I finally took the plunge and made a full batch of milk clarified Mai Tai to enjoy with friends on the deck this weekend! ‘𝟒𝟒 𝐌𝐚𝐢 𝐓𝐚𝐢 (𝐂𝐥𝐚𝐫𝐢𝐟𝐢𝐞𝐝) Original recipe by Trader Vic - - - 1 cup @smithandcrossrum Jamaican rum 1 cup @rhum_saintjames aged agricole 1 cup fresh lime Juice ½ cup @rhumclement orange shrubb ½ cup @bgreynolds orgeat 1 dash 20% saline 1 cup full fat milk * * * • Combine the cocktail ingredients in a large bowl and set aside • Pour the milk into a separate bowl, then slowly pour the cocktail into the milk • Let the milk and cocktail solution stand at room temp for 2 hours • Filter the liquid and solids using a damp coffee filter. The first few ounces may come through cloudy, so just pour the first amount back through. • Label and store in the fridge or at room temp (milk clarified spirits are shelf stable) • Serve on a large rock when desired, garnished with a mint leaf! Nothing fancy here, but while I was in the mood for a negroni, the run of absolutely stunning spring weather pushed me in a tropical direction. While I’m a big fan of the traditional Kingston negroni spec featuring Smith & Cross navy strength, I pulled out a richer Jamaican rum in the form of the fantastic Worthy Park Port cask finished, 10 year-old rum, to make it a bit more sumptuous. A simple quarter ounce of Giffards exceptional banana liqueur and the Chinola added the right vibe, and a bit of expressed orange orange oil finished it off. (15mL) @arbutusdistillery elderflower liqueur ¾ oz. (22.5mL) fresh lime juice ½ oz. (15mL) @bgreynolds orgeat Combine all the ingredients in a shaker tin. Add a small scoop of crushed ice and shake until it’s gone. Open pour into a double old fashioned glass, fill with crushed ice, and garnish with mint and a lime wheel. The Artichoke Hold is one of the go-to aperitiki recipes at our favourite local watering hole despite not being on the menu, and there’s a reason this has been elevated to a modern classic. The blend of Cynar and punchy jamaican rum (I used the fantastic Stolen OP instead of Smith & Cross) combine to form the right amount of savory bitterness, and the elderflower liqueur brings it back into the tropical realm. With Spring in full swing, I’m starting off a series of Mai Tai riffs featuring amaro and bitters to dive deep down the aperitiki rabbit hole. First up, the OG... 𝐁𝐢𝐭𝐭𝐞𝐫 𝐌𝐚𝐢 𝐓𝐚𝐢 Recipe by @jroertel As feat. in @punch_drink - - - 1½ oz. (45mL) @campariofficial ¾ oz. (22.5mL) @smithandcrossrum Jamaican rum ½ oz. (15mL) @ferrandcognac dry curaçao ¾ oz. (22.5mL) @bgreynolds orgeat 1 oz. (30mL) fresh lime juice Combine all the ingredients in a shaker tin, add a small scoop of crushed ice and shake until it’s gone. Open pour into a double old fashioned glass, fill with crushed ice, and garnish with mint, a lime wheel and a @surfsidesips straw. Jeremy Oertel’s campari-forward spec perfectly captures the iconic, bitter-sweet orange notes of Campari, with a healthy dose of Jamaican funk in this mai tai riff. Interestingly, while I initially thought the orgeat might have added a bit too much sweetness, in the glass it worked perfectly. I’d definitely recommend this as a gateway cocktail into the red Italian bitters category for anyone intimidated by jumping straight into the deep end with a negroni!
