Pad Kra Pao (Basil Stir-Fry). Thai dishes were obviously the first things that came to mind when trying to use up the holy basil I got from the Thai festival. Pretty Dilly Chicken. Dill is heaven. I got so much fresh dill from the Thai Festival the other day, so I’m using a lot of it while it’s fresh (I need to work on preserving it this weekend). I’ve been looking for beef liver but haven’t been successful in this neighborhood, so I grabbed this marked down fancy chicken liver. It was actually my first time cooking chicken liver, and the taste was so much better than expected (because childhood memories can be straight up wrong lol). Chopped chickens are from the Meat Guy. Do these foods come to mind as healthy sources of fat? I might guess that avocado brings about thoughts of healthy fats and avocado toast. Shredded coconut is possibly a pretty topping on top of an açaí bowl and pumpkin usually brings us to thoughts of pumpkin spice lattes and pies during the fall holidays. A unique attribute for all three of these fat sources is that they are also high in fiber. This means they contain carbohydrates and if you had a serving size that provided 15 grams of carbohydrates, 5 or more of those 15 grams of carbs would be fiber filled carbs. Mid December last year. A dilemma. My GP tells me that my bad cholesterol level has crept upwards. The offer of statins was met with a blunt but polite no by me. Then I noticed that all my 32 inch waist trousers must have shrunk in the wash as they were too tight. Then the scales must have been faulty as they showed me weighing 88.9, with a BMI of 25.9. Hmmm, time to act. 🚶 Whilst admittedly mid December wasn't the best time for action, it happened. A revisit of my eating habits. Ditching most foods with more than 1% saturated fat (nuts and peanut butter excepted). Nothing naughty in the house - no crisps, no biscuits, no alcohol, no chocolate. Basically no temptation. I might just as well have joined a monastery ☹️. 🚶 5 months later, and with a considerable amount of willpower expended, I'm below 80kg for the first time in over 40 years. My 32 inch waist trousers are now a bit slack. I feel better, I'm pretty sure I've done my aging body some good and, hopefully, sorted out my cholesterol. And my BMI is now a much healthier 23.3 🚶 As Paulo Coelho stated " Ask yourself if what you're doing today is getting you closer to where you want to be tomorrow". I'm pleased to say that there's no celery in the fridge. Not a single salad has been consumed, no calories have been counted and my monastery application is still not filled in. 🚶📷🚶 Have I given up alcohol? Good grief no! There seems to be two popular (and polarizing) perspectives on dietary fat: 1) Fat doesn’t make you fat; eat all you want 2) Low fat is the only way to get shredded What if… GASP… the truth is somewhere in the middle and totally nuanced and bio individual 😮 The problem with perspective # 1: 👉 Eating too much of anything can cause unwanted weight gain. So, too much dietary fat can absolutely put you in a state of toxic excess of calories by creating new fat cells. And… dietary fat is already in the “storage form” of storing as fat, unlike carbs and protein, so it’s easy to overdo it if you don’t understand nutrition science, serving sizes, and macronutrient composition. The problem with # 2: 👉a long term low fat diet can lead to hormonal imbalances, hair loss, nutrient deficiency, low libido, skin issues, achy joints and more. Many micronutrients are fat-soluble. If you don’t eat enough fat, you won’t absorb them and put them to use. If you don’t eat enough fat, your body will not be able to produce healthy hormones. What most people are missing when it comes to understanding fat: 👉 dining out and takeout = high fat intake (most of the time, unless you find some unicorn establishment!) If you’re not cooking most of your meals at home, you’re likely getting a shitton of fat at restaurants and from takeout, and NOT the good kind.
