Who loves a good sweet treat when you’re at Disney? We tried the popular school bread from Kringla Bakeri Og Kafe for the first time ever. This might be an unpopular opinion but we did not like it! We tried a few bites but it was not agree with our taste buds. Same with the Norwegian Kringla, it looked so good but we thought it was not great. They were both really dry. What we didn’t know was that there is a prevalent spice in these sweet treats, cardamom. It was pretty overpowering for us and we did not enjoy the taste. So if you like cardamom you might really like these. However, the Mickey Cinnamon Roll was super delish, we went back and bought one to bring home!

So… on this particular visit, we made a stop at Norway to get our fix of Schoolbread and Viking Coffee (if you haven’t had these yet, you’re totally missing out and we HIGHLY recommend them). Anyways, these Cast Members shown here were so fun and friendly and the next thing we knew, we were having a whole photoshoot in the shop. Thank goodness it was slow and they had time to interact with us, but was definitely a highlight of our trip — another reminder to please come talk to us when you see us. We’re so excited about our special buns for February- skolebrød (Norwegian custard buns)! We’ve used our usual bun dough, filled with vanilla custard, brushed with lemon icing and dipped in desiccated coconut. So indulgent and so special! Last week we were panicking a bit that we hadn’t come up with a new bun yet, and Euan said maybe we could have something really simple, like custard buns. I suddenly remembered about a time back in 2020 when my neighbour asked if I could make skolebrød, something she said she ate each year when she went to Norway, but which I’d never heard of. I only made them once back then and looking back at old photos and messages I realised I actually left off the coconut that time, but I think they are so much better with it on, especially just in terms of how beautiful they are! Euan’s idea of a simple bun got replaced with something much more exciting, but which does still feel quite simple in its own right. Traditionally it is meant to have cardamom in the dough too but having tried it with and without we have decided to leave it out, partly because we already have cardamom buns on the menu so didn’t want both bun options to have too similar a flavour! Also finding it funny how we have accidentally ending up with two Nordic specials for the month- these skolebrød and a Danish seeded rye as our special sourdough! Totally unintentional but we love it, and fits in well with our staple cardamom buns too! Lots of other news (e.g the fact that we finally got a 20kg mixer yesterday!) but can talk about that in another post! We also bought a ring light (with phone holder) at the weekend as the lighting in our kitchen is terrible for photos, so looking forward to hopefully being able to take some better photos and also videos!
