3 YEARS ON 🧡 I cannot believe that it was 3 years ago today since the GP rang me to say my bloods came back sky high for coeliac and I needed to start to process of getting a full diagnosis before going GF for life. Today was literally a dream come true 💕 We spent the day at the Renaissance Private Island surrounded by flamingo’s, pelicans, iguanas and beautiful scenery. The food was nice, but I’ve got to be honest I was a little dissapointed with the service. I had heard good things however, the waitress serving us just had no idea. I asked if the jerk chicken was gluten free, and her reply was ‘I have no idea’ which, for a high end hotel restaurant isn’t good enough in my opinion. I went for the burger in the end and it was served in toasted gluten free bread which looked a bit naff but actually tasted really good 🤣 we then had a 50 minute couples massage on the island after which was well needed after a busy few days since arriving!! For breakfast we ate in again today, and for dinner we went for a Chinese (not very Caribbean I know, but couldn’t pass up the oppourtunity could I?!) I had Chinese chicken curry for the first time in over 2 years and it was delightful 🤤 however the bill at the end wasn’t 🤣 Aruba is VERY expensive!! This Chinese restaurant has been one of the only restaurants I’ve come across so far with gluten free labelled on the menu. 🧡 Turns out I totally missed Coeliac Disease Awareness Day yesterday, but you did all engage with my crunchie blast ice cream so 🤷🏼♀️🤣 🧡 I’ve loved hearing everyone’s #CoeliacStories and realised I’ve never really shared mine, so here goes… 🧡 One day I woke up with horrific acid reflux, after never having had it in my life, and I couldn’t shift it, even with a high dose of meds. I was referred for an endoscopy so they could have a look to see if they could tell what was causing it. 🧡 There was nothing obvious causing my reflux, but they did spot some signs I may be coeliac, so they took some biopsies and guess what… I was. 🧡 I then had to have this confirmed with a blood test, which felt very backwards (I compared it to having a scan and seeing you’re pregnant, but still having to pee on a stick to confirm it 🤣) 🧡 Once I knew I was coeliac, a lot of problems I’d been having for years made a lot more sense, like really low iron, bloating, and some other issues that I’m sure you can guess (💩👀). I found it really frustrating that all the times I’d been to the doctor about my iron levels and 💩 related issues that they’d never put two and two together, so it does make sense to me how the average time to get diagnosed is 13 years which is just CRAZY 🤯 🧡 It’s still a relatively new diagnosis so I’m still adapting to the gluten free life, and trying to get my head around it being forever, which feels quite overwhelming sometimes. Afternoon Tea as @trumpturnberryscotland for my Hubby's Birthday. 🧁☕️🎂 We got served them separately as he isn't gf. My sandwiches and scones were fabulous. Probably the best scones I've ever had. My cakes were a bit hit and miss - a lovely wee macaron, decadent raspberry & dark chocolate bite, and a raspberry brownie and rhubarb & chocolate dessert, neither of which I was a fan of. We also had more than our fair share of tea and coffee. There's a huge variety to choose from. The service, as always, was impeccable. Aruba 🌊☀️🐚 Day 1 Other than Aruba being a bucket list destination for me, it’s actually great for gluten free too! I’ve been in a Facebook group for a little under a year now and when I booked this in January I studied that page for the best places to go, but the choice is endless really! Flying Fishbone was one of the more expensive restaurants I have booked for this holiday, but it’s our anniversary on Friday so I thought we’d go here tonight whilst we have the car as it’s a little drive out. It’s so so worth it! The food, the service, the setting were all perfect! We sat on the beach right next to the sea and it was just an amazing experience! Jamie had maple leaf duck breast and noodles in a sesame sauce and that also looked so nice!! Currently, I live in Madison, Wisconsin, with my two cats and my fiancé, Jacob, who is the chef behind several of the gluten-free dishes I showcase on this Instagram page. We're also expecting our little one this month, so I'm here for all your questions about my personal experience with celiac and pregnancy! My journey with celiac started after I received a positive transglutaminase IgA test and endoscopy confirmed celiac disease. I remember asking a dietician how much gluten I could have and feeling very lost after her answer: She brought out a blank piece of paper, made a perfect dot with the tip of her pen in the center, and said, "Less than 20 parts per million of gluten — even a crumb — could cause an immune reaction.” I left that appointment thinking of of all the spaghetti, breads, beer, fried onion rings, cakes and other foods I would be missing out on for the rest of my life. The beginning of my gluten-free journey was difficult — heck, I'm still learning — but flash forward to today, and I have found joy in recreating my old favorite foods, and trying new gluten-free products and restaurants. A smple tea of tortilla española and tasty fresh veg was what was needed after our #coeliacawarenessmonth event. We met other coeliacs young and old, plus many people who had not heard of this autoimmune disease. Our young coeliacs spoke so honestly and confidently about the ups and downs of navigating school and parties. Between them they had over 10 symptons of coeliac disease before going on a lifelong gluten free diet. Their symptoms included: tiredness, dark under eye circles due to malnutrition, recurrent stomach pains, diarrhoea, slow growth, joint pain (knees), brain fog, anxiety, vomiting, constipation and nausea. There are over 200 symptoms of coeliac disease. 1 in 100 people have it, yet only 36% of people with the condition in the UK are medically diagnosed. Coeliac Awareness Month 🫶🧡🫶 - Coeliac is different for everyone Week 2 I wanted to share a personal experience with you all and some facts 🫶 🧡 You are not alone 🧡 A gluten reaction will vary from person to person. But the damage internally is the same. 🧡 If left untreated, you have a higher risk of other autoimmune disorders, infertility/miscarriage, vitamin deficiencies, intestinal lymphoma, small bowel cancer, gall bladder malfunction, and neurological conditions. Some attacks could last several days. 🧡 Gluten reactions can change, I have a personal experience of this. On occasions, I have been made to feel a nuisance and that I overreact. I have also been compared to others who have coeliac but are asymptomatic. To someone who has zero knowledge of the condition, I agree that we have coeliac, so why would you treat us differently? (We shouldn't be treated differently) The reality is, if I have gluten, I will be physically sick 2-4 hrs afterwards. I have had various attacks after gluten since diagnosis, from being sick 2-4 times consecutively and recovering physically within a couple of hours to my worst attack that left me in a foreign country being sick for 6 hrs and diarrhoea, blood in my vomit and from my bowel. It took me a full 7 days to feel myself again. There is a very high chance someone with asymptomatic coeliac will not experience the same anxiety in certain situations that I do/someone with symptoms. I do not judge, I actually feel envious. The anxiety and fear of becoming ill and being physically sick in a public place, or when I am solo with my children (very much so when they were little), is really real for me and I do everything I can to avoid that happening, whilst trying to live a full, non disadvantaged and equal life living with coeliac. MILNGAVIE: THE TICKLED TROUT MAIN: HUNTER’S CHICKEN WITH TRIPLE COOKED CHIPS DESSERT: MINI APPLE & BLACKBERRY CRUMBLE WITH CUSTARD SERVED WITH A LATTE A decent lunch at this lovely pub in Milngavie. They made a slight adjustment to the chicken schnitzel on the menu- I had a grilled chicken - and the server double checked their Allergen Guide to ensure it was definitely gluten free. She even got me a fresh bottle of tomato sauce to ensure there was no possibility of cross contamination. For dessert I had a mini crumble which comes with vegan custard. A perfect day for a picky tea! 🌞😎 We have tried these Paxo potato cakes for the first time today. They were pretty tasty though I'm glad we had the vegetable ones rather than plain. We also had some morrisons chicken nuggets, Tesco frozen cocktail sausages and some nice GF garlic bread. 😊 I also made the golden vegetable rice myself as I didn't have a packet in the cupboard.
