Hi, I'm Trina! I wanted to reintroduce myself since we’re in the midst of #celiacawarenessmonth. I was diagnosed with celiac disease in January 2017, and I have been living gluten-free ever since! Currently, I live in Madison, Wisconsin, with my two cats and my fiancé, Jacob, who is the chef behind several of the gluten-free dishes I showcase on this Instagram page. We're also expecting our little one this month, so I'm here for all your questions about my personal experience with celiac and pregnancy!<br /><br />My journey with celiac started after I received a positive transglutaminase IgA test and endoscopy confirmed celiac disease. I remember asking a dietician how much gluten I could have and feeling very lost after her answer: She brought out a blank piece of paper, made a perfect dot with the tip of her pen in the center, and said, "Less than 20 parts per million of gluten — even a crumb — could cause an immune reaction.”<br /><br />I left that appointment thinking of of all the spaghetti, breads, beer, fried onion rings, cakes and other foods I would be missing out on for the rest of my life. The beginning of my gluten-free journey was difficult — heck, I'm still learning — but flash forward to today, and I have found joy in recreating my old favorite foods, and trying new gluten-free products and restaurants.
