Sweet potato crunch salad 🍠🥬🍠🥬 I made this one last night for a Meatless Monday, but added lots of goodies like sliced almonds, garbanzo beans and sunflower seeds to add protein. I used @traderjoes cruciferous crunch salad mix which is PACKED with healthy veg mix and tons of fiber that makes this salad super filling. The trick is to salt the greens and massage them to break down the fibrous greens. This one is sweet and salty and spicy and creamy from the feta, it’s all the things 🤗 you can prep your veg the day before to speed up the process, make extra for snacks and other salads later in the week! Recipe below👇 Ingredients: Salad~ 2 sweet potatoes diced 1 can garbanzo beans rinsed and dried 1 bag cruciferous crunch salad (or shredded kale mix) Toasted sliced almonds (toast up in dry skillet over medium heat stirring constantly, about 3-4 min) Feta cheese ( try to get French feta) Sunflower seeds Dressing~ In a glass measuring cup add Juice of 1 lime 1/3 c balsamic (i use @thequailandolive) 1/3 c red wine vinegar 1 T Dijon mustard 1 small shallot finely diced 1 heaping T fresh chives minced (opt) 1/3 tsp kosher salt Cracked pepper 1/2 c evoo whisked in Preheat oven to 450 On small sheet pan add garbanzo beans drizzle with evoo big pinch S&P and big pinch Aleppo pepper toss with hands cook 10-12 min On another sheet pan do the same process with sweet potato cook 15 min or until soft and starting to brown and crisp up When you remove sweet potato from oven squeeze 1/2 lime all over it Put greens in large salad bowl add pinch of salt and massage 10-12x trying to break down toughness, add all other ingredients toss with a few T of dressing to start and taste as you go. I like to add more feta at the end and drizzle with more balsamic. What are you having for breakfast most mornings? Does it contain any protein? If so, do you know how much? Many people do not get enough protein in the morning. Protein is an essential part of every meal. Why is it important to have a high protein breakfast? • It stabilizes your blood sugar • It helps you maintain a healthy weight • Calms the nervous system • Makes you less likely to have food cravings during the day • It keeps you fuller for longer • It supports healthy muscles • This with anaerobic exercise prevents muscle atrophy (sarcopenia) a very common condition for older adults • Helps regulate your circadian rhythm (therefore important if you’re having sleep issues) Premenopausal women can benefit from having at least 1g of protein per kg of ideal bodyweight. This means that if you weigh 60kg you should be getting around 60 g of protein per day. If you’re in perimenopause or menopause you require 1,2g per 1 kg of ideal weight. In the example above this means 72g per day, divided in 3 meals which means 24g per meal. By the way the protein powder in the picture is what I often have as part of my breakfast these days. It is high in protein, doesn’t contain any added sugar, and is palpable. I use to make smoothies or add a scoop to a vegetal yogurt bowl along with seasonal fruit, seeds, cinnamon, soy lecithin and whatever else I feel like! Did you know there are ZERO requirements to call yourself a nutritionist? Did you know that most doctors only get a few hours of nutrition training if that?
