprika, and cumin. Slow cooker: Cover and cook on LOW for 8 hours. Instant pot: seal and cook for 1 hour. Shred beef with a fork. Do not discard liquid. Stir beef with liquid. It will be kind of soupy, but it goes well with mashed cauliflower or cauliflower rice. I understand that coaching is an investment, an investment that takes time, energy, patience and work, it’s greatly misunderstood by many, that hiring a coach = results, but the work still needs to be done, it’s push and pull from both sides of the party, and I will push as hard as I possibly can and do whatever it takes to get you from point A to point B. Coaching a type one diabetic human is time consuming, I’m not sending you away with a meal plan and a training program, I’m providing you with skills and knowledge that will last a lifetime and gift you a better quality, quantity and understanding of your life. Hours upon hours are invested into each client, which is why I could never enforce an automated system that blindly creates plans and hope for the best, each and every client has an individual and very special journey with me, each client has varying needs and I need to dedicate enough time to each client to understand how their body works, what their insulin sensitivity looks like, what part of their cycle impacts them more and requires more attention, it’s so important to me, that each client has their own journey. With the rise of automation and AI, things are becoming more and more accessible, because there’s short cuts and hacks which can cut the time is takes to complete a task in half, that’s never going to be me, it’s maybe not the most business savvy move, but my integrity and ability to sleep at night will always supersede my bank account. I cap my intake because each client is paying for a service that requires my time and dedication, I’ll never reduce my service for the sake of more clients, but I do think I price myself very fairly for the work which goes into each of my girls, you can swipe along for their take on the matter ✨💘

WEIGH IN Week one is done and I’ve lost 0.9kg. My weekly target is 0.5kg so I am over the moon with this! I haven’t deprived myself, I haven’t obsessed over calories, I haven’t had any days of feeling good guilt. It’s been an incredible week! I’d like to get better at posting as I’ve been sporadic at best. However as I’ve said I’m in recovery for binge eating disorder and need to be careful not to fall back into negative patterns when it comes to my health and weight loss. ATTENTION CRAB LOVERS!! 🦀 🦀Crab-Stuffed Cucumbers🥒 Serves 4: Per serving: 3 green, 1 healthy fat, 1 condiment, and 1/2 leanest INGREDIENTS 3 long cucumbers 1/4 cup sour cream use reduced fat 1/4 cup light cream cheese, softened 16 oz jumbo lump crab meat, excess water removed 1 tsp hot pepper sauce (Tabasco or tapito) 1 tsp brown mustard ¼ tsp each- salt and pepper 1 tbs minced green onion ½ tsp chili powder or paprika for garnish (optional) INSTRUCTIONS: Remove the peel from the cucumbers using a vegetable peeler. Cut the cucumber into 2 inch slices. Using a small melon baller, scoop out most of the inside. You want to leave the walls and a thick portion of the bottom intact. In a bowl, combine the sour cream and the cream cheese with a fork until well combined. add the remaining ingredients and stir until combined. A fun weekend treat that your waistline will thank you for! 🙌🏼 CAULIFLOWER BREAD STICKS 🥖 😋 Ingredients: 1 cup raw grated cauliflower (you can cook first, then squeezed all the water out) 1/4 cup egg substitute * you are able to add up to 2 oz of additional protein. 1 cup shredded or 4 oz 2% light mozzarella, divided Garlic salt & Italian seasonings, to taste Marinara Sauce: 1/2 cup Italian diced tomatoes - w/less than 5 g of carbs per serving You can also use Walden Farms Marinara Sauce, but 1/4 cup is considered to be 2 condiments and is not a vegetable. You would have to add a third of veggies to your meal if you choose this option. Directions: Puree Italian diced tomatoes in a small chopper. Set aside. Preheat oven to 350. Mix cauliflower, 1/4 cup egg substitute, and 3 oz or 3/4 cup shredded mozzarella together in a bowl until combined. Line a 9 x5 loaf pan with parchment and lightly spray with Pam. Pour mixture into pan about 1 -1/2 inch deep. (It is okay if the mixture does not cover the entire pan). Bake at 350 for 30 min or until set. Lift the edges of the parchment and place bread with parchment onto a cookie sheet. Carefully use a spatula to lift the edges of the dough off the parchment and flip the dough. Bake for an additional 15 minutes at 450 degrees. Take out of oven and cut with a pizza cutter, slice strips through set dough. Separate slightly. Sprinkle with garlic salt, Italian seasonings and 1 oz or 1/4 cup 2% reduced fat mozzarella or three cheese blend. Continue baking at 450 degrees for about 10 more minutes until cheese is melted. I had my first Diabetic eye screening at Syston health centre today. Since being diagnosed as diabetic a month or so ago I've had many things thrust upon me and this was one of those things. Needing my eyes checked regularly for bleeding etc as it otherwise it is usually undetectable until it is as the very advanced stages. So the nurse was really lovely 😍 first of all she told me I couldn't possibly be 44 as I looked years younger! Great start to the day 😆 lol then she proceeded in putting mydriatic eye drops in my eyes to dilate my pupils so they can take photos of the back of my eye with their machine, I then went to sit in the waiting room for 20 minutes to let the drops do their work snd they did immediately I couldn't see my phone or watch....although my eyes are pretty blurry at the best of times I literally couldn't read anything then all the dates in the waiting room went blurry too 😀 😄 Then I was called back in and the lovely nurse popped me onto the machine and took a few photos of my eyes from different angles which you can see above..... Fab! Easy peasy! My lovely dad drove me home....the sunlight was a bit bright when I left the building! ☀️☀️ And it has just about worn off now as you can see I'm managing to use my phone! So it's an important test to get done!
