Nouvelle maison de Champagne au Chai de Moorea, les #champagneclandestin : Ce n’est pas une maison de Champagne comme les autres… et son nom en est le premier témoin ! Devant la demande croissante de champagnes authentiques de vignerons, le talentueux Benoît Doussot (même pas la trentaine !) a créé une maison "haute couture" : élaborer dans l’Aube, là où il s’est installé à dessein (Landreville), quelques cuvées très pointues destinées à séduire les amateurs les plus exigeants, en rassemblant les jus de quelques vignerons tous labellisés "bio" et triés sur le volet. La région de l'Aube a toujours fourni beaucoup de raisins très qualitatifs aux grandes marques de champagne et l’idée de Benoît et des vignerons de ce secteur est de se réapproprier des raisins singuliers qui "disparaissent" dans de grands volumes non identifiés lorsqu’ils voyagent vers Reims. Abbiamo assaggiato quest'ottimo vino che effettivamente rispecchia le impressioni positive ovvero l'esser stato il primo champagne di Jèròme Prevost che lo ha reso celebre ed evidenziato le sue doti qualitative di vigneron e produttore. Le fermentazioni avvengono spontaneamente con l'utilizzo di lieviti indigeni in barrique di rovere francese, successivamente viene svolta una maturazione in legno di alcuni mesi, fino al momento della creazione della cuvée. Infine rifermenta in bottiglia sostando sui lieviti per almeno 24 mesi prima della sboccatura. - 👀 Alla vista un colore giallo paglierino, perlage fine. 👃 Al naso il bouquet si apre con note agrumate d'arancia, frutta fresca ed il dolce della pesca. Il tutto si mescola con pasticceria e spezie calde. 👄 All'assaggio si presenta cremoso, corposo dal finale lungo e sapido. - E' un vino che ha ancora anni davanti a se per esprimersi al meglio. In the photo it's resting comfortably in their large custom ice bucket that perfectly fits a bottle of such size. Light golden hue and lots of super tiny bubbles. Elegant and inviting with aromas of red apples, berries / gooseberries, pear and pomegranate. Medium bodied with nice depth, breadiness and roundness. Not that complex but but there's good focus, plenty of charm and deliciously concentrated fruit. Lovely energy and high acidity. Medium dry, slightly sappy and a bit sweet in character but nevertheless overall nicely balanced with excellent tension. Very long and rich finish with pleasant bitterness. Aged @champagnepalmer champagnes are ones to explore if you are not familiar with these ones. Price is bargain for the quality that you get, whether it’s vintage or not. I’ve kept this one for nine years and it has still easily 5-15 years to evolve. And where is it at the moment? Nose offers beautiful tertiary notes like coffee, chocolate, fudge but also minerality, citrus and yellow apple. I’d enjoy only to breathe this in and out, so complex but so balanced. Palate is lively. Super energetic 2008 acidity has calmed and is more likely tingling sensation in ones mouth. Aromas are way more fresher side on the palate than in the nose. Chalk, bread crust, candied citrus, unripe yellow apple and waffle. And finish is long, so damn long! Gotta say that this is one of the most beautiful Palmer’s that I’ve had.
