Tonight there is a Rhum Agricole from Clément on my menu. Unlike most rums that are made from the fermented molasses of the sugar cane, a rhum agricole is made from fermented sugar cane juice. The Clément VSOP has been aged for a minimum of 4 years. This is an honest age unlike what you often see with a lot of commercial rums brands. In the nose grass, vanilla and orange. The taste is quite earthy, a bit musty, grassy, vanilla, ginger and some oak. The orange starts to reappear in the medium/long aftertaste with further some oak, an earthy smokiness an a hint of ginger spiciness. It's a great rum for people who want to taste the differences in style and flavours of a Rhum Agricole compared to most English or Spanish style rums. 🥥🍈 COCOMELON RUM SOUR 🥥🍈 What we got here then? Coconut ✔️ Melon ✔️ Rum ✔️ Is it sweet? ❌ Nah man! It’s quite simply a tropically refreshing rum-based sour. Simple, and a decent, beautifully green beach-side sipper. You may need to adjust your ratio of coconut rum to melon liqueur depending on which rum you use. Here, I found if I used @kokokanu_uk I needed slightly more rum to melon liqueur. But with @alunacoconut, the toasted coconut flavour was more dominant, so a 1:1 ratio worked well. Anyway, let’s shake up a tropical sour… Cocomelon Rum Sour 🥥 60ml @kokokanu_uk Coconut Rum (45ml @alunacoconut Rum) 🍈 30ml Midori Melon Liqueur (30ml if using Koko Kanu, 45ml if using Aluna) 🍋 30ml Lemon Juice 🍭 15ml Sugar Syrup ☁️ @bettersbitters Foamer or egg white Quite simply put everything into your shaker with ice and shake like a raving Aluna-tic (Kanu see what I did there?) Strain into a double old fashioned/rocks glass containing a large cube of ice. Garnish with a lemon wheel or a slither of Galia melon if you’ve got some. Sip whilst realising you’ve just named your cocktail after a relatively annoying nursery rhyme-singing children’s tv character. On the nose: was zestful, with hints of lime & overripe bananas, could also pick up raspberry & apple. The flavour profile delivered a mixture Banana, grapefruit, pears, coconut & pineapple, with a long tropical finish. I slowly sipped as this beautiful 63% ABV overproof rum should be respected & anyone drinking I recommend being responsible. 🇯🇲- Mixture of choice was some Levi roots Caribbean crush…and it certainly paired well…this was so refreshing with lots ice & limes.
