Great to dip tortilla chips into, to top chili or taco crumble with.... Boil with enough water to cover, do not add additional water because you'll be adding coconut milk. Blend in small batches in a food processor. This week involved a few grocery trips & stocking prep. First up was the #butcher for 21lbs of meat. 6lbs of #bacon batched into 1.5lb bags (yes, we cook 1.5lbs at a time. Our family loves bacon) 15lbs of ground meatloaf mix (this particular one is #beef & #pork ) batched into 3lb bags as that is a standard meal size for our family. All frozen flat so they can then stack to save space. Yesterday was a grocery order day. So I took a couple hours today to process some of the veggies I brought home for the freezer. Small batches like this make it easier to manage & not seem so overwhelming to process. But will build the freezer supply quickly. Turned out to be an all Green Day. 🤷♀️ Zucchini shredded in batches for zucchini bread. Celery diced for general use. I use it a lot in stews, chili, & ground meats. Hearts & leaves saved for stock. Green Bell Pepper both minced & diced. Again for general use. Bell peppers have 4x the vitamin C of an orange so I try to sneak them in wherever I can. Processed 5lbs of carrots for the freezer this am. (In the midst of lots of other happenings.) Like the onions, I add carrots to a lot of meals that I’m using ground beef/similar meats. I also add them in spaghetti sauce/soups/meatloaf/meatballs. They add some sweetness without adding sugar & when minced, they just sort of melt away. When the OffSpring were little, I added all sorts of hidden veggies to their foods. I was so excited to see our local @nekoosapigglywiggly having this pork loin special this week for some meal prepping for us and the family! Prices are going up on everything and one way to save some money and put some extra in the freezer is to do your own meat cuts. And yes, I drew on my finger a one inch marker for measuring cuts 🤣. I cut up just under 30 pounds today and was able to put 12 packages of center cut pork chops, 3 roasts, and one package of pork stew meat in the freezer. That breaks down to about $3.13 per meal for protein for the entire family and most of these when added with veggies and starch will provide leftovers too! One day we will be able to raise our own again, and we’re lucky to have a hog being raised for us now, @lifeonmistyacres, but it never hurts to have a little extra stash for the upcoming months when prices are expected to continue to rise. Finally got my basil leaves …. I planted supermarket basil plants 🪴 few months back and they flourished beautifully…. I’ve been doing research on how to store them as I didn’t want them to ho to waste. I use basil all the time but I had ALOT 😂🪴 I’ve taken best leaves off, washed and rinsed ( I used my salad spinner to help). I put them on tea towel to air dry, them from largest leaf to the smallest I made bundles. Wrapped them into balls and gently packed them into my silicone storage bag. Tightly packed them and sealed. In freezer they are great to add to soups, salads. Just take out and chop and sprinkle 🌱🌱🌱🌱🌱 #basilleaves🍃 #herbs #augustprep #freezerprepping
⏰ PREPARATION IS KEY ⏰ Today I’m feeling a little 🥱 so we’re having a lazy day! The best kind of days! Trying something new. • I saw a recipe the other day that caught my attention. It was for a pumpkin cream sauce and I was intrigued. So I decided since we have a bunch of pumpkins I’d try it out. Let me start by saying that while I like the taste of pumpkin, the smell of raw pumpkin and having to seed them makes me gag! And my kids found it absolutely hilarious watching me get these seeded and cut. I only managed 3 of these tiger pumpkins before I just couldn’t go farther! Which is perfect for what I need for my sauce but I still have 14 more pumpkins of various sizes and variety to still put up for soups and roasted pumpkin for the winter. And at this moment I’m considering giving them all to the wildlife to have a feast with! In all seriousness though it may take me a few days to get them all processed for freezing! Due to not handling the smell or seeds very well, and I’ll be putting out some for the animals. I’ll let y’all know how the sauce turns out. I’m hoping it’s yummy. #domesticgoddess Busy today. Turning our cherries into tasty goodness. I began by pitting all my cherries with a nifty tool. First up is drunken cherries. Prepped cherries filled in jar filled to cover with Vodka #localdistillery #glutenfree. Cap and store in cool dark space for 2-3 months. I usually gently shake the jars once a week. Vodka preserves the fruit and it’s ready for holiday beverages. Next is two batches of pie filling. One for tonight and one for the freezer. Emily helped make the pie. Lastly is Cherry Pit Syrup. I found a recipe on Pinterest to simmer the pits with sugar and water to make a flavored simple syrup. This afternoon was not productive at all as I had to fight extreme fatigue. 💤 A 19 min power nap did not recharge me. ☁️ My brain was not here, lost in a cloud. 💦 And my mood started to swing. I’m down to just a few of my breakfast sandwiches that I freezer prepped before Callan was born. Let me tell you, they have been a life saver! I plan to make another large batch this weekend. If you are pregnant and thinking of doing a #freezerprep I highly suggest a couple batches of these! ________ Light English muffin (2) Egg (0) Bacon (2) @velveeta cheese slice (1) ________ I wrap them in tinfoil and store in freezer. Take out the night before and let defrost in fridge. You can microwave them for 60-90 seconds throw them in your air fryer. I reheat mine in my @simplelivingproducts air fryer at 350° for 5 minutes & they come out perfect! #freezermeals
