The Vulcan Still Designed in the first part of the 1800s by and for the US East Coast rye distilleries, years ago Vulcan still was used to make American rye whiskeys. There are only 2 chamber stills in the world: One at Leopoldo’s distillery, Leopold Bros And one at the WIRD (West indies Rum distillery) in Barbados that is actually an original from the 19th / 20th Century. The Vulcan still also called the three chamber still and made of three different chamber: The bottom chamber, the middle chamber & the top chamber. Name after it’s builder, the then renown US Coppersmith Vulcan. I’m very lucky to see and touch the Vulcan Still at the WIRD and met all the living legends. A Dream come true!!!

Jungle bird是另一款立即開啟我眼界的雞尾酒，跟她懈逅於專心自學調酒起的頭幾個月，一切源於造訪了The Daily Tot @dailytot.hk ，適逢一間女友告知我新開的rum專門酒吧，前往該吧還是生日節目之一（她真好） 陳年冧酒有某些威士忌式的苦澀、醇厚和木桶香，但又具備某種熱帶風情的果香氣，很容易跟果汁撞在一起，也很容易弄得很好喝。正因如此，如果你到酒吧說要一杯fruity或tropical的cocktail，很大機會會被調得一杯rum based的cocktail。Rum酒在很多情景下，也著實很適合新手入門自學調酒時，作為起點的基酒使用，因為她使用的材料很重覆，味道也容易好喝。 話說回來，當年開始投資品飲陳年冧酒，好不享受，又開始了尊注的自學調酒，自然迫不及待想要造訪這家rum專門的酒吧。結果Jungle Bird（當時店家不是以此命名，但肯定是基於jungle bird的變種）令我非常震撼（當時還閱精品雞尾酒尚淺的我），覺得她又有烈酒的醇厚，又有雞尾酒的層次。 拍下餐單後，回家不斷嘗試模仿她的材料和味道，然後漸漸明白並發現原來此為大作jungle bird的變種，並繼而發現更廣大的tiki cocktail世界——並得出一結論，rum based的cocktail套路很接近，因此改裝和自創rum based/tiki酒款應該不難，而且決勝關鍵往往還在於最細微portion上的決擇。 淡墨是另一枝要大力盛讚的力嬌，是我目前為止用過最佳的咖啡力嬌（雖然我經驗還是有限），令很多原本用黑先生（更別說卡魯哇）喝起來會平平無奇的款式，會因淡墨而變得昇華十倍。適逢reddit一直有人吹捧Jungle Bird裏的Campari若換了咖啡酒，效果驚人，結果我果然味蕾上了天堂。 值得注意的是，每個細節，你挑的酒以至果汁，甚至糖漿都會影響你最終成品的質素，因此即使只是這些輔助材料，也別挑太爛的！ Pale Bird 🐦🥃 1.5 oz plantation Stiggins' Fancy @plantation.rum 0.75 oz Pale ink @paleinkdrinks 1.5 oz pineapple juice 0.5 oz freshly squeezed Lime juice 0.5 oz Agave Syrup @crawleysbartendersyrups #香港調酒 #香港雞尾酒 #自學調酒 #家居調酒 #居家調酒師 #居家調酒 #junglebird #paleinkcoffeeliqueur #paleink #plantationstigginsfancypineapplerum #crawleysbartendersyrups #homebartender #homecocktails #homebartending #homemixology #homemixologist #hongkongcocktails #rumbasedcocktail #thedailytothk #thedailytot

除了閱讀，親身造訪城內頂尖酒吧，對獲取啟發、打開眼界亦猶關重要。經常類比調酒如烹調，必須經常吃他人的作品、造訪不同餐廳，才能拿到刺激，以使自已的味蕾和套路不致薑化。 在喝別人作品時，應盡已所能去辯認和尋找所認識的材料的味道。如遇不認識或未聽聞的，則立即google，或大方向酒保請教。在絕大部份情況，酒保們非常願意解釋，甚至讓你嗅一下/嚐一口該特定材料的味道，也不是罕有之事。多跟你的酒保或調酒師作人性化的交談和交流（不要只想著談酒），整個飲酒過程除了愉快，結果通常都能令你獲益良多（酒精知識方面，即使不是以此為交談起點）。 盡量坐在吧台，這樣就能觀察他們用的酒款、品牌，他們是怎樣令東西方便易處理、shake的姿勢、garnish的方法、甚至酒櫃擺設的方法，通通都是可以學習的地方。 香港本地人中，其實我眼見喝雞尾酒的潮流相當不熱烈，我大膽說出我認為部份原因在於本地人普遍能承擔的雞尾酒價格，限制了場館的質素，影響了本地人對雞尾酒觀感味道的印象，繼而影響了一整個對雞尾酒的觀感：應付多少錢？應到哪裡喝？應叫什麼款？雞尾酒是什麼味？ 上述原因亦是做成有機討論群體在香港很小的原因。試想烹調，大家習慣了食好西，參與烹調者眾，烹調的有機群體、討論平台也就多出好多。醉心鑽研烹調，也就沒那麼容易被人認為是Nerdy的行為。 香港一流的酒吧多的很，連全亞洲十名內的酒吧也有。如果想專門喝Tequila based的cocktail可赴 @coahongkong ，Rum based specialized 的有 @dailytot.hk ，@quinaryhk和 @stregisbarhk 是一間極多原創款式，而且款式非常多元的一間極高質雞尾酒吧，非常值得造訪。Tea Camellia 則是一間專門喝tea based或tea infused的雞尾酒吧，同樣相當有意思。 （再一次，本帖並未收取任何贊助，繼續求包養） 緊記無論為了個人味蕾的獵奇，還是為了對調酒知識的提升，都有很多好重要的學習場所必須前往，這些體驗是書本完全無法帶結你的呢！ Photo taken @dailytot.hk #居家調酒師 #居家調酒 #自學調酒 #自學 #香港調酒 #香港雞尾酒 #家居調酒 #thedailytothk #quinaryhk #coahk #stregisbarhk

We take seasonal ingredients and handpick each rum to match with different cocktail palettes in order to enhance the flavour of the rum rather than mask it. Rum is a marvel and is a spirit that has no limitations thus, following our mantra we paired each of our cocktails with unique ingredients such as pineapple & coffee, citrus & figs, chamomile & coconut curd, pandan & wasabi and a whole lot more. Who says you have to box rum into a little fruity cocktail, let’s go wild and let’s be free. You ready for it?

The name 'Black Tot' stems from July 31st 1970 when a 300-year-old Royal Naval tradition ended at precisely 6 bells in the forenoon watch (11am) when the last rum ration was issued aboard ships of the British Royal Navy – a day to be forever remembered as Black Tot Day. Black Tot Rum is made with molasses in a bourbon cask with of notes of pineapple, papaya, banana, dark chocolate, oak, coffee. A tasty and versatile blend, showcasing my favourite bits of Barbadian, Guyana and Jamaican rums – fruity, rich and funky. The staff is bubbly and fun, and the space is comfortable filled with larger lounge areas for groups 🌴 . I love the decoration! It reminds me of my time in Havana with the pastel, faded coloured walls and the vintage statement suitcases in the back. 🧳 ✈️ 🇨🇺 💃🏻 - Some highlights of the night included the caffeinated butter rum ☕️ 🍸 which was spiced and slightly sweet containing mellow smells of the roasted coffee. Another lighter alternative to opt for is the Bermuda Triangle 🍊 🍫 which isn’t too sweet and filled with kumquat, and eaten decadently with a piece of white chocolate, or the PB&G 🌿 🍋 (my favourite) which smells of basil and is filled with citrus notes.
