Gluten-free, yeast free, soft and fluffy buckwheat-quinoa buns. We love these buns in our household. It is a very good way to incorporate psyllium in our diet, since psyllium, which is an amazing fiber for the gut, will feed the microbiome which will produce SCFA (short chain-fatty acids). Dr Will Bulsiewicz calls SCFA the most anti-inflammatory compounds of the human body. - 1.5 cups buckwheat - 3 cups quinoa (I used 2 cups white and 1 cup red, but white will be just fine) - 22 oz water - 1 1/4 cups psyllium husk - 1 cup sunflower seeds - 1 Tbsp salt Soak the buckhwheat, quinoa and sunflower seeds for 12 hours. Rinse them and let them sprout for another 12 hours. The fact that the pseudo-grains are sprouted will make the buns rise (like the sourdough). Mix all the ingredients, except for psyllium husk, in the blender until smooth. Add the psyllium in the end and mix for another 10-15 seconds. Or add the psyllium mixing by hand with a whisk. Pour the mixture in a bowl, cover it with a plastic warp and leave it for 5-6 hours until the dough rises. Form the buns with your hand (wet your hand so the dough does not stick to your hand) and bake them for 30-40 min at 350 Farenheit. Canning bread is a good way to preserve it without having to freeze it. Just made this delicious Cauliflower Gratin with Bacon! Perfect for any meal. 🥓🧀 Cauliflower Gratin with Bacon Ingredients: 10 slices of bacon, cooked and chopped 8 cups of cauliflower, cut into bite-sized pieces 6 Tbsp. flour 3 Tbsp. butter 4 cups 1% milk (for a thicker sauce, use light whipping cream) 3 cups sharp cheddar cheese, plus extra for topping 1 tsp. nutmeg Salt & pepper to taste ¾ cup breadcrumbs Fresh parsley, chopped Directions: Preheat the oven to 375°F (190°C). In a large skillet over medium-high heat, cook the bacon until crispy and browned. Set aside on paper towels. Heat a large pot of salted water on high until boiling. Add the cauliflower and cook for 3 minutes. Drain and set aside. In the same pot, melt the butter. Whisk in the flour, stirring constantly. Gradually add the milk, stirring continuously until thick and creamy. Stir in the cheese, nutmeg, salt, and pepper. Add the cauliflower and bacon to the cheese mixture and toss to combine. Pour into a 9×13 baking dish and top with breadcrumbs and a sprinkle of cheese. Bake for 30 minutes or until bubbly and golden. Sprinkle with fresh parsley before serving. 🧀Did you know there’s a build your own Mac & cheese restaurant in TX?! 🍝Today I drove up to @iheartmacandcheesenrhtx to try their gluten free Mac & cheese! They have gluten free pasta (prepackaged and away from regular pasta) and also gluten free bread for grilled cheeses! I chose the build your own bowl option and got: gf pasta, cheese sauce, slices of white cheddar and regular cheddar, bacon, and bbq sauce! Staying on the Halloumi train this week and I am all up in your kitchen with Roasted Tomato & Halloumi Bruschetta. The nectarine and halloumi salad was so delicious I decided to keep experimenting with Halloumi. This is a great appetizer to bring to a get together and is perfect for your gluten free friends! . Makes 16 pieces Ingredients: 18 oz halloumi (2 9 oz packs) 3 cups grape tomatoes 2 cloves garlic 1/4 cup red onion 1/2 cup balsamic glaze 2 tbsp & 1 tsp olive oil 1/2 cup chopped basil 1 tsp Italian seasoning 1/8 tsp salt . Directions: 1. Marinate your halloumi in 1 tbsp olive oil and 1 tsp Italian seasoning for at least 30 minutes. 2. Preheat oven to 350 degrees Fahrenheit. 3. Slice grape tomatoes in 2 and mix with salt and 1 tbsp olive oil. Place on baking sheet and bake for 30 minutes or take out as soon as you see the tomatoes start to blacken. 4. While your tomatoes are cooking, cut your halloumi into 16 rectangle size pieces. Pan fry the halloumi for 2-5 minutes each side until it browns on each side. Let cool. 5. Once your tomatoes are ready and cooled, mix with the garlic, onion, and basil along with a tsp of olive oil. 6. Place tomato mixture on top of your halloumi pieces. #TastyTuesday Quick Salmon Tikka & Naan Ingredients: Salmon: 1 lb wild salmon filet 2 tablespoons tandoori seasoning  3 tablespoons avocado oil ½ teaspoon sea salt Naan: ½ cup almond flour ½ cup tapioca flour 1 cup canned full-fat coconut milk 1 teaspoon baking powder ½ teaspoon sea salt 3 tablespoons avocado oil Garnish: 8 oz plain coconut yogurt (I used Culina) 1 cucumber, peeled lengthwise into thin ribbons  ¼ cup fresh mint leaves Freshly ground black pepper Method: Pat salmon dry using paper towels. Cut into bite-size pieces and transfer to a large mixing bowl, along with the tandoori seasoning. Set aside while lining a baking tray with parchment paper and preheating your oven to 500°F (yes, that high!). If your oven has a fan, turn it on. While the oven is heating, make the naan. Mix all the ingredients together in a bowl until no lumps remain. The batter should look like pancake batter. Preheat a large nonstick pan over medium heat. When the pan is hot, transfer ⅓ cup of batter onto the pan. Spread batter by tilting the pan around and cook for 2 minutes. Use a spatula to flip and cook for 1-2 more minutes. Transfer to a cooling rack while preparing the rest of the naans. You should get 6 in total. When the oven is hot, transfer the salmon to the prepared baking sheet and cook for 5 minutes or when golden on the outside. To serve, top naan with salmon, yogurt, cucumber, mint, and freshly ground pepper. Mujadara is a universally loved dish because it just tastes SO good and it’s so simple too: rice, lentils and onions - that’s pretty much it! But the combination creates something that will become one of your go-to comfort dishes. Mujadara with Caramelized Shallots (Serves 8) Ingredients: 2 tbs vegetable oil 1 tsp cumin seeds 1/2 tsp ground black pepper 4 large onions, sliced 1/2 tsp ground cumin 1 cinnamon stick 350g gf Basmati rice 400g can green or brown lentils, drained 1l chicken or vegetable stock Zest and juice 1 lemon 60g flaked almonds Sea salt and ground black pepper Method: 1. Add the vegetable oil to a heavy-based frying pan with the cumin seeds and black pepper. Fry for 1 minute or until it smells aromatic. 2. Add the onions and some salt. Cook until the onions are golden brown and caramelized, stirring often so they don’t burn. This will take about 15 minutes. Use a slotted spoon to transfer half the onions to a plate lined with kitchen towel and reserve for later. 3. Sprinkle the ground cumin into the pan then add the cinnamon stick. Sauté for 1 minute. Add the rice and coat with the oil and spices. Add the lentils, stock and a pinch of salt, bring to the boil, then then turn to low and simmer, covered, for 30 minutes, until the rice if soft. 4. Turn off the heat, remove the lid and cover with a clean tea-towel to allow the rice to steam, undisturbed, for 5 minutes. 5. Meanwhile, toast the almonds in a small frying pan over a medium-low heat, shaking often, for approx 5 minutes. 6. Check the rice for seasoning and fork through with lemon zest and juice. Some times You have to step out of your mood and bake a cake Instead of adhering to the exacting rules of how things should be done and when even if it means having a bake before dinner. Always adding some 💕💓 The cool winds are whipping the reddening cherries, emotional waves of laughing blue skies and angry bursts of showers. Here I am, wanting a buckwheat cake, comforting, warming and light. It's really an austrian and tyrolian thing, with Preiselbeeren in-between, that's lingon- (wild) or cranberries (cultivated) in english lingo. Autumnal goodness that works all year! Cream. Or no cream. A small cake and easy, for a lose bottomed 20cm buttered tin: Cream 130g half butter half ghee with 90g coconut blossom sugar Add largish 3 eggs one by one Add a mix of 130g ground almonds/walnuts/hazelnuts with 130g buckwheat flour, 1tsp baking powder, 1 heaped tbsp cacao, 1/2 tsp cinnamon, pinch of salt Add 2 grated apples Bake at °C175 top bottom +- 45 min, toothpick test should be just clean. Feel the soft firmness with your fingers. To speed things up: Out into the wind to take the heat off, then 30min in the freezer, then halfed and another 15 min in freezer. Spread bottom with plenty berry jam (tip: IKEA has great organic lingonberry jam, good to know if you're in the UK) mixed with lemon juice. Top with stiffly whipped double cream, vanilla and 1/2 tsp sieved cornflower. Add the top and give it a dusting of icing sugar and cocoa. It's peony time 🌸 Add some more 🩷

Preheat oven on 160°C. 2. Seperate the Egg Whites and Yolks. 3. With baloon whisk, beat Egg Yolks, Tape n vanilla. 4. Once combined add coconut milk and keep beating. 5. Add coconut oil and beat until blended. 6. Add mocaf flour, corn flour and mix well until fully incorporated. Set a side. 7. In a clean mixing bowl, whisk the egg whites n salt until frothy. Add cream of tartar and continue whisk. 8. Gradually add caster sugar, whisking all the while until soft peaks form. 9. Add 1/3 of the meringue into the egg yolk mixture and fold. 10. Gently fold the remaining meringue in 2 batches until no white streaks remain. 11. Transfer the batter into non-greased chiffon baking pan. Lift the tray about 10cm off the table top and drop it. This removes any larger air bubbles. 12. Bake for 60 mins or until a tooth pick comes out clean. After 25 mins, change temp to 150°C. 13. Take the cake out of the oven and directly flip the pan upside down. This will allow for the cake to keep its shape when it sets. Let the cake cool down completely before turning it around again. Lemon Chicken Chickpea Stew🍋🤍This dish was a first that I’ll define be repeating! And the best part — it only takes a few ingredients! RECIPE: Rub chicken with salt and pepper and place on a pan with olive oil, let brown on each side and remove from the pan. Next add, garlic, lemon slices half a can of chickpeas, chopped and asparagus, douse with some hot sauce (I used habanero garlic) and then add 1 cup of chicken broth and 2 handfuls of kale on top. Bring to a boil, then pour into an oven-safe pot or can and let cook at 400 for ~20 minutes. RECETTE N°2: Le tajine marocain 🇲🇦 • Les ingrédients: - des cuisses de poulet 🍗 - des petites carottes 🥕 - des oignons jaunes 🧅 - des courgettes - des olives vertes 🫒 - des citrons confits 🍋 (faits maison) - du jus de citron - sel et poivre - huile d'olive - persil - épices (avec modération): safran, cumin et paprika • La recette: 1) Dans un grand fait-tout 🍲, commencer à faire cuire les cuisses de poulet avec du sel, du poivre et de l'huile d'olive. En parallèle, couper les oignons en lamelles, les carottes en rondelles et les courgettes en dés. Ajouter les oignons dans le fait-tout et les faire légèrement caraméliser. 2) Ajouter les carottes et les courgettes dans le fait-tout avec un verre d'eau pour éviter que les légumes ne collent durant la cuisson. Couvrir avec un couvercle. En parallèle, couper les citrons confits: pour ce faire, enlever la chair et couper la peau en lamelles très fines. Presser également un citron frais et en extraire le jus. 3) Ajouter les olives à la préparation, ainsi que les citrons confits, le jus de citron et les épices (safran, cumin et paprika). Couvrir de nouveau avec le couvercle et laisser mijoter environ entre 45 min et 1h.
